2 tablespoons olive oil
4 garlic cloves, minced
2 large onions, chopped
2 stalks celery, chopped
1 green bell pepper, chopped
1 teaspoon cayenne pepper
2 cups seafood stock or shrimp stock
1 (28-ounce) can whole tomatoes, in thick puree
Dash Worcestershire sauce
Dash hot sauce
2 bay leaves
Kosher salt and freshly ground black pepper
2 pounds large shrimp (about 32), shelled and deveined
4 tablespoons green onions, sliced for garnish

Steps:

  • Heat a large heavy Dutch oven over medium heat. Add oil. Cook garlic, onions, celery, and green bell peppers. Cook until softened, about 5 minutes. Stir in cayenne and let caramelize. Add the seafood stock, tomatoes, Worcestershire, hot sauce, and bay leaves. Season with salt and pepper. Simmer for 35 minutes. Add shrimp and cook about 4 more minutes, until they are bright pink and cooked through. Garnish with green onions.

3 tablespoons olive oil
1 (1 lb) can tomatoes
1 (8 ounce) can tomato sauce

1/2-1 teaspoon chili powder
1 tablespoon Worcestershire sauce
1 teaspoon cornstarch
12 ounces shrimp, peeled
1 dash Tabasco sauce

Steps:

  • Cook onion, celery and garlic in hot oil until tender but not brown.
  • Add tomatoes, tomato sauce and seasonings.
  • Simmer uncovered about 45 minutes.
  • Mix cornstarch and 2 teaspoon water, stir into sauce.
  • Add shrimp, simmer until done (about 5 minutes).
  • Serve with yellow rice.

2 pounds medium shrimp, peeled and deveined
Steamed rice for garnish

Steps:

  • Heat oil and make a dark roux with flour. Combine onion, celery, green pepper and garlic to make a mirepoix and add to roux. Cook until vegetables are tender, about 10 minutes. Stir in tomatoes and their juice, shrimp stock and bay leaves. Bring to a boil, reduce heat and simmer 1 hour. Add shrimp and cook until pink. Season to taste with salt and cayenne. To serve, ladle over steamed rice and garnish with parsley.

1 green bell pepper (diced)
2 celery ribs (chopped)

6 oz tomato paste
1 tsp minced Jalapeno (de-seeded)
1 tbsp paprika
2 tsp dried thyme
2 tsp. dried oregano
1 tsp. cayenne
1½ cup shrimp stock (low-sodium)
15 oz whole tomatoes (crushed)
2 tsp Worcestershire sauce
2 bay leaves
1½ lb shrimp (peeled and deveined)
salt and black pepper (to taste)
2 green onions (thinly sliced, plus more for garnish)
Rice for serving

Steps:

  • Add the olive oil to a large skillet over medium heat. Add the onion, bell pepper, and celery and cook down until soft, about 5 minutes. Stir in the garlic and cook for about a minute.
  • Add the tomato paste and cook for about 30 seconds, stirring constantly.
  • Throw in the minced Jalapeno and add the paprika, thyme, oregano, cayenne, salt, and black pepper. Cook until fragrant. About a minute.
  • Stir in the chicken broth to deglaze the pan. Add the crushed can of tomato, Worcester sauce, and bay leaves. Stir and simmer the sauce for 20 minutes.
  • Add the shrimps, stir, and cook for 3 to 4 minutes.
  • Serve over hot white rice and garnish with green onions; add more hot sauce, or squeeze a bit of lemon juice over the rice if desired.

A classic, and for good reason. You can't beat this dish for ease, style, presentation and, most of all TASTE!

1 1/2 lbs small shrimp, shelled,reserving the shells,and deveined
1/4 cup butter
2 cloves garlic, halved
1/3 cup finely chopped onion
1/2 cup finely chopped red bell pepper
1/2 cup finely chopped green bell pepper
3 ounces chopped mushrooms
1/4 cup finely chopped celery
2 teaspoons sweet paprika
3 tablespoons all-purpose flour
1 tablespoon tomato paste
2 tablespoons sour cream
1/4 teaspoon Tabasco sauce, to taste
rice, ring (recipe is in my cookbook)
1/4 cup minced fresh parsley

Steps:

  • Rinse shrimp well and pat dry on paper towels.
  • In a bowl, rinse reserved shells well in several changes of water, drain them in a colander.
  • Combine them with 2 cups water in a saucepan.
  • Bring to boil and simmer mixture for 20 minutes.
  • Strain broth through a sieve lined with a dampened paper towel (there should be about 1 ¼ cups of broth, if not, add enough water to measure, or reduce).
  • Reserve.
  • In a large skillet, melt 2 tblsps butter over moderately-low heat and in it cook the garlic, stirring, until it is pale golden.
  • Discard garlic and add shrimp to the oil.
  • Cook over moderate heat, stirring, for 3 minutes, or until barely pink, but not cooked through.
  • Transfer shrimp to a bowl, add remaining 2 tblsps of butter to the skillet and cook onion, peppers, mushrooms and celery, stirring, for 5 minutes.
  • Add paprika and flour and cook over moderately-low heat, stirring, for 3 minutes.
  • Stir in tomato paste and reserved shrimp broth and bring to boil.
  • Add shrimp mixture and simmer, stirring occasionally, for 3 minutes, or until shrimp are cooked through.
  • Stir in sour cream and Tabasco.
  • Bring mixture to a simmer, stirring, and season with salt and pepper (may be made 1 day in advance and kept covered and chilled. Reheat in skillet over moderately-low heat, stirring, until heated through, but do not let boil.) Spoon Shrimp Creole in center and around edge of rice ring and garnish with parsley.

It has a wonderful buttery mouth feel, tastes authentically Creole and is so quick and easy to make (if you use the frozen peeled and deveined shrimp that have been thawed out). We often have it during the week after work.

1 1/2 cups chopped onions
1 cup finely chopped celery
2 medium green peppers, finely chopped
2 cloves garlic, minced
1/4 cup butter
2 (8 ounce) cans tomato sauce
1 cup water
2 tablespoons fresh snipped parsley (or 2 tsp dried)
1 teaspoon salt
1/4 teaspoon red cayenne pepper
1 teaspoon thyme
2 whole bay leaves, crushed in hand to release flavor
1 lb shrimp, peeled,deveined and raw
3 cups hot cooked long-grain rice
1/4 cup chopped green onion
Tabasco sauce

Steps:

  • In a Dutch oven, cook and stir onion, celery, green pepper and garlic in butter until onion is tender.
  • Remove from heat; stir in tomato sauce, water and seasonings.
  • Simmer uncovered 10 minutes.
  • Place shrimp on top of liquid in pot.
  • Heat to boiling, cover and cook about 10 minutes until shrimp are opaque and tender.
  • Stir all.
  • Serve over hot rice, top with green onions and pass the Tobasco!

This is one of my standard company dinners, a favorite of our family as well as our guests. Depending on who is coming to dinner, I either spice it up, or tone it down with the peppers I use. I like the flavor of the Jalapeno. I serve this with Saffron Rice (I recommend recipe #182044), a Spinach Salad, and Lemon Meringue Pie (I recommend recipe #182002).

1 large onion
1 bell pepper
1 -2 hot banana pepper (optional)
1 jalapeno pepper (optional)
1 serrano chili pepper (optional)
3 stalks celery
1 garlic clove
2 tablespoons safflower oil
1 (14 1/2 ounce) can diced tomatoes
1 tablespoon flour
1 tablespoon sugar
1/2 teaspoon salt
1 bay leaf
1/4 cup dry sherry
3 (10 3/4 ounce) cans tomato soup
1 1/2 lbs shrimp (peeled raw)

Steps:

  • Cut onion, peppers, and celery into small pieces.
  • Mash and dice garlic.
  • Saute in oil until tender.
  • Add flour and bay leaf.
  • Stir over low heat for about 2 minutes.
  • Add diced tomatoes(with liquid), sugar, salt, and sherry, and stir until smooth.
  • Keep heat low.
  • Add shrimp when rest of meal is ready.
  • Cook until shrimp just begins to curl.
