Mandarin Chicken Pasta Salad is a tasty spin on a classic deli side! Pasta, chicken, mandarin oranges, and veggies with a tangy sweet orange vinaigrette.

Steps:
- To make the dressing, whisk together rice vinegar, orange juice, vegetable oil, sesame oil, sugar, ground ginger, garlic powder and onion powder until smooth.
- In a large bowl add the pasta, cucumber, red bell pepper, onion, carrot, garlic and chicken.
- Toss well with the dressing until well coated.
- Refrigerate 1 hour before serving.
- Garnish with mandarin oranges and sliced almonds.

I had this at a party and couldn't get it off my mind. It's a fruity Asian chicken salad that even my family's picky eaters enjoy. I bake my own chicken for more flavor, which adds to the prep time, but pre-cooked or canned chicken will also work just fine.

- To make the dressing, whisk together the ginger root, rice vinegar, orange juice, vegetable oil, sesame oil, soup mix, sugar, and garlic until well blended. Cover, and refrigerate until needed.
- Bring a large pot of lightly salted water to a boil. Add the bowtie pasta and cook for 8 to 10 minutes or until al dente; drain, and rinse under cold water. Place pasta in a large bowl.
- To make the salad, toss the cucumber, bell pepper, onion, tomatoes, carrot, spinach, mandarin oranges, chicken, and almonds with the pasta. Pour the dressing over the salad mixture, and toss again to coat evenly. Serve immediately.

- In a large skillet, saute chicken in 2 tablespoons butter until chicken is no longer pink. Sprinkle with the salt, paprika and pepper. Remove and keep warm. In the same pan, saute onion in remaining butter until tender. , In a small bowl, combine the cornstarch, ginger, nutmeg, orange juice and honey; gradually pour over onion. Bring to a boil; cook and stir for 2 minutes or until thickened. Add olives and chicken. Simmer, uncovered, for 5 minutes or until chicken is heated through. Serve with linguine.

This is one of our all time favorite summer meals and a full recipe will usually last us two meals. It keeps very well in the refrigerator and DH says sometimes that it tastes better the next day. I have never served this to anyone who didn't love it. Taken from Woman's Day Low-Fat Meals June 1995

- 1. In large bowl, combine pasta, chicken, grapes, cucumber, green onions and half the orange sections.
- 2. In small bowl, whisk together orange juice concentrate, oil, vinegar, salt and pepper. Pour over pasta mixture and toss gently to combine.
- 3. Arrange lettuce on large platter. Mound pasta salad on top and garnish with remaining orange sections.
- Note: I omit step 3 and prefer this salad quite cold so it goes into my fridge for at least an hour before serving. Served simply with fresh crusty rolls and butter.
