This creamed herring salad recipe features potatoes and chopped hard-cooked eggs dressed in sour cream.

2 large russet potatoes (peeled, cooked, and cooled)
4 fillets herring (patted dry and finely chopped)
1 tart apple (finely chopped)
1 tablespoon red or yellow onion (finely chopped)
1 medium dill pickle (finely chopped)
1/2 to 1 cup sour cream
2 tablespoons vinegar
Dash pepper (to taste)
1 hard-cooked egg
Optional: fresh dill sprigs

Steps:

  • Gather the ingredients.
  • Dice the potatoes and place in a medium bowl.
  • Add finely chopped herring, apple, onion, and pickle, and mix well.
  • In a separate small bowl, whisk together sour cream and vinegar and combine with herring and the other ingredients.
  • Finely chop the egg white and transfer to the salad.
  • Crumble the egg yolk into the salad and mix well.
  • The salad should be salty enough from the pickled herring, but add pepper to taste. Refrigerate until ready to serve and garnish with dill sprig, if desired.

12 smoked herring fillets
2 bay leaves
1/2 Spanish onion sliced very thin
6 cloves
3 to 4 small black peppercorns
1 sprig fresh thyme
1 1/2 large or 2 medium carrots sliced very thin ribbons and in very thin discs
1 pint virgin olive oil plus 1 pint vegetable oil (more or less, as necessary)
12 red Bliss potatoes
2 Lemon slices
1 tablespoon chopped tomato
1/2 tablespoon chopped onion
1/2 tablespoon chopped Italian parsley
1 sprig parsley

Steps:

  • Soak the herring fillets in water for 24 hours, changing the water 3 times. Then dry them well with a towel.
  • Put the fillets in a deep dish. Add the bay leaves, sliced onion, cloves, peppercorns, thyme, and sliced carrots. Cover them well with olive oil Cover, refrigerate, and marinate for 5 days.
  • Just before serving, boil the potatoes for about 10 minutes, or until cooked through. Peel and slice them 1/8 to 1/4-inch thick and arrange the slices from 2 potatoes on each of 6 plates. Top each serving with 2 herring fillets, drizzle with some of the marinade oil and scatter on some of the carrots and onion slices. Garnish each plate with two slices of lemon, the chopped tomato, onion, parsley and parsley sprig.

2 pickled herring, pieces 6 oz jars wine-flavored drained and diced small
1 green apple, cored and diced small (unpeeled)
1/2 lb new potato, cooked and diced small (unpeeled)
1/2 cup finely diced cooked beef or 1/2 cup veal
2 tablespoons yellow onions, peeled and diced small
1/3 cup finely chopped dill pickle
6 tablespoons reserved beet liquid
2 tablespoons distilled white vinegar
1 -2 tablespoon sugar
1 pinch fresh ground black pepper
salt
1/2 cup heavy cream
2 hard-boiled egg yolks, chopped or grated

Steps:

  • Mix all of the ingredients for the salad in a salad bowl. Blend all of the dressing ingredients except the whipping cream. Stir the dressing into the salt. Whip the cream and gently fold into the salad. Garnish with the chopped or grated egg yolk.

  • Place potatoes in large pan. Add cold water to cover. Boil until tender but not mushy. Drain. Cool completely. Peel and dice potatoes. Place potatoes, apples and onions in large bowl. Add enough dressing to season to taste and toss well. Line large plate with lettuce leaves. Mound salad in center of plate. Arrange herring, beets and eggs around salad. Serve salad, passing remaining dressing separately.

1 to 2 tablespoons sugar
1 cup cooked beef, veal, lamb or pork, diced

1 cup cooked potatoes, diced
2 sweet gherkins, diced
2 peeled, cored apples, diced
1 cup unsweetened, lightly salted whipped cream or 1 cup mayonnaise delicately colored with beet juice
2 or 3 hard-cooked eggs, sliced
6 or more cherry tomatoes, halved
Parsley for garnish

Steps:

  • Mix first nine ingredients thoroughly, pack into 6-cup fishshaped mold (or other suitable mold) that has been rinsed with cold water and refrigerate.
  • Unmold salad onto platter, cover completely with whipped cream or mayonnaise and decorate with sliced eggs, tomatoes and parsley.
