Voodoo Shrimp Creole is a tomato-based dish using shrimp and beer to make a sweet and spicy broth. Serve over rice or grits for a full meal.

2 teaspoons paprika
1 teaspoon Kosher salt
2 teaspoons ground white pepper
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon cayenne pepper
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon dried basil
1/2 teaspoon crushed red pepper flakes
1 tablespoons butter
1/2 cup white onion (, grated or finely minced (about 1/4 onion))
2 cloves garlic (, grated or finely minced)
12 ounces dark beer (, lager or stout)
1 cup vegetable or seafood broth
2 teaspoons hot sauce
1 tablespoon Worcestershire sauce
2 tablespoons fresh lemon juice
1-4 tablespoons brown sugar (, see note)
2 bay leaves
15.5 ounce petite diced tomatoes (, drained)
1 pound shrimp (, tails on and deveined)
1/2 cup heavy cream
4 cups rice (, cooked)
celery leaves (, optional for garnish)
parsley (, chopped for garnish )

Steps:

  • In a small bowl, combine paprika, Kosher salt, garlic powder, white pepper, onion powder, cayenne pepper, oregano, thyme and basil. Set aside.
  • Heat butter over medium heat in a large skillet.
  • Add white onion and garlic. Saute for 2-3 minutes, or until it starts to resemble and paste or mush.
  • Add dry spice mixture, blending together until fragrant, about 2 minutes.
  • Deglaze pan with dark beer, scraping the browned bits from the bottom of the pan. Bring to a low simmer.
  • Add broth, hot sauce, Worcestershire sauce, lemon juice, brown sugar, bay leaves and tomatoes. Simmer on medium-low heat for 10 minutes, or until sauce has reduced by half.
  • Remove bay leaves.
  • Add raw shrimp, cooking until they curl and turn pink, approximately 4 minutes.
  • Stir in heavy cream over low heat until fully incorporated.
  • Dive into 4 servings, each with 1 cup cooked rice. Garnish with celery leaves.

1 tablespoon finely chopped flat-leaf parsley
1 tablespoon Louisiana-style hot sauce
2 teaspoons whole-grain mustard
2 cloves garlic, minced
2 teaspoons capers, roughly chopped
1 teaspoon worcestershire sauce
1 teaspoon mild paprika
1 scallion, finely chopped
1/4 teaspoon kosher salt
1/8 teaspoon cayenne pepper

Steps:

  • In a small bowl, mix together mayonnaise, Dijon mustard, lemon juice, parsley, hot sauce, whole-grain mustard, garlic, capers, Worcestershire sauce, paprika, scallion, salt, and cayenne pepper. Let sit for 1 hour for flavors to combine, then serve or cover and store in the refrigerator.

10 ounces crawfish tails
2 teaspoons creole seasoning
1/4 cup minced onion
3 minced garlic cloves
6 ounces andouille sausages, cut in a small dice
5 tablespoons Worcestershire sauce
8 ounces shredded mozzarella cheese
20 egg roll wraps
vegetable oil, to fry

Steps:

  • Sprinkle creole seasoning on crawfish and toss to cover.
  • Saute onions and garlic in Worcestershire sauce for 2 minutes. Add crawfish and andouille. Sauté for 3 minutes. Drain and allow to cool. Mix cheese with the cool meat mixture.
  • Place egg roll wrapper on a dry surface. Place 2 Tablespoons of the meat and cheese mixture in a roll down the middle of the wrapper. Fold the sides of the wrapper 1/2 inch over the mixture. With a small amount of water, wet one end and roll toward that end. Press to seal. Fry rolls at 375 degrees until golden, about 2 minutes. Make sure to turn the rolls so that both sides cook evenly.

Steps:

  • Cook pasta according to package directions; drain.

1 -15 oz bottle heinz 57 sauce
2 Tbsp worcestershire sauce
1 Tbsp honey
1 1/2 tsp ground cayenne pepper (hot)
1 tsp curry powder
1/2 tsp ground coriander
1/2 tsp garlic powder
1/2 tsp liquid smoke flavoring
1/2 tsp onion powder
1/4 tsp chili powder

Steps:

  • 1. Mix all ingredients. Store in glass container in refrigerator.
  • 2. You can even pour over a block of cream cheese (softened) and serve with crackers.
