EASY BUTTERED GREEN BEANS AND CARROT STICKS
This is easy to make and the perfect veggie side dish to compliment your holiday table, and the combination of colours is very pretty! This recipe will serve around 6-8 people but it can be doubled. The beans and carrot sticks can be boiled hours in advance, just leave them in the ice water in the fridge until ready to saute in butter. I most always sprinkle with sliced toasted almonds, or even peanuts when serving this at my table, but that is optional.

Steps:
- Cook the green beans in a pot of boiling salted water until crisp-tender (about 5-6 minutes).
- Transfer beans to a bowl of ice water using a slotted spoon (do not discard the water).
- Boil the carrot sticks in the same water until crisp-tender (about 1 minute) then transfer to the same bowl of ice water with the beans.
- Place the beans and carrots on a paper towel and pat them dry.
- Up to this point you can refrigerate until ready to saute them.
- In a large skillet or a medium pot melt the butter with oil.
- Add in the beans and carrot sticks; toss until hot (about 2 minutes).
- Season with salt and pepper.
- Transfer to a large serving bowl and sprinkle with nuts if desired.
- Delicious!

HONEY-GLAZED CARROTS AND GREEN BEANS
Steps:
- Cook 2 cups each chopped carrots and green beans in a medium pot of boiling salted water until just tender, about 3 minutes. Drain, then return the vegetables to the pot with 2 tablespoons butter, 1 tablespoon honey and the zest of 1/2 lemon; season with salt. Cook, stirring, over medium heat, 1 minute.
BUTTERED GREEN BEANS AND CARROTS

- Cook green beans in large pot of boiling salted water until crisp-tender, about 6 minutes. Using slotted spoon, transfer green beans to bowl of ice water. Cook carrots in same boiling water until crisp-tender, about 1 minute. Transfer carrots to ice water with beans. Drain; pat vegetables dry. (Vegetables can be prepared 1 day ahead. Wrap vegetables in paper towels and refrigerate.)
- Melt 2 tablespoons butter with 2 tablespoons olive oil in large pot over medium-high heat. Add vegetables and toss until hot, about 2 minutes. Season to taste with salt and pepper.
ORANGE-GLAZED CARROTS
Rich in vitamins C and A, this nutritional powerhouse doesn't taste like a diet dish. The carrots absorb and become glazed with the buttery juice and dill adds a surprising fresh note at the end.

- Cut a 1-inch chunk off one end of a carrot at an angle. Roll the carrot a quarter turn and cut another 1-inch chunk at an angle. Continue rolling and cutting all of the carrots into 1-inch chunks. Combine the carrots and orange juice in a large saucepan. Add enough water to just cover the carrots. Add the butter and 1/4 teaspoon each salt and pepper.
- Bring to a boil, and then reduce the heat to maintain a steady simmer. Cook, stirring occasionally, until the carrots are tender and the liquid has reduced to a glaze, about 20 minutes. Top with the dill and serve.
ORANGE-BUTTERED GREEN BEANS WITH CARROTS
Steps:
- In saucepan, combine butter, marmalade and lemon zest. Heat until melted and sauce bubbles. Simmer carrots and beans until vegetables are tender. Drain Drizzle Sauce over vegetables.
GREEN BEANS WITH ORANGE OLIVE OIL
This is a side dish of fresh green beans tossed with orange-infused olive oil. It's my favorite way to make green beans. I normally serve it with Italian food, it's tasty and refreshing!

- Place green beans in a steamer basket over 1 inch of boiling water and cover. Cook until the beans are tender but still firm, 2 to 4 minutes. Drain, and keep warm.
- Meanwhile, stir together olive oil and 1 tablespoon orange zest strips in a large skillet over medium-low heat. Cook and stir until the olive oil has been infused with the flavor of the orange zest, about 2 minutes. Discard zest strips.
- Toss drained green beans with flavored olive oil and kosher salt over medium heat until the beans are hot and coated with oil. Place onto a serving dish and sprinkle with remaining 1 teaspoon grated orange zest to garnish.

Add this side dish to your menu and you won't be disappointed. I also like to sometimes substitute fresh green beans for the frozen. Cook time does not include the 10 minutes or so to cook the bacon.

- In a large skillet, cook bacon just until crisp, turning occasionally.
- Remove bacon and reserve 2 tablespoons of drippings in skillet.
- Drain bacon on paper towels.
- Add carrots to skillet along with butter and stir fry over medium heat for about 3 minutes.
- Add green beans and garlic and continue stir frying until vegetables are done.
- Stir black pepper into vegetables and remove from heat.
