ORANGE SPICE BAKED BEANS
Limoneira® Orange, herbs and spices liven up an old favorite in this recipe. Baked beans are a flavorful side dish, or a wonderful main for vegans. They're good with breakfast, lunch or dinner, and a great source of protein and vitamins.

Steps:
- You may choose to soak the beans in water overnight. Add them to a pot and make sure they are covered.
- Drain the liquid from the beans. Then, add them to a large pot of water along with the oregano, bay leaves, and sage.
- Bring the beans to a boil, and cook until tender but not quite done. If you have pre-soaked them, it will take 30 to 40 minutes. Without soaking, it will take about 1 1/2 hours.
- As the beans are cooking, add the olive oil to a large skillet and saute the onions, peppers and garlic until fragrant. Add the cumin and saute for another minute or two.
- Now add the remaining ingredients, stirring to combine. Raise the heat to a medium-high temperature and bring to a boil.
- Continue to cook and stir for about 5 minutes.
- Drain the beans, and strain out the herbs - but reserve some of the liquid. You can use this to adjust the consistency of the sauce.
- Now add the beans to the sauce and continue to cook for another 15 to 20 minutes. The sauce should be thick and the beans darkened.
- Use the reserved bean liquid to thin it if the sauce gets too thick.

- Adjust oven rack to lower-middle position and heat oven to 325 degrees.
- Fry bacon in large, deep sauté pan skillet until bacon has partially cooked and released about 1/4 cup drippings. Remove bacon from pan and drain on paper towels.
- Add onions and peppers to drippings in pan and sauté until tender, about 5 minutes.
- Add beans and remaining ingredients bring to a simmer. (If skillet is not large enough, add beans and heat to a simmer then transfer to a large bowl and stir in remaining ingredients).
- Pour flavored beans into a greased 13-by 9-inch (or similar size) ovenproof pan. Top with bacon, then bake until beans are bubbly and sauce is the consistency of pancake syrup, about 2 hours. Let stand to thicken slightly and serve.
SPICY BAKED BEANS

- Place all beans in a bowl, cover with water to a depth of 2 inches, add thyme and soak at least 4 hours.
- Heat a heavy 3-quart casserole. Add cumin seeds, and cook, stirring, until they dance around and smell toasty. Remove them.
- Add the oil, onion, carrot and bacon to casserole, and saute over medium heat 10 minutes, until the bacon is golden. Stir in the jalapeno, garlic and toasted cumin seeds.
- Preheat oven to 250 degrees.
- Drain beans, and add them along with the canned and fresh tomatoes, maple syrup, brown sugar, bay leaf, orange rind and crushed peppercorns. Stir in all but 1 tablespoon of the cilantro, and add 3 cups of water. Cover, and bring to a slow simmer. Place in the oven, and cook 2 hours.
- Add vinegar and salt to taste. Return to the oven 2 1/2 hours longer, until the liquid has been absorbed but the beans are still moist. Adjust seasonings, adding more vinegar and salt if needed. Sprinkle with remaining cilantro, and serve.

- Preheat the oven to 325 degrees F.
- Cook the bacon in a large Dutch oven over medium heat until most of the fat is rendered. Add the onion and garlic and saute until soft. Stir in the chili powder. Add the dry rub, beans, water, beer, barbecue sauce, brown sugar, molasses, Worcestershire, soy sauce, hot sauce, and salt and pepper, to taste. Cover the pot with a lid and bring to a low simmer. Transfer the pot to the oven and bake until the beans are tender, about 2 1/2 to 3 hours. Serve in a bowl or straight from the pot.

- Heat oven to 200C/fan 180C/gas 6. For the wedges, mix the flour, cayenne and herbs (if using), add some salt and pepper, then toss with the potatoes and oil until well coated. Tip into a roasting tin, then bake for about 35 mins until crisp and cooked through.

BAKED BEANS WITH A TASTE OF ORANGE
Back in the days when I was cooking a lot with wine & mixers & cordials, etc, I squirreled away my version of baked beans. Today it resurfaced, & here it is! I usually use a version of B&M baked beans. The onion soup mix is 1/2 of a 1-oz envelope.

- At an angle, cut weiners into 1/2" slices.
- In a bowl, mix 1/2 of the weiner slices, beans, soup mix, sugar, water, mustard, catsup & curacao together and pour into a baking dish.

SPICY BAKED BEANS

- Preheat oven to 350 degrees F (175 degrees C).
- Cook and stir bacon in a large skillet over medium-high heat to render some fat, 2 to 3 minutes. Stir onion into the rendered fat and cook until the bacon is crisp and the onion is tender, 7 to 10 minutes.
