CREAMED HERRING SALAD
Steps:
- Gather the ingredients.
- Dice the potatoes and place in a medium bowl.
- Add finely chopped herring, apple, onion, and pickle, and mix well.
- In a separate small bowl, whisk together sour cream and vinegar and combine with herring and the other ingredients.
- Finely chop the egg white and transfer to the salad.
- Crumble the egg yolk into the salad and mix well.
- The salad should be salty enough from the pickled herring, but add pepper to taste. Refrigerate until ready to serve and garnish with dill sprig, if desired.

LE JARDIN BISTRO HERRING AND WARM POTATO SALAD

Steps:
- Soak the herring fillets in water for 24 hours, changing the water 3 times. Then dry them well with a towel.
- Put the fillets in a deep dish. Add the bay leaves, sliced onion, cloves, peppercorns, thyme, and sliced carrots. Cover them well with olive oil Cover, refrigerate, and marinate for 5 days.
- Just before serving, boil the potatoes for about 10 minutes, or until cooked through. Peel and slice them 1/8 to 1/4-inch thick and arrange the slices from 2 potatoes on each of 6 plates. Top each serving with 2 herring fillets, drizzle with some of the marinade oil and scatter on some of the carrots and onion slices. Garnish each plate with two slices of lemon, the chopped tomato, onion, parsley and parsley sprig.

Steps:
- Boil beets until tender to the fork. The skin should be tearing and should peel off easily by hand.
- Cool beets in water and peel by hand.
- Add all ingredients except for mayo/herring to bowl and mix.
- If desired, freeze some or all for later preparation.
- Dice pickled herring fillets and add with mayo to taste.

- Combine first 4 ingredients in small bowl. Season with salt and pepper.
- Place potatoes in large pan. Add cold water to cover. Boil until tender but not mushy. Drain. Cool completely. Peel and dice potatoes. Place potatoes, apples and onions in large bowl. Add enough dressing to season to taste and toss well. Line large plate with lettuce leaves. Mound salad in center of plate. Arrange herring, beets and eggs around salad. Serve salad, passing remaining dressing separately.
