1/3 cup orange marmalade
2 tablespoons finely chopped onion
2 tablespoons canola oil
1 tablespoon lemon juice
1 to 1-1/2 teaspoons ground mustard
3 to 5 drops hot pepper sauce
1 boneless fully cooked ham slice (1-1/2 pounds and 3/4 inch thick)

Steps:

  • In a small bowl, combine the first seven ingredients. Pour half of the sauce into a microwave-safe bowl; set aside. , Grill ham, covered, over indirect heat for 3-4 minutes, on each side, basting occasionally with the remaining sauce. , Grill 6-8 minutes longer or until heated through, turning and basting occasionally. Cover and microwave reserved sauce on high for 30 seconds or until heated through. Serve with ham.

1/4 cup Dijon mustard
2 tbsp BBQ rub
12 oz fruit beer, soda or juice
Cowboy wood chips, pellets or charcoal
1/2 cup orange marmalade
1/4 cup Dijon mustard
2 tbsp soy sauce
hot sauce (to taste)

Steps:

  • Heat Grill: Heat your pellet, gas or charcoal grill to 250F degrees with an indirect heat zone. If using a gas grill, add Cowboy wood chips to a smoke box to add smoke flavor. (Scroll up to see details on how to cook ham on different types of grills.)
  • Season: Place the ham in an aluminum half pan. Slather it with mustard. Coat with rub. Pour the beer, soda or juice into the pan around the ham.
  • Grill: Place the ham on the grill over indirect heat and smoke for 3 hours. Baste with pan drippings every 30-60 minutes.
  • Glaze: In a medium bowl, stir together the glaze ingredients. Pour the glaze onto the ham and continue cooking for 30 minutes.
  • Serve: Remove the ham from the grill. Slice and serve.

1 fully cooked ham (I used Hormel Cure 81 bone-in ham Cherrywood flavor)
1/2 cup orange marmalade
2 Tablespoon dijon mustard
juice of 1 orange

Steps:

  • Heat oven to 275 F. Let ham rest to room temperature. Mix marmalade, dijon mustard and orange juice in a small bowl.
  • Place ham face-down in a foil-lined roasting pan. Brush on some of the glaze.
  • Add 1 cup water to the pan. Cover the baking pan securely with foil or cover with roasting pan lid.
  • Bake according to package directions (I cooked mine for 12 minutes per pound) until the ham is warm, or until the internal temperature of the ham is about 120-130 F, brushing on more glaze halfway through the baking time.
  • Cover with aluminum foil and let rest for 15 minutes before serving. Serve ham with remaining glaze to drizzle over slices.

8 kilogram cooked ham on the bone
30 whole cloves (approximately)
1/2 cup honey
2 tablespoon grainy mustard
1/4 cup orange juice
1/4 cup redcurrant jelly or quince paste
1/4 cup brown sugar

Steps:

  • Preheat a hooded barbecue to 180°C (or follow the barbecue manufacturer's directions for cooking ham).
  • Use a small, sharp knife to cut through the rind at the shank end of the ham. Starting at the bottom of the ham, gently lift off the rind by running your fingers between the rind and the fat. When you reach the scored shank end, gently pull off the rind.
  • Score the fat in a shallow diamond pattern and press a clove into the centre of each diamond.
  • Place the ham on a rack in a large roasting dish. Pour half a cup of water into the dish.
  • Combine the honey, grainy mustard, orange juice, redcurrant jelly or quince paste, and brown sugar in a small saucepan. Cook over a low heat, stirring, until the sugar, paste or jelly have dissolved.
  • Brush half of the glaze over the ham. Place the roasting dish with the ham in the centre of the barbecue, ensuring that only the outside burners are on.
  • Cook at 180°C with the lid on for 45-60 minutes until the ham is golden brown. Brush with extra glaze frequently. If some areas of the ham brown more quickly than others, cover these with small pieces of foil. Add extra water as necessary to the roasting dish.
  • Serve the ham warm or cold. Cover the leftover ham with a clean, damp tea towel and refrigerate. Do not use plastic wrap.

  • In medium bowl, mix orange juice, honey, chives and oil. Make cuts on top of ham about 1/2 inch apart and 1/4 inch deep in diamond pattern. Place ham in large resealable food-storage plastic bag. Pour orange juice mixture over ham; turn to coat. Refrigerate at least 4 hours but no longer than 24 hours, turning occasionally.

6 oz Frozen Orange Juice Concentrate, thawed
1/2 c Honey
2 tsp Brown Sugar

Steps:

  • Place your ham in a roasting pan with 1/4 cup of water. Cover with foil.
  • Preheat your oven according to the instructions that come with your ham. In this case it was 275ºF for my ham.
  • Calculate cooking time. This will depend on the size of your ham. Recommended cooking times will be between 15 to 20 minutes per pound.
  • Place the ham into the oven and bake.
  • Mix your glaze - the orange juice concentrate, honey and brown sugar.
  • During the last 45 minutes of cooking, increase the oven temperature to 350°F. Remove the foil from the ham, it's no longer needed.
  • Apply a layer of glaze mixture and return the ham to the oven.
  • Every 10-15 minutes apply another coat of glaze until the cooking time ends.
  • Serve at room temperature

cloves whole
1 cup orange marmalade (or plum jam (even strawberry jam, you can use your favorite))
1/2 cup stone ground mustard
1/2 cup ginger ale (Sprite or 7-up, use a clear soda)
2-3 tbsp Sriracha Sauce

Steps:

  • Preheat the oven to 325 degrees
  • Place the ham in a heavy bottom pan. Using a sharp knife, score the ham first one way, then the other to make a diamond pattern in the skin. Poke the cloves into each diamond all over the ham. Cover tightly with tin foil and put in the preheated oven for 1 1/2 hours.
  • While it is baking, prepare the glaze. Combine the remaining ingredients in a sauce pan on the stove. Heat over medium heat, stirring until all of the ingredients are well combined, reduce heat to low and simmer for 10 minutes. Set aside when complete.
  • After 1 1/2 hours, remove the ham from the oven and remove the foil. Baste it with the sauce. Return it to the oven uncovered.
  • Baste every 15 minutes over the next hour, three or four times. You'll bake it for about another hour until it is heated thru. It will be glossy and gorgeous and oh so delicious!
  • If desired, finish it under the broiler for 3-5 minutes to caramlize the glaze.
  • Remove it from the oven. While it's resting remove the cloves, cover with foil and allow to rest for 15 minutes.
  • Now here's the hard part.....just slice and eat!

1/4 cup brown sugar
2 tablespoons lemon juice
1 teaspoon onion salt

2 slices smoked ham

  • Combine first 6 ingredients in a medium saucepan, stirring well and bring to a boil.

1 reduced-sodium semi-boneless fully cooked ham (6 pounds)
1 cup orange juice
1 cup reduced-sodium chicken broth
1/4 teaspoon ground cloves
GLAZE:
1 cup reduced-sugar orange marmalade
1 tablespoon lemon juice
1 tablespoon Worcestershire sauce
