What a great grab and go breakfast idea! This Easy Pancake Bites recipe is just that easy! Can be made for anyone's taste plus can be made gluten free!

Pancake Mix (Prepared)
Strawberry Jam
semi sweet chocolate chips
sprinkles
favorite cereal
Peanut Butter

Steps:

  • Preheat oven to 350 degrees F
  • Spray mini muffin tin with non stick spray.
  • In a bowl mix together pancake mix according to the package instructions.
  • Fill each mini muffin tin 1/2 of the way full of pancake mix. Add in your favorite topping or mix in.
  • Bake at 350 degrees for 10 minutes.
  • Serve immediately or store in an air tight container in the fridge or freezer until ready to enjoy.

Nonstick cooking spray
1 cup all-purpose flour
1 tablespoon granulated pure cane sugar
1 teaspoon baking powder
Pinch fine sea salt
3 tablespoons unsalted butter, melted and cooled
1/2 teaspoon pure vanilla extract
1 large egg
1/2 cup plus 1 to 2 teaspoons whole milk
Grated lemon or orange zest
1/2 cup fresh blueberries
1 cup confectioners' sugar
1/2 cup maple syrup, warmed, optional

Steps:

  • Preheat the oven to 375 degrees F. Spray a doughnut hole pan liberally with nonstick spray.
  • Whisk together the flour, sugar, baking powder and salt in a medium bowl. In a second bowl, whisk the butter, vanilla and egg until smooth; then whisk in the 1/2 cup milk and the lemon zest until combined. Add the wet ingredients to the dry, and mix until a batter just comes together. Cover and let sit at room temperature for 15 minutes.
  • Fill the molds of the prepared doughnut hole pan two-thirds of the way with batter, then press a few blueberries into each. Bake until lightly golden brown, about 10 minutes. Flip and bake another 3 to 4 minutes.
  • Mix together 1/2 cup of the confectioners' sugar and the remaining 1 to 2 teaspoons milk to make a glaze. Toss some of the pancake bites in the remaining confectioners' sugar.
  • Serve drizzled with the glaze, or serve with warm maple syrup for dipping.

Steps:

  • In a large bowlcombine baking mix, milk, eggs. Separate into 4 equal portions and adddesired mix-ins.
  • Add batter to the prepared muffin tin with a heaping Tablespoon or a #10 scoop. Sprinkle with more toppings.
  • Bake 15-20 minutes until golden brown. Serve with maple syrup.

8 pancakes (see recipe link below)
three quarters of a tub low-fat soft cheese
140g roasted peppers , in oil from a jar or the deli, drained
140g roasted aubergines , in oil from a jar or the deli, drained
about 24 basil leaves

Steps:

  • Lay each pancake on a work surface and spread a little of the soft cheese in the centre of each. Tear or snip the peppers and aubergines into pieces and scatter them over the cheese. Lay about 3 basil leaves on top of each pancake, then sprinkle generously with freshly ground black pepper and a little salt.
  • Fold two sides of each pancake into the centre, then the opposite two sides to make a square parcel. Cut diagonally through the middle to make two triangles. Serve at room temperature and eat with your hands.
