SWEDISH TEA RING
This is a hand-shaped, filled yeast bread that my 2-year-old daughter loves to help prepare. The dough can be made ahead and refrigerated, then baked in the morning. Sprinkle chopped, toasted almonds over the ring if you wish. Nuts can also be added to the filling along with the raisins.

Steps:
- In a bread machine, put milk, egg, butter, sugar, salt, bread flour, and yeast in the order suggested by the manufacturer. Select the Dough cycle and press Start. When dough is mixed, transfer to a greased bowl; cover with plastic wrap and let rise until doubled, about 1 to 1 1/2 hours.
- Grease 2 baking sheets or line them with parchment paper; set aside.
- Divide dough in half. Roll each piece out into rectangles about 12x16 inches. Spread each dough rectangle with 1 tablespoon softened butter. In a small bowl, combine 2 teaspoons ground cinnamon, 3/4 cup light brown sugar, and 1/2 cup raisins.
- Sprinkle cinnamon mixture onto buttered dough. Roll them up jelly-roll fashion, along long side. Pinch edges to seal. Stretch and twist into rings, pinching ends to seal. Place them seam-side down onto prepared baking sheets. Using clean scissors, cut 2/3 way of the way through the loaf at about 1-inch intervals. Spread each cut slightly. you wish to

- Alternately, cover each ring with a clean towel or greased plastic wrap and let loaves rise until double, about 40 minutes.
- Arrange two oven racks so that both baking sheets will fit. Preheat oven to 350 degrees F (175 degrees C).
- Bake for 10 minutes in preheated; rotate baking sheets. Bake until rings are light brown and the filling is oozing and bubbling, about 10 minutes more.
- In a small mixing bowl, combine confectioners sugar, almond extract, and milk until icing is desired consistency. Drizzle icing over warm pastries.

- In a bowl, combine 1 cup flour, 1/4 cup sugar, yeast, salt and baking soda. In a saucepan, heat the yogurt, milk, water and 2 tablespoons butter to 120°-130°. Add to dry ingredients; beat on medium speed for 2 minutes. Stir in enough remaining flour to form soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Transfer to a bowl coated with cooking spray; turn once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down. Roll into a 14x10-in. rectangle. Melt remaining butter; brush over dough. Combine pecans, brown sugar, cinnamon and remaining sugar; sprinkle evenly over dough to within 1/2 in. of edges. Roll up jelly-roll style, starting with a long side; pinch seam., Line a baking sheet with foil; coat well with cooking spray. Place dough seam side down on prepared pan; pinch ends together to form a ring. With scissors, cut from the outside edge two-thirds of the way toward center of ring at 1-in. intervals. - Roll bread dough into a rectangle 8 inches wide and 15 inches long. Spread butter over the bread, leaving about 1/2 inch of a long edge unbuttered. Mix brown sugar, cinnamon, and flour in a bowl and sprinkle the mixture over the buttered part of the dough.
- Starting with the long edge opposite the unbuttered edge, tightly roll the dough over the filling; seal the roll along the unbuttered edge to make a log.
- Lightly grease a 12-inch round cake pan or baking dish; place dough into the pan and form a ring, pinching the two ends together to seal. Use kitchen scissors or sharp knife to make cuts 3/4 inch deep into the outside of the ring. Twist the cut sections of dough slightly to reveal filling.
- Cover the tea ring with a cloth, place into a warm area, and let rise until doubled, 45 minutes to 1 hour.
- Preheat oven to 375 degrees F (190 degrees C).
- Bake tea ring in the preheated oven until lightly browned, 25 to 30 minutes. Cover with a sheet of aluminum foil after 15 minutes if tea ring starts to brown too quickly. Let tea ring cool in pan for about 10 minutes before removing to finish cooling on a wire rack.
- Combine confectioners' sugar, milk, and vanilla extract in a bowl to make a smooth frosting. Spread top of the tea ring with frosting.

- In a large bowl, dissolve yeast in warm water. Add the milk, sugar, butter, egg, salt and 3-1/2 cups flour. Beat until smooth. CHRISTMAS TEA RING

- In small bowl, dissolve 2 pkg dry yeast in ½ C lukewarm water. Set aside.
- In a large bowl, dissolve ½ C sugar and ½ C shortening in the ½ C boiling water. Cool.
- After cooled, add to large bowl, 1½ C cold water, 2 well-beaten eggs, the salt, and the yeast-water mixture. Stir together.
- Add 4 C all-purpose flour and beat with electric mixer until smooth.
- Add 3 more C flour and stir together with a spoon.
- Place in large greased bowl and place in refrigerator for at least 2 hours before using. (I use the same bowl, just wipe it out and grease).
- This recipe may be stored in the refrigerator for up to 2 weeks.
- Divide dough into 2 equal parts. Place the other half back into refrigerator. Roll dough out on lightly floured surface into a 9"x15" rectangle.
- Spread the butter directly on dough.
- On top of the butter, sprinkle 2 T sugar, 1 T brown sugar, and 1 t cinnamon.
- If using, sprinkle the raisins, walnuts, Craisins, and or pomegranates.
- From a wide side, roll into a roll, as if making cinnamon rolls.
- Pinch edge all the way across so that it won't unroll.
- Place the pinched edge underneath to hide it.
- Transfer onto a greased cookie sheet. Bring the ends together (pinch them together) and make a uniform ring.
- From the outside cutting inward make cuts with scissors, ⅔ into the wreath, 1 " apart all the way around.
- Take each section and twist ¼ turn, laying each section on it's side.
- Use this technique all the way around, in a clockwise direction.
- Let rise for 1-2 hours. Bake at 350 degrees for approximately 25-30 minutes, until golden brown. Let cool on rack.
- While baking, make the icing by mixing 2 T melted butter, 1 C confectioners sugar, 1 T milk, and 1 t vanilla or almond extra.
- When cooled, drizzle with vanilla icing.
- Garnish with green and red maraschino cherries and English walnut halves.
CINNAMON RING

Steps:
- Allow dough to thaw.
- In Bunt or large square pan add 2 T melted butter.
- Stir in brown sugar.
- Srinkle with raisins and cherries.
- Cut each loaf into 6 pieces-12 pieces in total.
- Dip into melted butter and roll in sugar and cinnamon mixture.
- Place in bunt or large pan.
- allow doughballs to rise till double in size (You must allow the dough to double in volume before baking.Well worth the time and effort.).
- Bake in 350 oven for about 25 minutes or till golden.
- Let rest 10 minutes.
- Invert onto plate.
SCANDINAVIAN TEA RING OR CINNAMON ROLLS
Steps:
- Cut the cold butter into the flour, sugar & salt using a dough hook in the kitchen aid mixer. Beat the egg yolks and add to the mixture. Stir yeast into warm water to dissolve and add to mixing bowl along with the warm milk. Mix until dough is shiny and in a ball. Place in a bowl that's been sprayed with vegetable spray. Spray the top of the dough and cover with saran wrap. Place in refrigerator overnight.
- Roll dough into rectangular shape and spread on the butter, cinnamon, sugar and nuts. Roll the mixture into a log shape, the thickness will be determined by the bread maker. From a ring bringing the two ends together and pinching together as necessary. Make diagonal cuts approximately 1/2 inch thick all the way around the tea ring. Layer the slices at an angle.
- Allow the dough to rise 3 hours before baking. Set oven at 350 degrees F and bake for 20-30 minutes. The actual duration of time will depend upon the thickness of the ring. (To push this process along turn an oven to 200 degrees F and preheat. When the dough is ready to rise turn off the oven and slide the dough in.) This should cut the rise time at least in half.
- While the tea ring is warm drizzle glaze over the bread and then garnish with additional chopped nuts and/or green and red holiday cherries.

- Dough:.
- Mix warm water and yeast, add sugar and salt.
- Add 1 1/2 cups of flour, mix, then add melted shortening and egg; mix. Add the rest of the flour, 1 1/2 cups; if dough is really thin, add more flour.
- Grease a bowl, put dough in, turn to coat, and refrigerate at least a couple hours or overnight. (The dough will rise in the fridge.).
- Roll the dough our on a floured surface into a rectangle, not too thin and not to thick, maybe 1/4-1/2 inch thick. Spread 1/4 cup melted butter over dough, add more if necessary/desired.
- Mix cinnamon and sugar and sprinkle evenly over the butter. Sprinkle chopped nuts over that. Roll up tightly into a log.
- Place onto a greased cookie sheet and shape into a ring (bring ends together) and seal ends together with some melted butter.
- Using a pair of scissors, cut a small slit (not all the way through) every one inch. Bake at 350°F until top is slightly brown. (About 25-30 minutes).
- Meanwhile make the icing: Mix the powdered sugar, vanilla, and enough milk for a glaze thin enough to spoon over the ring and fall down the sides. Add one tablespoon maraschino cherry juice for color and flavor. Spoon onto cooled tea ring and decorate the top with halved maraschino cherries.
- *To serve, guests can simply pull off/ cut the wedges created by cutting the slits. Great for an impress your guest brunch!
