6 oranges
3 cups cooked, mashed sweet potatoes
1 cup white sugar
¼ cup orange juice
2 eggs, lightly beaten
1 teaspoon vanilla extract
1 cup butter, softened, divided
1 tablespoon grated orange peel
1 cup brown sugar
½ teaspoon all-purpose flour
1 cup chopped pecans

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Prepare oranges by cutting tops off, 1/4 to 1/2 inch down. Spoon out the flesh, leaving a shell.
  • In a large bowl combine sweet potatoes, sugar, orange juice, eggs, vanilla extract, 1/2 cup butter and grated orange peel. Spoon mixture into orange shells. Place in a deep casserole dish.
  • In a small saucepan over medium heat, combine remaining 1/2 cup butter, brown sugar, flour and pecans. Cook until sugar dissolves in melted butter. Spoon over oranges. Fill casserole dish with water to reach 1/2 inch in depth.
  • Bake in preheated oven for 30 minutes.

1 cup packed brown sugar
½ cup unsalted butter
¼ cup orange juice
½ teaspoon salt
4 whole cloves, or more to taste

Steps:

  • Place sweet potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender but not mushy, 18 to 20 minutes. Drain. Peel sweet potatoes and cut in half lengthwise. Discard skins.
  • Combine brown sugar, butter, orange juice, salt, and cloves in a large skillet or electric frying pan; bring to a boil. Reduce heat and simmer for 5 minutes until syrupy. Arrange potato halves in the syrup and simmer for 20 to 25 minutes. Remove cloves from syrup before serving, if you wish.

I made these for a recent "kid's dinner party" that my friends and I do every week and I can't even tell you how hard I laughed when I pulled these sweet potatoes out of the oven and three of the kids simultaneously yelled "cupcakes"! No matter what we said they decided the orange and white "cupcakes" were a holiday treat and scarfed them down. These heavenly treats only take minutes to prepare, and they made quite a visual and edible impact on the kids and adults alike.

2 pounds yams or sweet potatoes (you want to use potatoes that are really orange, also known as yams)
2 tablespoons unsalted butter
1 tablespoon brown sugar or maple syrup
1/2 cup evaporated milk
1/2 teaspoon kosher or sea salt
3 navel oranges
Mini marshmallows, for topping

Steps:

  • Preheat the oven to 400 degrees F. Poke the yams several times with a fork or knife to pierce the skin. Place on foil or a baking sheet in the oven and bake for 1 hour.
  • Let the yams cool for several minutes, then cut in half and scoop out the fluffy insides into a large bowl (I love eating the high fiber skin as a snack). Mash the yams with the butter, brown sugar or maple syrup, evaporated milk and salt until creamy and fluffy.
  • Cut the oranges in half and slice a very thin disk from the bottom so they rest flat; the skins are going to be the "bowls." With a paring knife cut around the inside rim of the orange removing the orange sections and pulp. Place any of the orange juice and pulp in a bowl and discard the white membranes and seeds. Save the juice and pulp for a cranberry sauce recipe or just enjoy as a snack.
  • Fill each orange cup with 1/4 cup of puree and top with several mini marshmallows (you can cover and refrigerate these overnight).
  • Preheat the oven to 350 degrees F. Place the orange cups on a baking sheet and bake until the marshmallows are golden, 20 to 25 minutes (see Cook's Note). Serve.

1 cup chicken stock
1/2 stick butter
2 blood oranges or navel oranges, juiced and zested
3 tablespoons finely chopped fresh thyme

1/2 teaspoon ground cinnamon

Steps:

  • Peel and coarsely chop the sweet potatoes. Cover with water and bring to a boil in a large pot. Salt the water and cook the sweet potatoes until tender, 8 to 10 minutes. Drain and return the sweet potatoes to the hot pot. Mash the potatoes with the stock and butter. Add in the orange juice and 2 tablespoons of the orange zest. Then add in the thyme, paprika, cinnamon and some pepper. Taste and adjust the seasoning. Cover and remove from the heat and serve immediately. To keep warm, create a water bath by placing the pot of mashed potatoes in 1 inch gently simmering water in larger pot or deep skillet.

1 tablespoon oil, extra-virgin olive oil or vegetable oil
2 slices smoky bacon, finely chopped
1 orange, zested and juiced
Chicken stock, as needed
1 teaspoon coriander, 1/3 palmful
1/2 teaspoon ground cumin, 1/3 palmful

  • Put the potatoes in a medium pot, cover with water, salt the water and bring to boil over medium heat. Cook until tender, then drain and return the potatoes to the pot. Heat a little oil over medium heat, in a medium saute pan and add the bacon and cook until it begins to crisp. Stir in the orange zest and juice and the potatoes. Mash to desired consistency with some chicken stock to thin the potatoes, if desired. Stir in the coriander, cumin, cinnamon and hot sauce. Transfer to a serving bowl and serve.

  • For streusel:

  • Preheat oven to 375°F. Pierce potatoes in several places with fork. Place directly on oven rack and bake until very tender, about 1 hour. Transfer to rack and cool. Peel potatoes; place flesh in large bowl and mash. Mix in orange juice, sugar, butter, and orange peel. Season with salt and pepper. Butter 13x9-inch oval gratin dish. Steps:

  • Preheat the oven to 425°F/220°C.
  • Place the orange juice in a saucepan with the sugar and vinegar. Bring to a boil over high heat, then turn down the heat to medium-high and simmer fairly rapidly for about 20 minutes, until the liquid has thickened and reduced to scant 1 cup/200 ml (about the amount in a large glass of wine). Add the bitters, olive oil, and 1 1/2 teaspoons salt.
  • Place the potatoes in a large bowl, add the chiles, sage, thyme, and garlic, and then pour in the reduced sauce. Toss well so that everything is coated and then spread the mixture out in a single layer on a baking sheet on which it fits snugly, about 12 by 16 inches/30 by 40 cm.
  • Place in the oven and roast for 50 to 60 minutes, turning and basting the potatoes every 15 minutes or so. They need to remain coated in the liquid in order to caramelize, so add more orange juice if the pan is drying out. At the end, the potatoes should be dark and sticky. Remove from the oven and leave to cool slightly before arranging on a platter and dotting with the goat cheese. Serve warm or at room temperature.

8 medium sweet potatoes
1/4 cup butter
1 cup brown sugar
2 tablespoons honey
1 teaspoon orange rind (or more, to taste)

  • Parboil and peel potatoes.
  • Slice lengthwise in quarters or more, depending on size of potato. Fry sliced potatoes in butter on stove until browned on all sides (careful-they will burn).
  • Mix together rest of ingredients; set aside (it will be thick).
  • Place potatoes and remaining butter into casserole dish. Pour brown sugar/orange mixture over potatoes, covering potatoes on all sides.

  • Heat oven to 375 degrees (see Tip). Use a vegetable peeler to peel strips of zest off 2 oranges. Cut the strips into thin matchsticks using a sharp knife and transfer to a large bowl. Delicious side dish to accompany your holiday meal. Roasting the sweet potatoes caramelizes the natural sugars and makes it extra sweet without adding sugar. The orange zest just takes it to the next level.

6 large sweet potatoes
1 Tbsp salt
2 Tbsp oil
1 stick butter
1 large navel orange

Steps:

  • 1. Preheat oven to 400 degrees
  • 2. Wash sweet potatoes Cut sweet potatoes in half length wise Lay sweet potatoes on rimmed baking sheet
  • 3. Drizzle oil over sweet potatoes Sprinkle salt over sweet potatoes Rub sweet potatoes all over with oil and salt
  • 4. Lay sweet potatoes flesh side down on baking sheet Roast in preheated oven 30-45 min. til tender
  • 5. Remove from oven and let cool until you can handle them Remove skin from sweet potatoes Place sweet potatoes in bowl Add stick of butter Add all of zest from one orange Squeeze juice from same orange into bowl Mash sweet potatoes Add salt to taste.

Orange-Scented Sweet Potato Gratin With Apple and Pear image

The vegetarians and vegans at your table will love this, but so will the meat eaters. Orange is a flavor that complements sweet potatoes, and the walnut oil contributes a subtle background nuttiness. Make sure to stir the mixture every 15 minutes as it bakes, so that the sweet potatoes on the top layer don't dry out. The apple and pear slices may fall apart, but that's fine, they won't disintegrate and they'll contribute wonderful flavor to the dish.

2 pounds sweet potatoes, peeled and sliced about 1/4 inch thick
2 tart apples, such as Pink Lady, peeled, cored, and sliced
1 large ripe but firm pear, peeled, cored and sliced
Salt to taste
2 tablespoons mild honey, such as clover (substitute agave nectar for vegans)
2 tablespoons walnut oil, plus more for greasing the pan
2 teaspoons finely chopped or grated orange zest
2 1/2 cups freshly squeezed orange juice

Steps:

  • Heat the oven to 400 degrees. Oil a 3-quart gratin or baking dish with walnut oil. Toss together the sweet potatoes, apples and pear in a large bowl. Season with salt to taste.
  • In a small saucepan or in a microwave at 50 percent power, heat the honey (or agave nectar) and the walnut oil together just until warm. Add to the sweet potato mixture, add the orange zest and toss together well until the fruit and vegetables are well coated. Scrape into the baking dish, making sure to scrape out all of the honey and oil using a rubber spatula. Pour on the orange juice. Set the baking dish on a sheet pan and place in the oven.
  • Bake 1 hour, setting the timer so that you remember to stir the mixture at 15-minute intervals. Cover the pan with foil and continue to bake for another 1/2 hour, or until the sweet potatoes are thoroughly tender and the liquid in the pan is syrupy. Allow to cool for about 10 minutes (or longer) before serving.

3 cups cooked mashed sweet potatoes
1 cup white sugar
1/4 cup orange juice
2 eggs, lightly beaten
1 teaspoon vanilla extract
1 cup butter, softened, divided
1 tablespoon grated orange peel
1 cup brown sugar
1/2 teaspoon all-purpose flour
1 cup chopped pecans

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Prepare oranges by cutting tops off, 1/4 to 1/2 inch down. Spoon out the flesh, leaving a shell.
  • In a large bowl combine sweet potatoes, sugar, orange juice, eggs, vanilla extract, 1/2 cup butter and grated orange peel. Spoon mixture into orange shells. Place in a deep casserole dish.
  • In a small saucepan over medium heat, combine remaining 1/2 cup butter, brown sugar, flour and pecans. Cook until sugar dissolves in melted butter. Spoon over oranges. Fill casserole dish with water to reach 1/2 inch in depth.
  • Bake in preheated oven for 30 minutes.

3 large oranges (to be juiced)
4 medium sweet potatoes (about 1-1/2 pounds)
2 teaspoons vegan margarine
3/4 cup fresh orange juice (from oranges above)
2 tablespoons cinnamon
1/2 teaspoon powdered ginger
1/4 teaspoon ground cloves
1/4 teaspoon fresh orange zest

Steps:

  • Cut oranges in half and juice them. You should measure 3/4 cup orange juice. If you don't have enough, supplement with packaged orange juice.
  • Scoop out orange halves and save the shells. Set aside.
  • Wash sweet potatoes and prick in several spots. Place potatoes on a paper towel and microwave on HIGH for 12-15 minutes or until very soft.
  • Peel potatoes (be careful!). Scoop potato pulp into a large bowl.
  • Mash with margarine, orange juice, cinnamon, ginger, cloves, and zest. Mash and mix until smooth.
  • Set orange shells into a casserole or microwaveable serving platter with high sides (to hold the oranges upright). Fill shells with potato mixture.
  • Microwave on HIGH for 5 minutes or until warm.

6 sweet potatoes
¾ cup boiling water
1 teaspoon salt
3 tablespoons butter
½ tablespoon orange zest
1 tablespoon orange juice
¾ cup light corn syrup
¼ cup packed brown sugar
3 orange slices, halved

Steps:

  • Pare and halve sweet potatoes.
  • Combine peel, juice, corn syrup, and brown sugar.
  • Add sweet potatoes, boiling water, and salt to a large saucepan. Simmer, covered, until tender; this should take about 15 minutes. Drain off liquid, leaving 1/4 cup in skillet. Dot potatoes with butter or margarine. Pour orange juice mixture over potatoes, and add orange slices. Cook, uncovered, over low heat until glazed, an additional 15 minutes. Baste often, and turn once while cooking.

2 ½ pounds sweet potatoes
cooking spray
2 tablespoons white sugar
2 teaspoons cornstarch
½ teaspoon salt
½ teaspoon ground ginger
½ cup orange juice
3 tablespoons butter

Steps:

  • Pierce skin of sweet potatoes in several spots with a fork.
  • Cook sweet potatoes in microwave oven until just tender, 12 to 15 minutes. Refrigerate sweet potatoes until cooled completely, at least 20 minutes.
  • Preheat oven to 350 degrees F (175 degrees C). Prepare a shallow 1 1/2-quart baking dish with cooking spray.
  • Peel sweet potatoes and cut into cubes; spread into prepared baking dish.
  • Mix sugar, cornstarch, salt, and ginger together in a glass measuring cup; pour orange juice into the cup while stirring with a whisk.
  • Heat orange juice mixture in microwave oven for 1 minute, stir, and continue to heat until thickened and smooth, 30 to 60 seconds more; add butter and stir until melted. Pour the liquid over the sweet potatoes.
  • Bake in preheated oven until sweet potatoes are heated through, 15 to 20 minutes.
