A frozen orange or lemon slice in the glass looks pretty and helps keep this refreshing punch nice and cold. Using honey instead of sugar adds a sweet touch. -Sheila Bradshaw, Columbus, Ohio

Number Of Ingredients 9

4 tea bags
2 cups boiling water
3 medium navel oranges
2 medium lemons
2 cups orange juice
1/4 cup lemon juice
3 tablespoons honey
1 liter ginger ale, chilled
Ice cubes

Steps:

  • Place tea bags in a teapot; add boiling water. Cover and steep for 3 minutes; discard tea bags. Pour tea into a pitcher. Peel and section 2 oranges and 1 lemon; add to tea. Stir in the orange juice, lemon juice and honey. Cover and refrigerate for 6 hours or overnight. Cut remaining orange and lemon into slices; freeze., Just before serving, strain and discard fruit from tea. Stir in ginger ale. Serve with frozen fruit slices and ice.

24 ounces brewed orange pekoe tea, chilled
6 ounces bourbon
4 ounces Clover Honey Syrup, recipe follows
4 ounces fresh orange juice plus orange peels, for garnish
1 cup clover honey

Steps:

  • Add the tea, bourbon, Clover Honey Syrup and orange juice to a pitcher and stir. Pour over ice in individual glasses.
  • Combine the honey and 1 cup water in a small saucepan and bring to a boil. Cook, stirring, until the honey dissolves. Remove from the heat and let cool completely. Keep covered in the refrigerator up to 1 month.

ORANGE-TEA-BOURBON BRINED TURKEY WITH HONEY MUSTARD BUTTER



Orange-Tea-Bourbon Brined Turkey With Honey Mustard Butter image

1 fresh or frozen turkey (1 to 1 1/2 pounds per person)
Zest (in wide strips) and juice of 5 oranges
Kosher salt
1 cup sugar
12 black tea bags
4 bay leaves
6 cloves
12 peppercorns
1 cup bourbon
2 sticks unsalted butter, softened
2 tablespoons honey
3 tablespoons dijon mustard
3 tablespoons spicy brown mustard

Steps:

  • Unwrap the turkey and remove the neck and giblets (reserve for gravy). Rinse the turkey under cold water and pat dry. Fill a large pot with 2 quarts water; add the orange zest, orange juice, 2 cups kosher salt, the sugar, black tea bags, bay leaves, cloves, peppercorns and bourbon. Bring to a boil, then simmer 10 minutes. Add 4 quarts cold water and let cool. Submerge the turkey in the brine, adding water to cover, if necessary. Refrigerate at least 8 hours or overnight.
  • Remove the turkey from the brine; rinse and pat dry. Mix the butter, honey, dijon mustard and spicy brown mustard until combined. Reserve 4 tablespoons of the butter, then rub the rest under the turkey skin on the breasts and legs. Rub 2 tablespoons of the reserved butter on the skin; chill and save the rest for your gravy. Let the turkey stand 30 minutes at room temperature before roasting.
  • Put the oven rack in the lowest position; preheat the oven to 350 degrees F. Put the turkey breast-side up on a rack in a large roasting pan, tucking the wing tips under. Tie the drumsticks together with twine. Roast until the skin is golden brown and a thermometer inserted into the thigh registers 165 degrees F, about 15 minutes per pound. Transfer to a cutting board and let rest 30 minutes before carving. Whisk the reserved 2 tablespoons flavored butter into your gravy just before serving, if desired.

2 muscovy boneless duck breast halves (about 1 3/4 pounds total)
3/4 cup chopped shallot
2 1/4 cups canned low sodium chicken broth
1 1/2 cups orange juice
4 1/2 teaspoons earl grey tea leaves or 5 tea bags, leaves removed from bags
1 tablespoon honey
3 tablespoons butter, cut into small pieces

Steps:

  • Preheat oven to 450°F.
  • Pierce skin of duck breasts all over with fork.
  • Sprinkle duck with salt and pepper.
  • Heat heavy large skillet over high heat.
  • Add duck breasts, skin side down, to skillet.
  • Cook until skin is well browned, about 4 minutes.
  • Turn duck breasts over; cook 2 minutes.
  • Remove from heat.
  • Set rack in roasting pan.
  • Transfer duck breasts to rack (reserve drippings in skillet).
  • Roast duck to desired doneness, about 20 minutes for medium-rare.
  • Meanwhile, heat drippings in skillet over medium heat.
  • Add shallots and sauté until beginning to brown, about 5 minutes.
  • Tilt skillet; push shallots to higher end of skillet, allowing drippings to flow to lower end.
  • Spoon off drippings and discard.
  • Add broth, orange juice and tea leaves to skillet.
  • Boil until mixture is reduced to 1 1/4 cups, about 17 minutes.
  • Pour mixture through strainer set over bowl, pressing on solids to extract as much liquid as possible.
  • Discard solids in strainer.
  • Return liquid to same skillet.
  • Add honey; bring to simmer.
  • Whisk in butter.
  • Season sauce with salt and pepper.
  • Thinly slice duck breasts crosswise.
  • Fan slices on each of 4 plates, dividing equally.
  • Spoon sauce around duck.
  • Garnish with orange segments, if desired.
