This turkey meatloaf has great texture and a surprisingly good flavor. The secret is the quinoa! A wonderful recipe for anyone wanting to eat gluten-free.

1/4 cup quinoa
1/2 cup water
1 teaspoon grapeseed oil
1 small onion, chopped
1 large garlic clove, minced
1/2 cup zucchini, shredded
1/2 cup yellow pepper, diced
1 lb ground turkey
2 1/2 teaspoons tomato paste
1 1/2 tablespoons Worcestershire sauce
1 egg
1 teaspoon salt
1 teaspoon ground black pepper
1 1/2 teaspoons Worcestershire sauce
1/2 cup ketchup

Steps:

  • Bring the quinoa and 1/2 cup of water to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until the quinoa is tender, and the water has been absorbed, about 15 to 20 minutes. Set aside to cool.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat the oil in a skillet over medium heat. Stir in the onion; cook and stir until the onion has softened and turned translucent, about 5 minutes. Add the garlic and cook for another minute; remove from heat to cool.
  • Mix the turkey, cooked quinoa, onions, garlic, zucchini, yellow peppers, tomato paste, 1 1/2 tablespoons Worcestershire sauce, egg, salt, and pepper in a large bowl until well combined. The mixture will be very moist. Shape into a loaf on a foil lined baking sheet or place into a loaf pan. Combine the 1 1/2 teaspoons Worcestershire sauce, and 1/2 cup of ketchup in a small bowl. Rub the ketchup mixture over the top of the meatloaf.
  • Bake in the preheated oven until no longer pink in the center, about 50 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Let the meatloaf cool for 10 minutes before slicing and serving. Bon Appétit!

2 tablespoons good olive oil
2 teaspoons kosher salt

1/3 cup Worcestershire sauce
3/4 cup chicken stock
1 1/2 teaspoons tomato paste
5 pounds ground turkey breast
1 1/2 cups plain dry bread crumbs
3 extra-large eggs, beaten
3/4 cup ketchup

Steps:

  • Preheat oven to 325 degrees F.
  • In a medium saute pan, over medium-low heat, cook the onions, olive oil, salt, pepper, and thyme until translucent, but not browned, approximately 15 minutes. Add the Worcestershire sauce, chicken stock, and tomato paste and mix well. Allow to cool to room temperature.
  • Combine the ground turkey, bread crumbs, eggs, and onion mixture in a large bowl. Mix well and shape into a rectangular loaf on an ungreased sheet pan. Spread the ketchup evenly on top. Bake for 1 1/2 hours until the internal temperature is 160 degrees F. and the meatloaf is cooked through. (A pan of hot water in the oven under the meatloaf will keep the top from cracking.) Serve hot, at room temperature, or cold in a sandwich.

Well, I have developed this version that has a great texture and a surprisingly good flavor (my brother couldn't even tell that it wasn't beef)! The secret is the quinoa, which adds wonderful texture and is much nuttier than breadcrumbs. I hope you enjoy this recipe!

2 tablespoons butter (or margarine)
1 cup onion, chopped
3 garlic cloves, minced
1 1/4 lbs ground turkey
1/2 cup breadcrumbs
1 egg (or 1/4 cup egg substitute)
3/4 cup catsup
2 teaspoons Worcestershire sauce
3/4 teaspoon salt
1/2 teaspoon black pepper

Steps:

  • Melt butter in a skillet.
  • Cook onion and garlic in melted butter for 5 minutes, stirring occasionally.
  • Place mixture in a large bowl to cool for 5 minutes.
  • Combine turkey, bread crumbs, egg, 1/4 cup of the katchup, Worcestershire sauce, salt, and pepper with onion mixture.
  • Press meatloaf into an 8x4-inch loaf pan.
  • Spread remaining catsup on top.
  • Bake in a 350 degree oven for 50-55 minutes.
  • (Internal temperature should reach 165 degrees.) Remove from oven and let stand 5 minutes before serving.

½ cup quinoa, rinsed well
1 medium zucchini
1 teaspoon olive oil
¾ cup sambal oelek (Indonesian chile sauce), divided
1 small red onion, finely chopped
2 large egg whites
3 cloves garlic, minced
1 tablespoon chopped fresh parsley
1 teaspoon dried Italian seasoning
½ teaspoon salt
½ teaspoon ground black pepper
1 pound ground skinless turkey breast
3 tablespoons stone-ground mustard

Steps:

  • Bring water and quinoa to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until quinoa is tender, 15 to 20 minutes.
  • Shred the zucchini using a cheese grater over a lint-free kitchen towel. Wrap the zucchini in the towel and wring out as much water as possible.
  • Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil and swab with olive oil.
  • Place the zucchini in a large bowl. Add 1/4 cup chile sauce, red onion, egg whites, garlic, parsley, Italian seasoning, salt, and pepper. Add quinoa and turkey; mix well to combine. Divide mixture into 6 parts and shape into small loaves. Space them evenly on the baking sheet.
  • Combine the remaining 1/2 cup chile sauce with mustard. Spread a heaping spoonful over each loaf.
  • Bake in the preheated oven until meatloaves are hot on the inside and sauce has darkened in color, 30 to 35 minutes. Remove from oven and let rest, at least 5 minutes.

1 tablespoon coconut oil
2 teaspoons olive oil
1 medium onion, chopped, or more to taste

2 large eggs
¼ cup liquid aminos (such as Bragg®)
¼ cup maple syrup
2 tablespoons Sriracha sauce, or more to taste
2 tablespoons tomato paste
1 ½ tablespoons prepared yellow mustard
¼ tablespoon Mediterranean sea salt
¼ tablespoon ground black pepper
½ cup ketchup, or to taste

Steps:

  • Bring chicken broth and quinoa to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until quinoa is tender, 15 to 20 minutes.
  • Let quinoa chill, 8 hours or overnight.
  • Preheat the oven to 425 degrees F (220 degrees C). Grease a 9x13-inch glass casserole pan with coconut oil.
  • Heat olive oil in a pan over medium-high heat. Cook onion and garlic in the hot oil until onion starts to soften, about 5 minutes.

After much trial and error trying to make a more healthy meatloaf, I came up with this recipe. It is important to make this on a baking sheet so the liquids can be drained off the meatloaf. Also, do not put the topping on before the meatloaf has cooked for 30 minutes. Turkey creates a lot of juices, so if you put the topping on first it will become watery and runny.

Steps:

  • Preheat oven to 375°F (176°C).
