These are a perfect Sunday morning breakfast with sugar free maple syrup. You may need to adjust the amount of flour slightly depending an the amount of moisture in the bananas. Yield depends on how big you make the cakes. Baking time also depends on the size of the cakes.

1 1/3 cups skim milk
1/2 cup Egg Beaters egg substitute
1 tablespoon vegetable oil
1 teaspoon vanilla
3/4 cup banana, ripe
1 1/2 cups Multi-Bran Chex
1 cup all-purpose flour
3 tablespoons Splenda sugar substitute
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon ground nutmeg

Steps:

  • In blender, process milk, eggs, oil, vanilla, and banana just to mix.
  • Add bran cereal, process, add remaining ingredients.
  • Process to combine, scrape sides of container.
  • Let stand 5 minutes.
  • Stir.
  • Bake on preheated, lightly greased griddle over medium heat.
  • Pour batter to form pancakes, cook.

4 ounces unsalted butter (1 stick)
1/2 vanilla bean
1 teaspoon Splenda sugar substitute
1 teaspoon cinnamon

Steps:

  • Allow the butter to soften at room temperature for 30 minutes.
  • Slice the vanilla bean lengthwise and scrape the meat from inside the bean.
  • Combine the butter with the vanilla meat, Splenda, and cinnamon. Mix well.
  • Shape the butter into a small stick and wrap tightly in plastic wrap. Chill in refrigerator.

Steps:

  • Place the All Bran, egg, cinnamon and Splenda in a blender.
  • Mix all ingredients and pour into skillet with some Pam until the edges get golden.
  • Spray some more Pam and flip. Enjoy!

This is my BF's pancake recipe for his diet. It came from a book by a French nutritionist Docteur Pierre Dukan, but the proportions have been tweaked a little to suit his taste. They're surprisingly yummy and have helped me lower my blood pressure!

4 tablespoons oat bran
2 tablespoons wheat bran
1 egg
2 egg whites
2 tablespoons nonfat plain yogurt
1 teaspoon baking soda (optional)

Steps:

  • Mix all ingredients in a bowl, and stir until well blended (I like to add a little baking soda to make the pancakes fluffier).
  • Cook pancakes as you'd normally do!
  • What we usually do:.
  • Coat a nonstick skillet with a little bit of oil using a paper towel.
  • Keep the pan on mid-low heat.
  • Pour a ladle of batter into pan.
  • Cook one side until the edges start to seem done.
  • Flip and cook the other side.

Thanks to Luv4food for posting her fabulous muffin recipe. My husband was recently diagnosed with diabetes so I made a few alterations to help lighten the sugar load. I did take her suggestion to add chocolate chips as the small amount is worth the yummy surprise when eaten.

2 medium ripe bananas
1 1/4 cups whole wheat flour
1/4 cup Splenda sugar substitute
1/4 cup unsweetened cocoa powder
2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 cup all-bran cereal
1 cup skim milk
1/4 cup egg substitute
1/4 cup oil replacement (prune puree)
1/4 cup semi-sweet chocolate chips

Steps:

  • Preheat over to 400f and lightly grease muffin tin or line with paper.
  • Set aside.
  • Peel bananas and mash (or slice one).
  • Set aside.
  • Sift together flour, cocoa, baking powder, baking soda, and salt.
  • Set aside.
  • In a large mixing bowl, combine cereal and milk.
  • Let stand 2-3 minutes or until cereal is softenened.
  • Add egg, fat substitute, and mashed bananas.
  • Mix well.
  • Mix is sliced bananas (if one was sliced).
  • Add the flour mixture, stirring just until combined.
  • Portin into muffin tins evenly.
