POTATO CHIP CRUSTED CHICKEN BREASTS RECIPE
Crunchy potato chips are a natural coating to create a crispy crust for baked chicken breasts everyone in the family will love.

Steps:
- Preheat the oven to 400 degrees F.
- Trim any excess fat from the chicken breasts and split lengthwise to create a thinner chicken breast. Lightly tenderize the breasts with a meat tenderizer. Season both sides with kosher salt.
- Prepare a baking sheet with aluminum foil and place a cooling rack on top to create a baking rack.
- Add about 2 cups of potato chips to a gallon freezer bag and seal. Gently roll a rolling pin over the chips to crush into small flakes. Add more chips to the freezer bag and crush as long as it's manageable.
- Pour the crushed chips into a shallow bowl. In another shallow bowl, whisk the two eggs until smooth. One at a time, dip both sides of the chicken breasts into the egg then place in the bowl with the potato chips. Using the opposite hand you used for the egg, firmly press the potato chips into the chicken breast on both sides to create a thick crust. Place the crusted chicken breast on the baking rack. Repeat with the remaining chicken breasts.
- Bake for 18-20 minutes or until the chicken has an internal temperature of 165 degrees F. Serve on its own or with dipping sauces of your choice.
POTATO CHIP CHICKEN CASSEROLE
Ingredients: 1 cup celery, chopped 2 cups cooked chicken, chopped 1 can cream of mushroom soup 1/2 cup milk 3 cups potato chips, crushed grated cheese (optional) Directions: 1. Mix celery and chicken together. 2. Place 1/2 of this mixture in an ungreased baking dish. 3. Spoon ½ can of mushroom soup and 1/4 cup milk over the chicken mixture. 4. Sprinkle 1 1/2 cups crushed potato chips over all. 5. Repeat layers one more time. If using grated cheese, sprinkle on top. 6. Bake 30 minutes at 350 degrees F.

My mom used to make this all the time when I was a kid. She'd save the crumbs left at the end of every bag of Lays potato chips until she had enough to make this. This is such a fun way to eat chicken! The quantities here are approximate, to give you an idea.

Steps:
- Preheat the oven to 400°F.
- Mix the potato chips, cheese, and garlic powder in a large ziploc bag.
- Melt the butter or margarine in a shallow dish.
- You can cut the chicken breasts into strips if you want to do this as chicken fingers.
- Moisten the chicken pieces in the butter or margarine, then seal them in the ziploc bag, and shake to coat.
- Lay the chicken out on a baking sheet (I always cover the sheet with foil for easy cleanup). If you want to, you can cover the chicken with the leftover coating.
- Bake 40 minutes for whole breasts, 30 minutes for strips.
