The deep hazelnut flavor and buttery goodness of these cookies belie their simplicity. With just five ingredients, these are some of the easiest cookies to make. Martha made this recipe on episode 704 of Martha Bakes.

1/2 cup blanched hazelnuts
1/2 cup (1 stick) unsalted butter, softened
1/2 cup sugar
1 1/2 cups all-purpose flour
1/2 teaspoon coarse salt

Steps:

  • Preheat oven to 375 degrees. Place hazelnuts on a baking sheet and toast until golden and fragrant, 10 to 15 minutes. Remove from oven and let cool completely. Reduce oven temperature to 350 degrees. Pulse in a food processor until just finely ground (do not grind into a paste).
  • In the bowl of an electric mixer fitted with the paddle attachment, cream butter and sugar until light and fluffy, 2 to 3 minutes. Add flour, ground hazelnuts, and salt; beat until dough forms. If needed, drizzle in 1 to 2 tablespoons water, 1 tablespoon at a time, to help form a dough. Dough can be wrapped well in plastic and refrigerated up to 1 day or frozen up to 3 months (thaw in refrigerator before using).
  • Roll dough into 1-inch balls and transfer to parchment-lined baking sheets, spacing 2 inches apart. Press balls with tines of fork to flatten. Bake until edges are golden, rotating sheets halfway through, 12 to 15 minutes. Transfer sheets to a wire rack and let cookies cool completely. Cookies can be stored in an airtight container at room temperature up to 3 days.

1/2 cup hazelnuts (2 oz)
1/4 cup plus 3 tablespoons sugar
3/4 cup plus 2 tablespoons all-purpose flour
1 stick (1/2 cup) cold unsalted butter, cut into small pieces

Steps:

  • Put oven rack in middle position and preheat oven to 350°F.
  • Toast hazelnuts in a shallow baking pan until fragrant and skins begin to loosen, about 6 minutes. Rub nuts in a kitchen towel to remove any loose skins (some skins may not come off) and cool to room temperature.
  • Pulse nuts and 1/4 cup sugar in a food processor until nuts are finely ground, then add flour and a pinch of salt, pulsing until combined. Add butter and pulse until dough just forms a ball. Divide dough in half, then roll dough on a work surface lightly dusted with sugar and flour into 2 (11-inch-long) logs (each about 1 inch wide). Chill, wrapped in plastic wrap, 1 hour.
  • Cut logs crosswise into 1/2-inch slices and arrange rounds 2 inches apart on 2 baking sheets.
  • Bake, 1 sheet at a time, until bottom edges just begin to turn pale golden, 12 to 15 minutes. Cool cookies on sheet 2 minutes. Place remaining 3 tablespoons sugar in a small dish and dip tops of cookies in it, then cool sugared cookies on a rack.

This cookie debuted on our family holiday cookie trays this past year and quickly became one of my favorites. Mom sent me her recipe and I'm putting it here for safe keeping. The cookie is labor intensive and not recommended for busy or new chefs. That said the results are both beautiful and delicious. Would be great for a special occassion or dinner party served with a fruit sorbet. (Preparation does not include 1 hour chilling time.)

1 cup sweet butter, at room temperature (please no substitutions)
1 tablespoon water
3/4 cup sifted confectioners' sugar
1/4 cup white sugar
1 tablespoon vanilla extract
1/2 teaspoon nutmeg
1/2 teaspoon salt
1 egg yolk
2 3/4 cups all-purpose flour
1 cup finely ground hazelnuts, measure after processing
3 ounces semisweet chocolate
1 teaspoon shortening
3 ounces white chocolate
1 teaspoon shortening

Steps:

  • To prepare hazelnuts, spread nuts in a single layer on a baking sheet. Bake at 350 degrees for 7-8 minutes. Remove from oven and allow them to cool for 5 minutes. Place in food processor and grind using the pulse action until you have a coarse powder.
  • In a large bowl, use a mixer to beat the butter, water, sugars, vanilla, salt and nutmeg for 2 minutes.
  • Beat in egg yolk until mixed in; then the hazelnuts.
  • At lowest possible speed, mix in the flour until just blended. Your dough should be stiff but still soft. If it is very soft, add in 1 or 2 additional tablespoons of flour.
  • Divide dough in halves and wrap in plastic wrap. Chill for one hour.
  • Preheat oven to 350 degrees.
  • To make the cookies, take about 2 tablespoons of dough and form into a rope about 3 inches long. Turn the ends of the ropes inward to form a crescent (C) shape. Place on baking sheet about 1 inch apart.
  • Bake for 13-15 minutes until the cookies have a tan color and dry exterior. Remove from oven and cool on baking racks.
  • To glaze the cookies, first melt the two chocolates separately, each with a teaspoon of shortening. Place the chocolate into resealable plastic bags. Clip a tiny corner to create a piping bag and drizzle small stripes of each of the melted chocolates on each cookie. (Place some waxed paper under the baking racks for quick cleanup.) Let the chocolates harden and transfer to an air tight storage container.

½ cup packed brown sugar
1 large egg
2 teaspoons vanilla extract

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
  • Cream butter, white sugar, and brown sugar together in a large bowl using an electric mixer. Add egg and vanilla extract and beat until well combined. Mix flour, baking powder, and salt in a separate bowl and mix into egg mixture until just combined. Fold in chopped hazelnuts.
  • Use a tablespoon to cut off little portions of dough; roll them into balls. Place on the prepared baking sheet with room in between.
  • Bake in the preheated oven until lightly browned, 10 to 20 minutes.

6 ounces unskinned lightly toasted hazelnuts
2 tablespoons vegetable oil
6 tablespoons unsalted butter, at room temperature
1/2 cup dark brown sugar, packed
1/3 cup granulated sugar
1 large egg
1/2 teaspoon vanilla extract
1 cup flour
1/2 teaspoon baking soda
Pinch of salt

Steps:

  • Preheat oven to 350 degrees.
  • Place the hazelnuts in a food processor and grind coarsely. Reserve 1/4 cup of the hazelnuts. Grind the remaining nuts fine and add the oil. Blend the mixture thoroughly into a hazelnut butter. Set aside.
  • Cream the butter and sugars together until light and fluffy (this can be done in the washed food processor or with an electric mixer in a bowl). Beat in the hazelnut butter, the egg and the vanilla. Mix thoroughly.
  • Sift the flour and add with the baking soda and the salt. Mix thoroughly and add the reserved hazelnuts. Using a teaspoon, form the dough into balls and arrange them 2 inches apart on baking sheets that have been greased or lined with parchment paper. Using the prongs of a fork that have been dipped into flour to prevent sticking, flatten the balls into 1 1/2 inch rounds (Tip: If you want a clearly visible criss-cross design on the cookies, chill dough for 30 minutes before doing so).
  • Bake in the middle of the oven for 8-to-9 minutes or until the cookies are golden. Cool on racks. The cookies will keep for about a week in a sealed jar.

This is one of my favorite cookies. My good friend Roula use to make them for me all the time. Until I begged for the recipe. I like them with lots of the icing sugar mixture on them.... I hope you will enjoy this delicious treat as much as we do.

- 150 gr butter, break into small pieces
- 210 gr flour, baking
- 80 gr hazelnuts, ground
- 80 gr powdered sugar
- 1/4 tsp cinnamon
- 1/8 tsp nutmeg
- 1/8 tsp mace
- 1 egg, large
- 60 gr powdered sugar (garnish)
- 3 tbsp vanilla sugar (garnish)

Steps:

  • Preheat oven to 160C.
  • Using a large bowl, sieve the flour into it.
  • Cut the cold butter into the flour and mix.
  • Next add the powdered sugar, ground cinnamon, nutmeg and mace, the ground hazelnuts and the whole egg.
  • To help knead the mixture into a dough quickly, you will need to rinse your hands in cold water. It helps the dough to cling together easily.
  • Wrap the dough and chill for half an hour.
  • Form the dough into thumb thick rolls and cut into 1 cm wide pieces.
  • Now roll and form the dough into crescents.
  • Bake in a 160° Celsius oven for 10-15 minutes, or until the cookies are light gold in color.
  • Mix the powdered sugar and vanilla sugar together, well.
  • Roll or sprinkle the powdered sugar mixture on the cookies. You want to do this while the cookies are hot, it will stick easier.
  • You can decide how much sugar you want on the cookies, if you want more, roll them again. Hope you will enjoy this lovely treat.
