Categories     main-dish

Time 40m

Yield 4 servings

Number Of Ingredients 9

Kosher salt
2 tablespoons packed light brown sugar
12 fresh sage leaves
4 bone-in pork loin (T-bone) chops (3/4 to 1 inch thick)
1 medium butternut squash, peeled, halved lengthwise and sliced crosswise
3 tablespoons extra-virgin olive oil
1/4 teaspoon freshly grated nutmeg
3/4 cup low-sodium chicken broth
Juice of 1/2 lemon

Steps:

  • Preheat the oven to 425 degrees F. Combine 1/2 cup water, 2 tablespoons salt, 1 tablespoon brown sugar and 4 sage leaves in a small saucepan over medium-high heat, stirring, until the sugar and salt dissolve. Pour the mixture into a large bowl and add 5 cups cold water. Submerge the pork chops in the brine and refrigerate 10 minutes.
  • Chop 3 sage leaves; set aside. Toss the remaining 5 sage leaves with the squash, 2 tablespoons olive oil, the nutmeg and 1/2 teaspoon salt. Spread on a baking sheet and roast until tender, 25 to 30 minutes.
  • Heat the remaining 1 tablespoon olive oil in a large nonstick skillet over medium-high heat. Drain the pork and pat dry. Add to the skillet and cook until a meat thermometer inserted sideways into the center registers 140 degrees F, 5 to 7 minutes per side. Divide among 4 plates.
  • Add the chicken broth and the remaining 1 tablespoon brown sugar to the skillet; simmer, stirring, until reduced by half, about 3 minutes. Remove from the heat and add the lemon juice, the reserved chopped sage, and salt to taste. Drizzle the pork with the sauce and serve with the squash.

PORK WITH SQUASH AND APPLES

Pork with Squash and Apples image

Provided by Food Network Kitchen

Categories     main-dish

Time 53m

Yield 4 servings

Number Of Ingredients 11

1 teaspoon freshly grated nutmeg
1 1/2 teaspoons minced garlic (about 2 large cloves)
2 tablespoons chopped fresh sage
2 1-pound pork tenderloins, trimmed
Kosher salt and freshly ground pepper
1 small butternut squash, peeled and cut into 1-inch pieces
2 cooking apples, peeled and cut into 1/2-inch pieces
1 medium red onion, cut into 1/2-inch pieces
1 tablespoon honey mustard
1 sprig fresh rosemary
5 tablespoons unsalted butter, cut into pieces

Steps:

  • Preheat the oven to 425 degrees. Mix the nutmeg, 1 teaspoon garlic and the sage in a bowl. Rub over the pork and season with salt and pepper.
  • Toss the squash, apples, onion, the remaining 1/2 teaspoon garlic, the honey mustard, and salt and pepper to taste in a bowl. Spread out on a long sheet of foil. Add the rosemary and 3 tablespoons butter, then bring the ends of the foil together and crimp to seal into a packet. Place the packet on a baking sheet and roast on the upper rack until tender, 30 to 35 minutes. Poke holes in the packet to release steam.
  • Meanwhile, heat a large ovenproof skillet over medium-high heat. Add the remaining 2 tablespoons butter, then brown the pork on all sides, about 8 minutes. Add 2 tablespoons water and scrape up any browned bits from the pan, then transfer the skillet to the lower oven rack and roast until a thermometer registers 150, about 15 minutes. Transfer the meat to a cutting board and let rest 5 minutes.
  • Return the skillet to medium heat. Add 1/2 cup water, scrape up any browned bits and simmer about 2 minutes. Slice the pork and drizzle with the pan juices. Serve with the squash and apples.

WINTER SQUASH AND PORK STIR-FRY

Winter Squash and Pork Stir-Fry image

This Mark Bittman recipe from 2006 pairs sweet winter squash with earthy, fatty pork shoulder. The grouping, when stir-fried, "gives squash an unusual final texture - somewhat al dente - and keeps its flavor from becoming too sweet," Mr. Bittman wrote. It's a great option for a weeknight dinner, and a far cry from the cut-and-bake squash of the 1970s.

Provided by Mark Bittman

Categories     dinner, easy, quick, main course

Time 30m

Yield 4 servings

Number Of Ingredients 8

4 tablespoons peanut or neutral oil, like grapeseed or corn
1 pound pork shoulder, cut into thin bite-size pieces or shredded
1 pound peeled winter squash, julienned
2 tablespoons minced ginger
1/4 cup chopped scallions
1 cup any stock
2 tablespoons soy sauce
Minced scallions, chives or cilantro for garnish, optional

Steps:

  • Put half the oil in a heavy skillet or wok and turn heat to high. When hot, add pork and cook, stirring once or twice, until browned; don't worry about cooking it through. Remove with a slotted spoon.
  • Add remaining oil, followed a moment later by squash. Cook, stirring occasionally, for about 2 minutes. Add ginger and scallions and stir; add stock and cook until it reduces by about half. Add soy sauce and cook 30 seconds or so.
  • Return pork to skillet and cook about 1 minute, stirring. There should still be liquid remaining in pan. Garnish and serve.

PORK CHOPS WITH SQUASH AND SAGE

Pork Chops With Squash and Sage image

This is such a classic combination of flavors. The pork chops are briefly brined and then pan fried while the squash roasts in the oven.

Provided by threeovens

Categories     Pork

Time 40m

Yield 4 serving(s)

Number Of Ingredients 10

5 1/2 cups water, divided
kosher salt
2 tablespoons packed light brown sugar
12 fresh sage leaves
4 pork chops, 3/4 to 1-inch thick (bone-in pork loin (t-bone)
1 medium butternut squash, peeled, halved lengthwise and sliced crosswise
3 tablespoons extra virgin olive oil
1/4 teaspoon nutmeg, freshly grated
3/4 cup chicken broth
2 tablespoons fresh lemon juice (from 1/2 a lemon)

Steps:

  • Preheat the oven to 425 degrees F.
  • Prepare the brine: Place 5 cups of cold water in a large bowl.
  • Next heat 1/2 cup water, 2 tablespoons salt, 1 tablespoon brown sugar, and 4 of the sage leaves in a small saucepan; cook over medium high heat, stirring to dissolve the sugar and salt. Add salt mixture to the bowl of cold water.
  • Place the pork chops in the brine for at least 10 minutes. Chop 3 of the sage leaves and set aside.
  • Now toss together (either in a large bowl or directly on your baking sheet) the squash, 2 tablespoons olive oil, and remaining 5 sage leaves. Season with nutmeg and about 1/2 teaspoon of salt. Roast until tender about 20 to 25 minutes (at 425 degrees F).
  • Drain the pork chops and pat them dry with paper toweling. In a large skillet, heat the remaining 1 tablespoon of oil over medium high heat. Cook pork chops to an internal temperature of 140 degrees, about 5 to 7 minutes per side (you can insert your meat thermometer in the side for a true reading).
  • To the skillet, add the chicken broth and remaining 1 tablespoon brown sugar, simmer, stirring, until reduced by half. This takes about 3 minutes. Remove from heat and squeeze in the lemon juice, add the reserved chopped sage, and any salt to taste.
  • To serve: Place a pork chop on each of 4 plates. Drizzle with the pan sauce. Serve squash on the side.

  • Start by making your chutney: combine all of the ingredients, except the raisins, in a large saucepan. Bring to a boil, lower to a simmer, stirring occasionally, and cook for 50 minutes to an hour until most of the liquid is evaporated. Take off the heat and add the raisins.
  • To make the squash, heat the oven to 425. Slice the squash in half lengthwise, scoop out the seeds, and slice into 1/2 inch rings. Toss on a cookie sheet with the maple syrup, enough olive oil to coat everything, and lots of salt and pepper. Roast in the oven for 20 minutes, flipping halfway through, until the squash is deep golden brown on both sides.
  • To make the chops, grind the coriander seeds, fennel seeds, and peppercorns in a spice grinder just until coarsely ground (you don't want a powder or it'll burn). Season the chops all over with lots of salt and the spice mixture.
  • In a large cast iron skillet, heat a splash of the grapeseed oil until very hot. Lay the chops in on their side with the fat-side down. Render the fat until golden brown, then lay the chops flat in the skillet -- they should sizzle -- and cook, without moving, for 2 to 3 minutes until deep, dark brown. Flip over and cook on the other side. Start taking the chops' temperature in the middle -- you're shooting for 135. Keep cooking, flipping every few minutes, until you reach that temperature.
