¾ pound ground pork sausage
1 tablespoon butter
4 green onions, chopped
½ pound fresh mushrooms, sliced
10 eggs, beaten
1 (16 ounce) container low-fat cottage cheese
1 pound Monterey Jack cheese, shredded
2 (4 ounce) cans diced green chile peppers, drained
1 cup all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
⅓ cup butter, melted

Steps:

  • Place sausage in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, and set aside. Melt butter in skillet, and cook and stir the green onions and mushrooms until tender.
  • In a large bowl, mix the eggs, cottage cheese, Monterey Jack cheese, and chiles. Stir in the sausage, green onions, and mushrooms. Cover, and refrigerate overnight.
  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
  • In a bowl, sift together the flour, baking powder, and salt. Blend in the melted butter. Stir the flour mixture into the egg mixture. Pour into the prepared baking dish.
  • Bake 40 to 50 minutes in the preheated oven, or until lightly brown. Let stand 10 minutes before serving.

1 medium onion (- diced)
1 medium green pepper (- diced)
8 large eggs
2 cups milk
1/2 teaspoon sea salt salt
1/2 teaspoon ground black pepper
2 cups big croutons
1 1/2 cups shredded cheddar cheese

Steps:

  • Sautee the onions and green peppers in a large skillet on medium-high heat for about 3 minutes, until they start to soften. Add in the sausage and cook until the sausage meat is cooked through, breaking the sausage into about blueberry-sized pieces.
  • Whisk the eggs, milk, salt and ground black pepper together in a large bowl. Set aside.
  • Lightly oil a 9x13 baking dish. Layer the croutons evenly on the bottom. Layer the sausage mix on top of the croutons. Evenly layer the grated cheese on top of the sausage mix. Gently pour the egg mixture on top. Cover and let it sit in the refrigerator overnight, at least 8 hours.
  • In the morning, preheat the oven to 325°/160°C. Remove the cover and place the casserole in the middle of the oven. Bake for 30 minutes. Turn the heat up to 350°C/176°C. Bake for an additional 20-30 minutes, until the egg is set. To check, insert a knife in the middle of the casserole and it should come out clean. If the casserole is browning too quickly, cover with a foil for the last bit of baking time.
  • Let the casserole sit for 10 minutes before cutting and serving.

8 eggs, beaten

  • Place sausage in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble, and set aside.

8 ounces sweet Italian sausage
2 shallots, finely chopped
10 ounces frozen chopped spinach, thawed
1 1/2 ounces (about 1/3 cup) chopped sun-dried tomatoes, plus 8 thin strips for garnish
10 large eggs
1/2 cup whole milk
Kosher salt and freshly ground black pepper
2 ounces goat cheese, cut into 7 oblong pieces and 1 circular piece

Steps:

  • Preheat the oven to 325 degrees F. Grease a 9-inch deep-dish pie plate with butter.
  • Heat the butter in a large skillet over medium heat. Remove the sausage from its casing and place in the skillet. Cook, breaking apart the sausage with a wooden spoon, until cooked through and fully browned, about 10 minutes. Remove to a paper-towel-lined tray and set aside.
  • Add the shallots to the same pan and cook until soft, about 2 minutes. Add the spinach, 1/4 teaspoon salt and 1/4 teaspoon pepper and cook until the spinach is tender and its water has evaporated, 5 to 7 minutes. Add the chopped sun-dried tomatoes and cook until heated through.
  • Add the sausage to the prepared pie plate and then top with cooked spinach mixture.
  • In a medium bowl, beat together the eggs, milk, 1/4 teaspoon salt and 1/4 teaspoon pepper until frothy, about 1 minute. Pour the egg mixture over the spinach and sausage. 1 pound fresh bulk pork sausage with sage

2 cups half-and-half

Steps:

  • Cut the bread into 1-inch cubes and spread in the bottom of a greased 9- by 13- by 2- inch casserole dish.
  • In a medium skillet, brown the sausage over medium heat until fully cooked and no longer pink. Remove the sausage with a slotted spoon to drain the fat. I must confess, I had some Texas Toast in my freezer that I defrosted and used in place of buttered bread (it probably would have worked frozen too). I used regular milk in place of the cream. 1 cup whipping cream

1 bell pepper, (diced)
1 jalapeno, (diced)
20 eggs, (beaten)
1 teaspoon pepper
1 teaspoon garlic salt
8 ounces pepper jack cheese, (shredded)

Steps:

  • Preheat the oven to 350°. Prepare a 13x9 baking dish by spraying with nonstick cooking spray.
  • Add frozen potato rounds to the prepared baking dish. Set aside.
  • In a large frying pan, add Italian sausage, onions, bell peppers, and jalapeno. Cook until the sausage is no longer pink and the vegetables are tender.
  • In a large bowl, whisk eggs and add pepper and garlic salt. Whisk until well combined.
  • Spoon cooked sausage and veggies over the potato rounds and spread evenly.
  • Next, pour beaten eggs into the dish over the sausage and potatoes and sprinkle with shredded cheese.
  • Bake in the preheated oven for 50-55 minutes or until the egg is cooked through and cheese is melted and golden brown.

  • Brown sausage in skillet. Drain.
  • Spread sausage in bottom of 11 X 7 X 2" baking dish.
  • Combine remaining ingredients and pour over sausage.
  • Bake at 350 F for 45 minutes.
