AUTUMN SQUASH CASSEROLE

Autumn Squash Casserole image

This has become a must-have at Thanksgiving. It's so good it tastes like it could be dessert! Even people who don't usually like squash change their mind after trying this. It's a delicious blend of different tastes and textures. I use buttercup squash, but acorn squash can also be used; Jonathan, Rome or other dry apples work best. It can also be made a day ahead of time--just add the cornflake topping and bake the next day.

25-MINUTE CHEESY SAUSAGE AND BUTTERNUT SQUASH CASSEROLE

25-Minute Cheesy Sausage and Butternut Squash Casserole image

This weeknight casserole is cheesy and satisfying like lasagna--your family will be so impressed!--but takes a quarter of the time. Frozen butternut squash and ready-made polenta are great time-savers.

Provided by Food Network Kitchen

Categories     main-dish

Time 25m

Yield 4 servings

Number Of Ingredients 12

3 tablespoons extra-virgin olive oil
1 medium red onion
1 pound spicy Italian sausage, casings removed
10 ounces frozen diced butternut squash (about 1 1/2 cups)
One 15-ounce can crushed tomatoes
Kosher salt and freshly ground black pepper
One 16-ounce tube ready-made polenta
1 tablespoon unsalted butter, cut into small pieces, plus more for greasing the dish
5 ounces fontina cheese, thinly sliced (1 1/4 cups)
1 ounce grated Parmesan (about 1/4 cup)
5 ounces baby spinach (about 6 cups)
2 teaspoons balsamic vinegar

Steps:

  • Position an oven rack about 5 inches from the broiling element, and preheat the broiler.
  • Heat 2 tablespoons of the oil in a large high-sided skillet over medium-high heat. While the pan is heating, thinly slice the onion; set aside about 1/3 cup for the salad.
  • Add the sausage to the pan, and break it up into smaller chunks with a wooden spoon. Stir periodically until it is brown all over, about 5 minutes. Add the remaining onion and the squash. Stir for a minute, then add the tomatoes, 2 tablespoons water, 3/4 teaspoon salt and a few grinds of pepper. Cover partially, and let simmer vigorously, stirring occasionally, until reduced and thick, about 10 minutes.
  • Meanwhile, slice the polenta into 1/4-inch rounds. Butter the flameproof baking dish, and shingle the rounds in one layer. Dot the polenta with the pieces of butter. Place the dish under the broiler, and broil the polenta until it is hot and soft, about 4 minutes.
  • When the sauce is ready, spread it over the broiled polenta. Top with the fontina and grated Parmesan. Return the casserole to the broiler, and broil until the top is browned and bubbly, about 3 minutes.
  • Meanwhile, toss the spinach in a large bowl with the reserved onion, the remaining 1 tablespoon olive oil, the balsamic vinegar, and salt and pepper to taste. Serve the casserole with the spinach salad on the side.

FAVORITE SUMMER SQUASH CASSEROLE

Favorite Summer Squash Casserole image

Loaded with lots of fresh summer squash sandwiched between layers of stuffing mix, it's easy to see why this creamy Summer Squash Casserole is a favorite. It's sure one tasty way to enjoy all that garden-fresh yellow squash!

Provided by Tracey | The Kitchen is My Playground

Categories     Side Dishes

Time 1h19m

Number Of Ingredients 7

6 to 7 c. sliced summer squash (1/4 to 1/2-inch thick slices)
1/4 to 1/2 c. chopped onion
1 c. shredded carrot
1 (10 3/4 oz.) can cream of chicken soup
1 c. sour cream
4 c. herb seasoned stuffing mix (about 2/3 of a 12 oz. package)
1/2 c. unsalted butter, melted

Steps:

  • Bring a pot of salted water to a boil. Add sliced summer squash and onion. Starting to time as soon as the squash and onion are added to the pot, cook for 5 minutes. Drain well.
  • In a large mixing bowl, combine cream of chicken soup and sour cream. Stir in carrot.
  • Fold in drained summer squash and onion.
  • In a separate bowl, combine stuffing mix and melted butter.
  • Spread half of stuffing mixture in the bottom of a 9x13-inch baking pan coated with non-stick cooking spray.
  • Spoon summer squash mixture on top of the stuffing layer. Sprinkle remaining stuffing mix evenly on top of squash layer.
  • Bake at 350℉ for 25-30 minutes until the edges are bubbly and the stuffing mix is golden brown.
  • When cooking the summer squash and onion, don't worry about the pot coming back to a boil -- just cook it for the 5 minutes. If you wait for the pot to boil, you'll end up with very mushy overcooked squash.
  • You can substitute zucchini, or use a combination of both zucchini and summer squash for this dish.

  • Peel the squash. Thinly slice off the bottom and top and then slice through the middle lengthwise to make two halves. Remove seeds with a spoon. Chop the two halves into 1-inch chunks and place into the oiled casserole dish. (Time-saving tip: buy a couple pounds of pre-chopped fresh butternut squash from the produce section of the grocery store. This was a major game-changer in the Liddon household, let me tell ya!.)
  • Add the minced garlic, parsley, oil, and salt into the casserole dish and toss with squash until combined (hands or a spoon both work well for this step!). Do not add the kale yet.

  • Preheat oven to 180°C. Place buttercup squash on a lined baking tray and bake for 45 minutes.
  • While squash is baking, heat olive oil in a large frying pan on a medium heat. Cook onion with a pinch of salt for about 8 minutes or until lightly golden. Add garlic, ginger and spices and cook for a further 2 minutes until fragrant. Stir regularly to ensure spices do not stick to the pan. Add stock, tomatoes, honey and apricots and cook for 8 minutes. Add drained lentils and cook for a further 10 minutes or until most of the moisture has evaporated. Remove from heat and season to taste with salt and freshly ground black pepper.
  • Remove squash from oven but leave oven on. Allow squash to cool slightly then, using a sharp knife, carefully slice off each top to form lids.
  • Using a spoon, scoop out and discard the seeds and soft membrane inside the squash. Scrape out the majority of the flesh (leaving about 1cm of flesh all around the inside), place in a bowl and mash roughly with a fork. Take ½ cup of mashed squash and set aside in a small bowl to be used for the hummus later.
