1 cup orange juice (fresh squeezed)
1 cup water
1 cup sugar
2 3-inch strips orange peel (pith removed)

Steps:

  • Place all of the ingredients in a small saucepan, stir to combine. Bring to a boil, stirring occasionally.
  • Remove from heat and let cool to room temperature.
  • Discard the orange peels.
  • Store in an airtight container in the refrigerator until ready to use for up to 2 weeks.

4 cups orange juice
3 tablespoons honey
1 vanilla bean, split and seeds scraped
1 thin slice ginger
Pinch kosher salt

Steps:

  • Combine the orange juice, honey, vanilla, ginger and salt in a pot and reduce over medium-high heat to 1/2 to 3/4 cup (depending on the desired consistency), 10 to 15 minutes. You will know the full thickness of the syrup when it cools, so it is best to set up an ice bath with a stainless bowl over it to cool the mixture when it is finished reducing.

Steps:

  • In a heavy saucepan combine the honey, the orange juice, the water, and the zest and simmer the mixture, stirring occasionally, for 20 minutes, or until it is reduced to 1 1/3 cups. (If the syrup is reduced too much, it becomes too thick and too sweet.) Stir in the Manto and let the syrup cool. The syrup may be made 1 week in advance and kept, covered, at room temperature.
  • Makes about 1 1/3 cups

  • Stir all ingredients in heavy medium saucepan over medium heat until sugar dissolves. Increase heat and boil until syrup is reduced to 1 1/2 cups, about 20 minutes. Refrigerate until cold. Cover and keep refrigerated up to 2 days.
