ORANGE CREAMSICLE CANDIED PECANS

Orange Creamsicle Candied Pecans image

These are a year-round favorite in our house. We've made several variations and still come back to this one as our all-time favorite. Hand-shelled pecans from Grandma's tree, with a vanilla-orange sugar coating that gets its depth from cinnamon, pepper, rosemary, and a bit of Kahlua® and Grand Marnier®.

Provided by itsshellebelle

Categories     Appetizers and Snacks     Nuts and Seeds

Time 50m

Yield 10

Number Of Ingredients 13

2 large egg whites
1 teaspoon water
1 teaspoon orange extract
½ teaspoon vanilla extract
1 ½ teaspoons orange-flavored liqueur (such as Grand Marnier®)
1 ½ teaspoons coffee-flavored liqueur (such as Kahlua®)
1 cup white sugar
1 teaspoon ground cinnamon
½ teaspoon salt
½ teaspoon ground black pepper
1 teaspoon finely chopped fresh rosemary
1 tangerine, finely zested
1 pound shelled pecan halves

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Heavily butter a large metal baking sheet.
  • Beat egg whites and water together in the bowl of a stand mixer until stiff peaks form. Add orange extract and vanilla extract; beat until incorporated, 1 minute.
  • Mix sugar, cinnamon, salt, and black pepper together in a separate bowl; fold sugar mixture into egg white mixture until just incorporated. Fold in rosemary and tangerine zest until evenly mixed. Add pecans to the sugar-egg white mixture; toss to coat. Spread coated pecans in one layer onto the prepared baking sheet.
  • Bake in the preheated oven, turning the baking sheet and stirring the pecans with a metal spoon every 8 to 10 minutes, until crispy and golden brown, 30 to 40 minutes. Transfer to a sheet of parchment paper to cool completely.

PECAN CRANBERRY SPREAD

Pecan Cranberry Spread image

I find any excuse possible to serve this. Great around the holidays but worthy of being made all year round. It is the dish I am most often asked to bring to a gathering requiring finger foods or appetizers. Really good on Townhouse Wheat Crackers. If I don't have any orange juice concentrate, I use just enough fresh squeezed juice to make it the right consistency and the zest from the orange for more flavor. *PLEASE NOTE!!* You REALLY need to make this ahead of time! The flavors must blend for it to taste good!

ORANGE & PECAN CRANBERRY SAUCE

Orange & Pecan Cranberry Sauce image

This recipe has been handed down in our family for ages! I never liked canned Cranberry Sauce and always loved this. It's not just for Turkey, goes great with poultry and pork, anytime. Enjoy!

Provided by Kaye Dunn

Categories     Other Sauces

Number Of Ingredients 6

28 oz frozen cranberries
8 oz mandarin oranges in juice (can use fresh oranges)
1 c liquid from oranges & water or orange juice to make a cup.
3 c granulated sugar or less: 1 1/2 cups will work.
3 Tbsp dried orange peel (or use fresh zest if desired)
1 1/2 c pecans, chopped

Steps:

  • 1. Drain Orange Segments, reserving juice. Add orange juice or water to make 1 cup of liquid. Measure sugar into a non-reactive deep pan. Add the liquid and bring to a boil. Simmer until all sugar has dissolved.
  • 2. Add the cranberries to the pot. Bring to a simmer and cook, stirring frequently to prevent sticking. As the cranberries cook, the mixture will foam. Use a small ladle to skim off as much of the foam as possible. Continue to simmer until the mixture reaches a temperature of approximately 220 degrees. If you want a thicker sauce, you may continue until the temp reaches 240 degrees (soft ball stage).
  • 3. Meanwhile, cut the orange segments into small pieces, add the grated rind (or zest) and set aside. Chop the pecans and set aside.
  • 4. Once your berries have reached the desired temperature, add the orange segments & rind/zest, bring back to a simmer. Remove the pan from the heat and stir in the pecans.
  • 5. You may spoon into sterilized jars and seal for longer storage. This sauce keeps well and if sealed should be good in your fridge for at least a couple of months.

SPICED ORANGE PECANS

Spiced Orange Pecans image

This is a wonderful and very easy recipe for the holidays! I found it in Taste of Home Magazine. If you decide to prepare a double batch, please make sure you spread in only a single layer on the baking sheet. It is important that these pecans dry as they bake to become crispy. I hope you enjoy this recipe. I think it is a real treat!
