1 quart water
3 orange spice tea bags
½ cup light brown sugar
2 cups apple cider
1 ½ cups light rum
8 cinnamon sticks
3 teaspoons butter

Steps:

  • Pour water into a large saucepan and bring to a boil. Remove from heat and toss in the orange spice tea bags. Cover and let steep 5 minutes. Remove tea bags and stir in sugar, apple cider, rum, and 2 of the cinnamon sticks. Heat just to steaming -- do not boil.
  • Ladle hot cider into 6 mugs and drop 1/2 teaspoon butter into each. Garnish with a cinnamon "swizzle" stick.

4 cups rum
1 large red apple
8 whole cloves
2 Tablespoons brown sugar
3 cinnamon sticks

Steps:

  • Combine the apple juice, orange slices, nutmeg, allspice, vanilla extract and rum in a large pot set over medium heat.
  • Pierce the cloves into the apple. Add the apple to the pot along with brown sugar.
  • Let simmer until heated throughout. Ten minutes before serving, add the cinnamon sticks.
  • Strain the spiked cider into cups and serve.

FOR THE CINNAMON SIMPLE SYRUP
1/4 cup water
1/4 cup granulated sugar
1/2 teaspoon ground cinnamon
1 cinnamon stick
FOR THE SPIKED APPLE CIDER FLOATS
2 cups apple cider, chilled
1/4 cup cinnamon simple syrup
1/4 cup applejack or apple schnapps
2 tablespoons bourbon
5-6 scoops vanilla ice cream

Steps:

  • Combine the water, granulated sugar, ground cinnamon, and cinnamon stick in a small saucepan.
  • Place over medium-high heat, and allow to cook until the sugar is dissolved, stirring frequently. This should take about 2-3 minutes.
  • As soon as the sugar is dissolved, turn off the heat and allow the syrup to cool to room temperature.
  • When the simple syrup is cool, strain through a fine-mesh sieve into a clean container, cover, and store in the fridge until ready to use.
  • Place two mugs in the freezer about an hour before you'd like to serve the floats.
  • Place 2-3 scoops of vanilla ice cream in each mug, depending on how much ice cream you like.
  • In a small pitcher or cocktail shaker, combine the apple cider, cinnamon simple syrup, applejack, and bourbon. Shake to combine.
  • Pour the apple cider over top of ice cream in the mugs.
  • Optional: Garnish with a cinnamon stick. And serve with a straw and a spoon.
  • Enjoy!

1 gallon apple cider
2 whole nutmegs
3 -4 cinnamon sticks
1 orange, cut into four wedges
1/2 apple, cut into wedges
20 -25 whole cloves
3 -4 pieces crystallized ginger
1/4 cup brown sugar
cheese cloth, and
butcher's string

Steps:

  • Pour enough cider to fill crock pot to ¾ full. Add brown sugar. Stick whole cloves into skin of orange and apple wedges. Place apple, orange and all remaining ingredients into cheese cloth, tie with string and drop into crock pot. Bring to a boil, about 2 to 2 ½ hours on high.
  • Once the cider is boiling, reduce setting to low. Keep on low for 2 hours or more before serving. Replenish with additional cider when needed; if cider is cold, return setting to high until heated.
  • Serve or have guests serve themselves from the crock pot. If desired, leave a bottle of spiced rum nearby.
