Steps:

  • In a large bowl, beat the cream cheese, cranberries, apricots and orange zest until blended. Chill until serving. Serve with crackers.

2 cups orange marmalade
3/4 cup dried cranberries
1 tablespoon orange zest
1 teaspoon grated lemon peel
1/4 teaspoon clove

Steps:

  • In a medium saucepan over medium-high heat, stir orange juice and sugar until sugar is dissolved.
  • Add in remaining ingredients; bring to a boil, reduce heat to medium-low and simmer, stirring occasionally until mixture is reduced to about 3 cups (this should take around 15-17 minutes).
  • Cool to room temperature.
  • Place into a glass jar or bowl and refrigerate up to one week.

1 ½ teaspoons baking powder
¾ teaspoon salt
½ teaspoon baking soda
¼ cup butter, cut into small chunks
¾ cup orange juice
1 tablespoon grated orange zest
1 egg, beaten
1 cup chopped cranberries
½ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 8 1/2x4 1/2-inch loaf pan.
  • Combine flour, sugar, baking powder, salt, and baking soda in a bowl. Stir butter into flour mixture until combined. Add orange juice, orange zest, and egg; mix well. Fold in cranberries and walnuts. Spoon batter into the prepared pan.

My sister-in-law brought this for Thanksgiving and it was so good. I think she said she found the recipe on a cracker box. I don't even know what the name of the recipe originally was. I just came across the recipe today.

8 oz cream cheese, softened
1/2 c fresh squeezed orange juice
1 Tbsp sugar
3 tsp orange zest
1/8 tsp cinnamon
1/4 c finely chopped dried cranberries
1/4 c finely chopped pecans.

Steps:

  • 1. Just combine the first 5 ingredients well, then stir in the cranberries and pecans.
  • 2. We had it with crackers but I also think it would be delicious on toast or pound cake.

It is the dish I am most often asked to bring to a gathering requiring finger foods or appetizers. Really good on Townhouse Wheat Crackers. If I don't have any orange juice concentrate, I use just enough fresh squeezed juice to make it the right consistency and the zest from the orange for more flavor. *PLEASE NOTE!!* You REALLY need to make this ahead of time! The flavors must blend for it to taste good!

3 cups flour
1 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 teaspoon baking soda
1 cup orange juice
1/2 cup butter, melted
2 eggs, beaten
1 1/2 cups cranberries, chopped
2 teaspoons orange zest
8 ounces cream cheese, softened
1/4 cup orange marmalade

Steps:

  • Combine the flour, sugar, baking powder, salt, and soda.
  • Mix together the juice and melted butter. Combine with the dry mixture. Stir until just moistened.
  • Fold in cranberries and zest.
  • Pour into greased and floured 9 x 5 inch loaf pan or a Bundt Pan. Bake 350 Degrees F. for 1 hour and 10 minutes, or until wooden pick inserted comes out clean. Cool 5 minutes, remove from pan.
  • For the Creamy Orange Spread:.
  • Combine the orange marmalade and the cream cheese (store in the refrigerator).
  • Serve warm slices of the bread with dollops of the creamy spread.
