Steps:
- Combine in medium saucepan 1/2 cup of sugar, cornstarch, Jello, lemon juice, and water. Cook over medium heat, stirring constantly, until mixture comes to a boil and thickens. Set aside to cool slightly. Stir in sliced strawberries. Tear angel food cake into 1 inch pieces and toss with 2 cups of the Cool Whip. Press into 9x13 inch pan (I use glass so you can see the pretty layers). Set aside. Combine cream cheese, 1/2 cup remaining sugar, and vanilla in mixer bowl. Beat until smooth. Stir in remaining Cool Whip. Spread evenly over cake layer. Pour cooled strawberry mixture over cream cheese layer, spreading to cover cake evenly. Refrigerate 2 to 3 hours before serving. Note: You may substitute a 16 ounce bag of frozen whole strawberries, thawed and chopped, for the fresh strawberries. food,com
GELATIN HEAVENLY HASH (JELL-O BRAND)
I bought a bunch of jello on sale and didn't know what to do with it. I discovered Favorite Recipes Jello Brand Fun and Fabulous Recipes, and oila! I used orange gelatin, but you can use whatever flavor you want. I also substituted blueberries for the crushed pineapple (I didn't have any). Next time I'd like to try this with real whipped cream. I used sour cream (I didn't try it with non-dairy whipped topping). Very tasty stuff and simple to make. Cook time excludes chill time.

- Complete dissolve gelatin in boiling water.
- Combine cold water and ice cubes to make 1 1/4 cups.
- Add to gelatin, stirring until slightly thickened.
- Remove any unmelted ice.
- Add whipped topping, blending until smooth.
- Stir in pineapple, mandarin oranges, marshmallows, and nuts.
- Pour into serving bowl or individual dessert dishes.
- Chill until set, about 2 hours.
- Garnish with additional fruits and mint leaves, if desired.

HEAVENLY RASPBERRY DESSERT
Light-tasting and delicious! My mother's famous dessert recipe has completed many holiday meals and makes a stunning summery cake. This works beautifully with strawberries as well.

Steps:
- Butter a 9-inch tube pan. Break angel food cake into chunks; set aside.
- Stir raspberry gelatin and boiling water together in a bowl until gelatin is dissolved; place gelatin in the refrigerator to cool slightly, about 10 minutes. Stir raspberries with syrup into gelatin.
- Beat cream in a chilled glass or metal bowl with an electric mixer until soft peaks form; fold whipped cream into raspberry mixture.
- Pour about 1/4 cup of raspberry mixture into prepared pan. Place 1/3 of cake chunks into pan; pour 1/3 of remaining raspberry mixture over cake. Repeat layering with remaining ingredients, ending with the raspberry mixture. Chill in refrigerator until firm, about 2 hours.
- To remove from pan, center a serving plate over tube pan; invert.

- Combine the rhubarb and sugar.
- Let stand several hours until sugar is completely dissolved.

- Heat oven to 350ºF.
- Line 15x10x1-inch pan with parchment paper; spray with cooking spray. Prepare cake batter as directed on package; pour into prepared pan. Spread batter to cover bottom of pan. (Pan will be full.) Bake 20 to 22 min. or until top is golden brown and cake springs back when touched lightly in center. Cool in pan 30 min.
- Sift sugar over clean kitchen towel. Invert cake immediately onto towel; remove pan. Carefully peel off parchment. Starting at one long side, roll up cake and towel together. Cool completely. Reserve 1 cup berries; coarsely chop remaining berries.
- Beat pudding mix and milk in medium bowl with whisk 2 min. Refrigerate 5 min. Stir in 1 cup COOL WHIP and chopped berries. Unroll cake; remove towel. Spread berry mixture over cake, leaving 1-inch border around all sides. Reroll cake; wrap in plastic wrap. Refrigerate 1 hour. Unwrap just before serving; place, seam-side down, on platter. Frost with remaining COOL WHIP. Top with reserved berries.

This is my mother's gelatin salad that she always made for holidays -- my sisters and I have continued this tradition since 1968. Please do not leave out the extra sharp cheddar cheese -- the cheese makes this salad! Cook time is the approximate chill time. The number of servings is also approximate. This is pretty served in a trifle bowl, or a large clear glass bowl. -- NOTE: 1/3 cup sour cream can be folded-in with the cool whip to make the fruit salad less sweet --

- Stirring constantly, toast pecans in a dry medium-hot iron skillet until fragrant! Be careful not to scorch them! Set aside to cool, then chop!
- Add water to saved fruit juices to make 2 cups; bring to boil and dissolve gelatin.
- Add 2 cups cold water and cool until partially set.
- Add all ingredients EXCEPT cool whip.
- When thickened but not completely set, fold sour cream into cool whip, then into jello-fruit mixture until well combined.
- Pour into a pretty clear glass bowl, or trifle bowl ~ this makes a large amount!
- Chill for several hours before serving.
