SAGE SAUSAGE BITES WITH BALSAMIC APRICOT DIP

- Preheat oven to 425 degrees F.
- In a medium pot, add oil and onion; Saute the onion for 1 minute.
- Next, add balsamic vinegar to onion and reduce by half, 1 minute. Remove vinegar from heat and combine with apricot preserves and spicy mustard. Stir until mustard is fully incorporated. Dip will be glossy and brown in color.
- In a mixing bowl, combine sweet sausage and chopped sage. Add 2 tablespoonfuls of apricot dip and mix. Form meat into bite size nuggets, coat in bread crumbs then place on nonstick cookie sheet. Bake 15 to 17 minutes, until evenly browned, turning occasionally. Drain, then serve with party picks for dipping with remaining balsamic apricot mustard dip.

- Preheat oven to 400 degrees
- Place frozen pearl onions, Italian sausages, garlic and olive oil into a large sauté pan. Roast for 15 minutes in the oven. If the pearl onions do not look caramelized, continue roasting them in 5 minute increments.
- Remove the sausage from the pan and let the sausages rest on a cutting board for 5 minutes.
- Slice the sausages on a bias so they are just bigger than bite size.
- Add sausages, balsamic vinegar and red pepper flakes to pan with the pearl onions.
- Turn to medium high and cook until a beautiful glaze is formed, about 5-7 minutes. This will occur due to the liquids evaporating and the sugars in the vinegar caramelizing,
- Serve with crostini, pasta or with noting at all.

- Preheat the oven to 375 F (350 F if your oven tends to be stronger). Lay the crescent dough sheet flat onto a cutting board.
- Place a sausage link in the center of each of the four quadrants of the dough and gently cut the dough into four (see picture image grid above). Roll the sausage links in the dough, leaving the seam underneath. Cut into bite sized pieces (about 6 per sausage link).
- Transfer the pieces onto a parchment paper lined baking sheet. Beat the egg with a tablespoon of water or milk or beer. Brush over each dough wrapped piece. Sprinkle with your choice of spice.
- Bake for 15-17 minutes or until the dough is nicely browned and puffy.
