SOUTHERN BUTTERMILK BISCUITS
My Grandmother taught me how to make these Southern buttermilk biscuits way before I was even a teenager. This is the only recipe I have ever used and they are always a hit.

Steps:
- 1. Cut lard into flour using a pastry blender or two forks, and add the pinch of sugar. Add enough buttermilk to make a soft dough and knead until smooth (do not over knead as this will lend a tough biscuit).
- 2. With floured hands pinch off a bit of the dough and roll into a ball, lightly flatten in a greased iron skillet or pan. Bake in a preheated 425 degree oven for 15-18 minutes. Brush with melted butter when removed from the oven.
FLUFFY BISCUITS
This is the best biscuit recipe I've ever tried. They always turn out perfectly, and bake up tall, light & fluffy! It's the only biscuit recipe I use now.

- 1. In a medium sized bowl, combine the flour, baking powder, sugar, and salt. Cut in the shortening until it resembles course crumbs. Beat the egg with milk, and stir into dry ingredients just until moistened.
- 2. Turn out onto a well floured surface, and knead 20 times. Trust me...just do it! Roll to 3/4 inch thickness; Cut with a 2 1/2 in. biscuit cutter. Place on a lightly greased baking sheet. Bake at 450 degrees F for 8-10 minutes or until golden brown.

- 2. Turn out on floured surface and kneed 15-20 times. Roll and cut biscuits. Alternatively, you can just grab spoonfuls of the mix and drop them on a baking sheet, if you don't like to roll. It works the same!
- 3. Bake 425 for 13-15 minutes.

- 1. Preheat oven to 425 degrees.
- 2. In a small bowl whisk together flour, baking powder, sugar and salt.
- 3. Use the large grate side of a box grater to grate the butter right into the flour mixture. Gently and briefly stir to coat with the flour mixture. Stir in the chilled milk mixing just enough to combine.
- 4. Transfer to a floured work surface. Using your hands pat it out. Fold it over on itself and turn it about 90 degrees. Pat it out again and fold it over on itself and turn it about 90 degrees. Repeat this one more time then pat it out to about 1 inch thick.
- 5. Flour a 2 1/4 inch biscuit butter. Cut the biscuits as close together as possible. Do not twist the cutter. Gently rework any dough cutting as many biscuits as possible. Place on prepared baking sheet. Bake for 10-12 minutes or until lightly browned. if desired brush with melted butter.
MILE HIGH BISCUITS
This recipe is from the Tinsley House Cookbook. The Tinsley House is an old farm house that's part of the Museum of the Rockies in Bozeman, MT. I made these biscuits for the first time recently and they are by far the best biscuits I've ever had!

BUTTERMILK BISCUITS - FOOD PROCESSOR
These are so simple to make in the food processor. Using a food processor makes for a more tender biscuit, because you aren't handling the dough as much. A few pulses, and you have biscuit dough. - 1. Preheat oven to 450°F. Combine the dry ingredients in a bowl, or in the bowl of a food processor.
- 2. Cut the butter into chunks and cut into the flour until it resembles course meal. If using a food processor, just pulse a few times until this consistency is achieved.
- 3. Add the buttermilk and mix just until combined. If it appears on the dry side, add a bit more buttermilk. It should be very wet. Turn the dough out onto a floured board.
- 4. Gently pat the dough out until it's about 1/2" thick. Fold the dough about 5 times, gently press the dough down to a 1 inch thick. Use a round cutter to cut into rounds.
- 5. If you like soft sides, place the biscuits touching each other on a lightly greased cookie sheet. If you like crunchy sides, put them about 1 inch apart these will not rise as high as the biscuits put close together. I brushed the biscuits with milk, and cracked some fresh black pepper on top. Bake for 10 - 12 minutes ( do not over bake )
- 6. Enjoy with sausage gravy, jam, honey or just a slather of butter.

MY EASY HOMEMADE BISCUIT

- 1. Preheat oven to 425. Put 1/3 cup of oil in iron skillet. Heat skillet with oil on top of stove before putting biscuits in oil.

- Place the butter and 140g sugar in a food processor and whizz until smooth.
- Tip in both the flours and a pinch of salt, then whizz until mixture comes together.
- Using your hands, roughly spread the mixture out in a 20 x 30 x 4cm baking tray. Cover with cling film and smooth over until there are no wrinkles. Place in the fridge, uncooked, for at least 30 mins and up to 2 days.
- Heat oven to 180C/160C fan/gas 4. Remove cling film, then lightly mark the shortbread all over with a fork.
- Sprinkle with the remaining sugar, then bake for 20-25 mins.
- Leave to cool in the tin, then cut into 24 thin slices. Shortbread will keep in an airtight container for up to 1 week.

- 1. Whisk dry ingredients together in a bowl.
- 2. Cut crisco into the floor mixture with a pastry blender or fork until it resembles course crumbs.
- 3. Make a well in the middle of your flour/fat mixture and pour your buttermilk in. Stir until combined and pulls together in middle of bowl.
- 4. If too sticky, add little flour. If too dry, add a little more buttermilk. Flour hands well and transfer dough onto a floured board.
- 5. This is the MOST important step. The least you mess with the dough the better. Flour hands well and turn the dough over on itself about three times, flattening out a little each time. The last time press out into a rectangle about 1/2 thick.
- 6. Using a floured glass size of your choice, cut out biscuits and place close together in a greased iron skillet, filling the pan. Lightly brush buttermilk across the tops
- 7. Bake in a preheated oven of 425 degrees until lightly browned on top! Enjoy your fresh hot biscuits with butter and some local honey or slip a sausage patty in it for meaty breakfast....
