When Kimberly Rayfield ran out of milk for her pancake batter, she substituted orange juice-with terrific results. "Everybody said they were the best I'd ever made," she writes from her home in Cleveland, Tennessee.

1 cup self-rising flour
2 tablespoons sugar
1 egg
1/2 cup 2% milk
2 tablespoons orange juice
1 tablespoon canola oil
1/2 teaspoon vanilla extract
ORANGE SYRUP:
1 tablespoon sugar
1-1/2 teaspoons cornstarch
1/2 cup orange juice

Steps:

  • In a bowl, combine the flour and sugar. Whisk the egg, milk, orange juice, oil and vanilla until blended; stir into dry ingredients just until moistened. , Pour batter by 1/3 cupfuls onto a hot griddle coated with cooking spray. Turn when bubbles form on top; cook until second side is golden brown., Meanwhile, for syrup, combine the sugar, cornstarch and orange juice in a saucepan until smooth. Bring to a boil over medium heat; cook and stir for 1-2 minutes or until thickened. Serve warm with pancakes.

These pancakes rise up fast, like little souffles, and are best eaten right away so make sure your family is ready and waiting with their plates. The cheese flavor is subtle, but present. Although they are delicious with syrup, I actually preferred mine plain, eaten with my fingers like a little flat cupcake. I think they would also be lovely with a light dusting of confectioners' sugar or maybe even a bit of orange blossom honey. These pancakes get their incredible height and lightness from thickly beaten egg whites. To assure your whites stiffen perfectly, beat in a clean, cool metal bowl that has been wiped down with a cut lemon and then cleaned with a paper towel. This will get rid of any soap or oil residue left behind from previous uses.

1/4 cup granulated sugar
Freshly grated rind of 1/2 large orange
2/3 cup all-purpose or pastry flour, sifted
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup whole milk ricotta (preferably fresh)
1/4 cup sour cream
1/4 cup heavy cream
3 tablespoons freshly squeezed orange juice
1/2 lemon
3 large eggs, separated
2 tablespoons unsalted butter, plus more as needed, at room temperature
Confectioners' sugar or orange blossom honey (optional)

Steps:

  • Mash the sugar and orange zest together with the back of a spoon in a small bowl or on a cutting board. Sift together the flour, baking powder, baking soda and salt in a large bowl. Add the sugar-and-zest mixture and whisk to combine. Combine the ricotta, sour cream, heavy cream, orange juice and egg yolks with a whisk in a medium bowl. Add the ricotta mixture to the flour mixture and combine with a rubber spatula until just smooth; don't overmix.
  • Rub the 1/2 lemon over the inside of a chilled medium metal bowl, then wipe the bowl dry with a paper towel. Add the egg whites to the bowl and beat with an electric mixer on medium-high speed until stiff peaks form, about 2 minutes. Gently fold about 1/3 of the egg whites into the batter, then add the remaining egg whites. Don't worry if there are slight streaks of egg whites in the batter. Heat a nonstick or cast-iron griddle and grease with 2 tablespoons of butter. Pour or ladle about 1/3 cup of batter onto the griddle for each pancake, taking care to keep them evenly spaced apart. Cook until bubbles break the surface of the pancakes and the edges come together, about 2 minutes. Slip a spatula under each pancake, flip gently and cook until the edges come together and the pancake has risen, about 1 minute. Transfer to a plate. Repeat with the remaining batter, brushing the pan with more butter as necessary. Serve immediately. You can also add a sprinkle of confectioners' sugar or a drizzle of orange blossom honey, if desired.

1-1/2 cups orange juice, divided
2 cups biscuit/baking mix
2 eggs
3/4 cup milk

Steps:

  • In a small saucepan, combine 4 tablespoons sugar, cornstarch and 3/4 cup orange juice; stir until smooth. Bring to a boil; cook and stir for 2 minutes until thickened. Remove from heat; cool to lukewarm. , Meanwhile, combine biscuit mix and remaining sugar in a bowl. Beat the eggs, milk and remaining orange juice; stir into dry ingredients just until moistened. , Pour the batter by 1/4 cupfuls onto a lightly greased hot griddle; turn when bubbles form on top of pancakes. Cook until second side is golden brown. Serve with orange sauce.

2 cups instant pancake mix
1 1/2 cups orange juice
1 pint heavy whipping cream
1/4 c. powdered sugar
3 oz instant vanilla pudding
2 Tbsp. milk
12 oz frozen orange juice concentrate
2 cups sugar
1/2 c. butter

Steps:

  • Mix together the pancake mix and orange juice.
  • Cook on a griddle over medium heat until golden on both sides.
  • In a large mixer, beat heavy cream until stiff peaks form. It should be very thick.
  • Whip in the powdered sugar, then the instant pudding. Add 2 Tbsp of milk to make the consistency a little more creamy.
  • Add all ingredients to a small saucepan and bring to a boil stirring occasionally, remove from heat and serve.
  • Sandwich a large dollop of the prepared vanilla cream between two prepared pancakes then drizzle orange syrup over the top.

For the rosemary syrup:
1 cup maple syrup
3 rosemary sprigs
For the pancakes:
2 cups spelt flour (or all-purpose flour)
1/3 cup poppy seeds
1/3 cup sunflower seeds
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 1/4 cups low-fat buttermilk
2 large eggs
2 tablespoons melted butter
1 tablespoon granulated sugar
1 1/2 tablespoons grated orange zest, plus 1/3 cup orange juice (from 1 large orange)
Unsalted butter, at room temperature, for pan and serving

Steps:

  • For the rosemary syrup:
  • In a small saucepan, combine maple syrup and rosemary. Bring to a boil, then reduce to a simmer, cover, and cook for 8 minutes. Remove saucepan from heat and keep covered until you're finished cooking the pancakes. When ready to serve, discard the rosemary and transfer rosemary syrup to a serving vessel.
  • For the pancakes:
  • In a large bowl, combine the flour, poppy seeds, sunflower seeds, baking powder, baking soda, and salt. In a separate medium bowl, whisk together buttermilk, eggs, melted butter, sugar, orange zest, and orange juice. Add the wet ingredients to the dry ingredients, and stir until just combined. (Do not overmix; the batter will be slightly lumpy.)
  • Heat a large skillet or griddle to medium and brush it with a bit of butter. Using a 1/4-cup scoop, drop batter onto skillet to form pancakes. Cook until bubbles start to form on the surface, 1 to 2 minutes. Flip and cook until lightly browned on the bottom, about 30 seconds more. Repeat with the remaining batter, brushing pan with butter as needed.
  • Serve pancakes topped with butter and drizzle with the rosemary syrup.

2 eggs, yolk and white separated
3/4 cup white potato, cooked and mashed to form 3/4 cup unflavoured
mashed potatoes
1 1/4 cups skim milk
1/2 teaspoon vanilla
1 1/3 cups flour
1 teaspoon cinnamon
2 1/2 tablespoons brown sugar
2 1/2 teaspoons baking powder
3/4 cup orange juice
1/4 teaspoon orange zest
6 dried apricots, finely chopped
1 pinch cinnamon
3 tablespoons pancake syrup
3 tablespoons water
1 1/2 teaspoons Splenda sugar substitute or 1 1/2 teaspoons sugar

Steps:

  • For the MASHED POTATO: peel and dice two medium-small white potatoes.
  • Place in a medium saucepan on high heat and add enough water to cover.
  • Once potatoes are boiling reduce heat and simmer for 15 minutes or till potatoes are done.
  • Mash potatoes with potato masher and enough milk to make them creamy.
  • For the ORANGE MAPLE SYRUP: place chopped apricots, orange zest, orange juice, and pinch cinnamon in a small saucepan, heat on medium heat till boiling.
  • Turn off heat, add Splenda, brown sugar, and water and let stand for 15 minutes so apricots can continue to soften.
  • In a food processor or blender, blend apricot orange juice mixture till as smooth as you can get it.
  • Stir in pancake syrup. Serve warm.
  • For the PANCAKES: Separate two eggs, place the yolks in a large bowl and the whites in a medium bowl.
  • Beat the egg whites with a hand mixer until white, fluffy and stiff, set aside.
  • Add ¾ cup mashed potato to the egg yolks and whisk with a wire whisk till smooth.
  • Add milk and vanilla, and whisk till smooth.
  • Add flour, cinnamon, brown sugar and baking powder to the wet ingredients, stir until just mixed.
  • Fold in beaten egg whites.
  • On a greased or cooking sprayed griddle or pan, cook pancakes using ¼ cup per pancake (batter will be quite thick); cook until bubbles start to appear and flip.
