SMOKED SALMON STUFFED ONIONS

Smoked Salmon Stuffed Onions image

These good-looking and tasty bites is where sweet, sour, and salty meet. The crunchy croutons and popping mustard seeds playfully team up with the smoked salmon's soft texture and the buttery cooked onions. Finally, the dill brings its refreshing flavor into play, too.

Time 45m

Yield 3

Number Of Ingredients 10

For the onions: 3 medium onions, halved

SMOKED SALMON WITH SWEET ONIONS

Smoked Salmon With Sweet Onions image

Another recipe for my stove-top smoker! Love this thing! Cooking time does not include marinade time. Because the salmon cooks quickly, either partially cook the potatoes or add them to the smoker and smoke until partially cooked before adding the salmon. Serve with your favorite dill sauce (mine is Recipe #102047)

Provided by Galley Wench

Categories     Low Cholesterol

Time 25m

Yield 6 serving(s)

Number Of Ingredients 12

2 tablespoons brown sugar
1 teaspoon salt
2 teaspoons ground black pepper
2 bay leaves
1 cup dry white wine
2 lbs salmon fillets
1 large sweet onion, sliced very thinly
6 golden potatoes, peeled and partially cooked
1 sweet red pepper, seeded and sliced
1 tablespoon alder wood chips (I've also used cherry wood)
lemon, and
parsley sprig (to garnish)

Steps:

  • In a shallow glass dish (or zip lock bag) combine the sugar, salt, pepper, bay leaves, and wine.
  • Stir to dissolve the sugar and salt.
  • Place the salmon fillet in the solution; cover and refrigerate for at least 2 hours, preferably overnight.
  • Remove and blot the marinade from the salmon.
  • Place the Alder wood chips in the base of the smoker and position the drip pan and rack.
  • Line the drip pan with aluminum foil and pour about 1/3 cup of the marinade into the drip pan.
  • Lay the fillet on the smoker rack, skin side down, and cover with several layers of the sliced sweet onions, placing potatoes and peppers around the salmon.
  • Cover and smoke in the usual fashion for 15 - 18 minutes.
  • Transfer the fish and sliced onions carefully with a spatula to a serving platter.
  • Garnish with the parsley and lemon wedges.
  • Serve with your favorite dill sauce (my favorite Recipe #102047).

Smoked White Salmon Chili image

Provided by D. Durand Worthey

Number Of Ingredients 27

* 1 tbsp olive oil
* 1 cup onions
* 2 tbsp unsalted butter
* 1/3 cup celery sliced
* 2 large cloves of garlic chopped
* 2 tbsp unsalted butter
* 1 tbsp freshly squeezed lime juice
* 1/2 tsp smoky sea salt or sea salt (Kosher salt works too)
* 1/4 tsp freshly cracked black peppercorns to taste
* 1/2 tsp smoked paprika
* 1/2 tsp garlic granules
* 1/2 tsp Aleppo pepper or red pepper flakes
* 1 tsp chorizo seasoning mix or mild chili powder
* 3 cups unsalted chicken stock
* 4 cans cannellini beans drained
* 1 can whole kernel sweet corn
* 1 cup heavy cream
* 1/2 cup sour cream
* 1 1/2 pounds grilled cooked salmon broken apart
* 2 tbsp freshly squeezed lime juice
*If you want a little more heat, try adding grilled jalapeño peppers, serrano, ancho, scotch bonnets, or habanero peppers.
For the topping
* 2 tbsp freshly squeezed lime juice
* Chopped cilantro
* Fresh green onions
* Slivers of red bell pepper
* Grated cheese

Steps:

  • First, remove the lid from the Instant Pot, select the Saute setting, and add the extra virgin olive oil. When the oil is hot, add the chopped onions and sauté for 3-4 minutes until the onions have started to soften. Add butter, smoked sea salt, celery, and garlic and continue to sauté for a few more minutes. Pour in the low-sodium chicken stock and a splash, about an ounce, of the freshly squeezed lime juice and stir. Add in the freshly cracked black peppercorns, smoked paprika, garlic granules, chorizo seasoning mix, and dried Aleppo peppers (or dried red pepper flakes) continue to stir. Next, stir in the heavy cream and sour cream. Then add the cannellini beans and whole kernel sweet corn and continue to stir. Adjust the Instant Pot to the Keep Warm setting. Remove the salmon from the oven, break the salmon into smaller pieces, and then add them to the smoked white chili. Top with a squeeze of fresh lime juice and add chopped cilantro. Serve with toppings like fresh green onion, slivers of red bell pepper, and grated cheese; we used Parmigiano-Reggiano.
