This refreshing mix of fresh fruit and delicate orange blossom water makes a sophisticated soft drink to serve at a dinner party

½ watermelon (about 2.5kg/5lb 8oz unprepared weight, or 1.3kg/3lb, deseeded flesh only)
4 tsp golden caster sugar , or to taste
juice 2-3 lemons
2 tsp orange blossom water
crushed ice , to serve

Steps:

  • Cut up the watermelon and remove the skin and most of the seeds. Put in a food processor with the sugar, lemon juice and orange blossom water and blitz together, adding more sugar to taste.
  • Strain through a sieve to remove the remaining seeds, then pour into a jug. Add a few spoonfuls of crushed ice, pour into glasses, and serve.

This recipe started out as the Lemon Blossoms from "Paula Deen & Friends" cookbook. I didn't have the lemon or lemon pudding called for so I improvised. A word of warning - do not try this with a hand mixer. The dough is unbelievably stiff and I nearly burned out the motor on mine. The finished cupcakes are light as a feather though. I was truly amazed that such a thick batter would bake up so light.

1 (18 1/2 ounce) package orange cake mix
1 (3 1/2 ounce) package vanilla instant pudding mix
4 large eggs
3/4 cup vegetable oil
4 cups confectioners' sugar
1/3 cup water
3 tablespoons vegetable oil
1 -2 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees. Spray miniature muffin tins with cooking spray.
  • Combine the cake mix, pudding mix, eggs and oil and blend with a stand mixer for about 2 minutes or until smooth.
  • Pour about a tablespoon of batter into each spot in the muffin tin. I used a mini ice cream scoop about the size of a melon baller.
  • Bake for about 12 minutes. Remove from pan immediately and set aside to cool slightly.
  • Sift the confectioner's sugar into a mixing bowl. Add the water, oil and vanilla and mix until smooth.
  • Dip the warm cupcakes into the glaze and place them on a wire rack with waxed paper underneath to cool and for the glaze to set. This could take a while especially if it's humid.
  • When the glaze has set completely the cupcakes can be stored in an airtight container until it's time to serve them.

1 cup sugar
3 whole star anise*
2 teaspoons orange flower water**
6 large oranges
Fresh mint sprigs
*A brown star-shaped seed pod found at Asian markets and specialty food stores; nice as a garnish, but it should not be eaten.
**A flavoring extract available at liquor stores and in the liquor or specialty foods section of some supermarkets.

Steps:

  • Combine first 3 ingredients in medium saucepan. Stir over medium heat until sugar dissolves. Simmer until liquid is reduced to generous 1 cup, about 15 minutes. Remove from heat and stir in orange flower water. Cover; chill until cold. Discard anise. (Can be prepared 1 day ahead.)
  • Using small knife, cut off peel and white pith from oranges. Slice oranges crosswise into 1/3-inch-thick rounds. Set in bowls. Spoon syrup over. Top with mint.

1 1/4 cups all-purpose flour
1/3 cup packed golden brown sugar
1/2 teaspoon salt
1/2 cup chilled unsalted butter, diced

1 teaspoon vanilla extract
3 large seedless oranges, unpeeled
2 cups sugar
1 3/4 cups water
2 tablespoons light corn syrup
1 1/2 cups milk (do not use low-fat or nonfat)
1 1/4 teaspoons unflavored gelatin
1/2 cup sugar
2 large eggs
1 large egg yolk
3 tablespoons all-purpose flour
1 tablespoon freshly grated orange zest
1 teaspoon vanilla extract

Steps:

  • Crust:.
  • Butter 11-inch diameter tart pan with removable bottom.
  • Finely grind nuts with flour, sugar and salt in processor. Add butter and process using on/off turns until mixture resembles coarse meal.
  • Add water and vanilla; process until moist clumps form. Gather dough into ball; flatten into disk. Wrap in plastic; freeze until firm, about 15 minutes.
  • Roll out dough on floured surfact to 14-inch round. Transfer to prepared pan. Press dough gently into pan. Trim dough, leaving 1/2-inch overhange. Fold in overhange, forming double-thick sides.
  • Freeze until firm, about 20 minutes. (Can be prepared 1 month ahead. Wrap tightly; keep frozen).
  • Oranges:.
  • Using serrated knife, cut ends from oranges. Slice oranges into 1/8-inch thick rounds.
  • Combine sugar, water and corn syrup in heavy large skillet. Stir over medium heat until sugar dissolves.
  • Place oranges in syrup; simmer 7 minutes. Turn top slices over; simmer until tender, occasionally pressing to submerge oranges in syrup, about 8 minutes longer. Cool 1 hour.
  • Line baking sheet with waxed paper. Using slotted spoon, transfer orange slices to prepared sheet, arranging in single layer.
  • Boil syrup in skillet until reduced to 1 cup, about 3 minutes.
  • Cover oranges and syrup separately; chill until cold, at least 3 hours and up to 3 days.
  • Position rack in lowest third of oven and preheat to 400°F.
  • Line crust with foil. Fill with dried beans or pie weights. Bake until sides are set, about 15 minutes.
  • Reduce oven temperature to 350°F Remove beans and foil; continue baking until brown, piercing with toothpick if crust bubles, about 20 minutes. Cool.
  • Filling:.
  • Place 1/4 cup milk in heavy small saucepan. Sprinkle gelatin evenly over and let stand 10 minutes to soften. Stir over low heat until gelatin dissolves; set aside.
  • Whisk sugar, eggs, yolk and flour in medium bowl until blended.
  • Bring 1 1/4 cups milk to boil in heavy medium saucepan over medium-high heat. Gradually whisk hot milk into egg mixture.
  • Return mixture to same saucepan; stir until mixture boils and thickens, about 6 minutes. Remove from heat.
  • Add orange zest, vanilla and gelatin mixture; stir until blended. Chill until cool but not set, stirring occasionally, about 20 minutes.
  • Spoon filling into crust, spreading evenly. Cover and chill until filling is cold and set, at least 3 hours or overnight.
  • Cut orange slices in half; pat dry with paper towels. Arrange orange slices in overlapping circles on filling. If orange syrup is very thick, warm briefly over low heat. Brush oranges iwth enough syrup to glaze.

  • Spread the salt in a flat dish. Dampen a paper towel with some orange flower water and run it along the rim of a margarita glass. Press the rim into the salt to coat. Strain the margarita into the glass. Cut an "X" into the bottom of the orange almost all the way through, leaving the stem end intact. Slide the orange onto the side of the glass as garnish, and serve.
  • Cook the honey and water in a small saucepan over medium heat, stirring occasionally, until the honey is melted, about 2 minutes. Let cool completely. (The honey syrup can be refrigerated for up to a month.)
