BLUE CHEESE AND STEAK PIZZA

- Preheat your oven. In our home pizza oven we cooked the pizza at a scorching 850 degrees F. If you are using a traditional oven, turn the temperature to 500 degrees F with a pizza stone for the oven during the preheating process.
- Start by seasoning your steak with salt and pepper while your grill or your pan filled with 1 tbsp grapeseed oil gets screaming hot.
- Sear your steak for 1-2 minutes per side, careful not to fully cook your filet. If you're cooking your pizza in a traditional oven, you may choose to complete this step while the pizza is baking.
- Remove the steak from the heat to rest.
- Stretch out your pizza dough, dusting it with flour.
- Brush the pizza crust with olive oil and garlic using a pastry brush.
- Add your mozzarella cheese.
- Cook your pizza until it's almost fully cooked. In our pizza oven this took only about 90 seconds. In a traditional oven the cook time will be closer to 10-16 minutes, but depending on your dough it could take closer to 20 minutes, so keep an eye on your pie!
- Remove your pizza from the oven and top with sliced steak and blue cheese crumbles.
- Return the pizza to the oven for another 1-2 minutes until the blue cheese starts to melt.
- Remove your pizza from the oven, season your pizza with salt and pepper and sprinkle with chopped chives.
- Slice and serve!

- Preheat oven to 450°. Sprinkle beef with salt and pepper. In a large skillet, heat 1 tablespoon oil over medium heat. Add beef and mushrooms; cook until beef is no longer pink, 3-4 minutes. Remove from pan., Cook onion in remaining oil until tender, 2-3 minutes. Add cream and blue cheese; cook until slightly thickened, 3-5 minutes longer., Place crust on a 12-in. pizza pan or baking sheet. Spread with cream mixture; top with beef mixture. - Preheat oven to 450 degrees.
- Heat a large nonstick skillet coated with cooking spray over medium-high heat. Add onion and mushrooms; cover and cook 3 minutes. Uncover and cook 5 minutes, stirring occasionally. Stir in 1/4 teaspoon salt; remove onion mixture from pan.
- Sprinkle steak with, 1/2 tea spoon salt and pepper. Add steak to pan; cook over medium-high heat 3 minutes on each side or until desired degree of doneness. Let stand 5 minutes; cut steak diagonally across grain into thin slices.
- Place crusts on a baking sheet Bake at 450 degrees for 3 minutes. Remove crusts from oven.
- Combine mayonnaise and horseradish; spread each crust with about 2 teaspoons mayonnaise mixture. Arrange onion mixture evenly over crusts; bake at 450 degrees for 2 minutes. Divide steak and cheese evenly among pizzas; bake an additional 2 minutes or until cheese melts. Cut each pizza in half.

STEAK AND COLA PIZZA
Steps:
- For the marinated steak: Mix the cola, dressing, garlic, soy sauce, salt and pepper in a bowl. Add the steak. Cover and refrigerate at least 6 hours and up to overnight.
- For the pizza: Preheat the oven to 550 degrees F.
- Stretch the dough ball into an 18-inch round.
- Layer the provolone slices across the dough, then scatter the mozzarella evenly across the top. Spread the shaved steak evenly across the pie in globs. Spread Caramelized Onions evenly across pie. Crumble Gorgonzola and scatter on top.
- Bake until crust is golden brown, 8 to 10 minutes.
- Heat butter and some olive oil in a large pan over medium-low heat. Add onions and top with brown sugar. Let cook, adding a little oil as needed and stirring occasionally, until golden, about 45 minutes.
PIZZA WITH NY STRIP, BLUE CHEESE AND BALSAMIC GLAZE
Steps:
- For the glaze:
- Bring vinegar to a boil in a small nonreactive saucepan and cook, stirring occasionally, until reduced to 1/2 cup. Stir in the honey and season with salt and pepper, to taste.
- For the steak:
- Heat grill to high. Brush steak on both sides with oil and season with salt and pepper. Grill until golden brown and slightly charred on both sides and cooked to medium-rare doneness, about 5 minutes per side. Remove from the grill to a cutting board, tent lightly with foil and let rest for 10 minutes. Slice into 1/4-inch thick slices.
- For the pizza:
- Heat the grill to high.
- Brush both sides of the pizzas with oil and season with salt and pepper. Grill until golden brown on both sides, about 2 minutes per side. Remove from the grill, divide the Monterey Jack cheese over the top of each one and then sprinkle with the blue cheese. Place back on the grill, close the cover of the grill and grill until the cheese has melted, about 1 minute. Remove to a flat surface, divide the steak between each pizza, then top with the watercress Drizzle with some of the balsamic glaze and sprinkle with some of the shaved Parmigiano-Reggiano.
- In a large bowl stir together 1/3 cup water, yeast, and sugar and let stand until foamy, about 10 minutes. Stir in remaining 1/3 cup water, 2 tablespoons oil, 1 3/4 cups flour, cornmeal, and salt and blend until the mixture forms a dough. Knead dough on a floured surface, incorporating as much of remaining 1/4 cup flour, as necessary, to prevent dough from sticking, until smooth about 5 to 10 minutes. Form the dough into a ball.
- Lightly oil the sides and bottom of a large bowl with oil, add the dough, turn to coat in the oil, cover and let rise in a warm place until doubled in size, about 1 hour. Gently punch the dough down and divide into 4 equal pieces. Roll each piece on a lightly floured surface into a 10-inch circle that is 1/8-inch thick. Brush off excess flour and transfer the dough to a baking sheet, cover each circle of dough with plastic wrap and continue stacking rolled out pieces on top of each other. Wrap well with plastic wrap and refrigerate until ready to grill.

- First, make the pastry. Put the flour, mustard powder, ½ tsp salt, the lard and butter in a food processor and pulse until combined. Add 1 egg and pulse again. Add 1 tbsp cold water, if needed, until it forms a short pastry. Knead quickly into a ball, then wrap and chill in the fridge for at least 30 mins. Can be made three days ahead or frozen for two months.
- Season the steak generously and toss with the flour and mustard powder. Heat half the oil in a large pan. Brown the meat in a few batches, adding more oil as you need to and making sure you don't overcrowd the pan. Turn the meat only when the underside has a nice dark crust. Transfer the chunks to a plate as you go.
- Add the bacon to the pan and fry until beginning to crisp. Tip in the carrots, onions and bay leaves and cook for another few mins until the veg is soft. Stir in the Worcestershire sauce and tomato purée for 1 min, scraping the tasty bits from the bottom of the pan, then add the stock, thyme and browned beef. Season, cover the pan and simmer gently for 2½ hrs, stirring now and again to prevent the sauce from sticking, until the beef is tender. Remove the lid for the last 30 mins to thicken the sauce. Alternatively, braise in the oven at 160C/140C fan/gas 3 for the same amount of time. Leave to cool. Can be chilled for up to three days, or frozen for two months.
- Transfer the beef to a pie dish and crumble the cheese over the top. Place the marrowbone in the centre, nestling it into the meat. Alternatively, use a pie funnel or piping nozzle. Roll out the pastry on a floured worktop until large enough to cover the pie and about ½cm thick. Brush the remaining beaten egg over the edges of the pie dish, drape the pastry over, trim the excess and pinch around the edge to seal. Cut a hole for the marrowbone or pie funnel to poke through, and brush the top all over with beaten egg. Use the pastry trimmings to decorate the pie however you like. Chill for about 30 mins while you heat the oven to 200C/180C fan/gas 6.
- If you have any beaten egg left, give the pie a final brush for extra glossiness. Bake for 45-50 mins until the pastry is deep golden.

- Fire up your frying pan to high heat, or get the grill ready.
- Sprinkle steaks with salt and pepper to taste.
- Toss a dab of butter in the pan (or a spritz of oil).
- Place steaks on the hot pan; grill 3 minutes; turn.
- Scatter bleu cheese crumbles over steak while grilling for another 3 minutes.
- Remove meat from heat, let stand a few minutes.
- Serve with oven-roasted potato wedges or whole baked potatoes.
