RED ONION SALAD DRESSING

Red Onion Salad Dressing image

I love to order salad with red onion when we eat out, but the red onions I buy at the store are never as sweet and mild. That prompted me to come up with this recipe where the onion marinates in the dressing to calm it down a bit.

Provided by puppitypup

Categories     Salad Dressings

Time 5m

Yield 1 jar

Number Of Ingredients 8

1/4 cup olive oil
1 1/2 teaspoons lemon juice
1 teaspoon italian seasoning
1 pinch kosher salt
2 pinches fresh ground pepper
1/2 teaspoon minced garlic
3 tablespoons parmesan cheese
1/4 red onion, sliced thinly (optional)

Steps:

  • MAKE AHEAD: Mix all ingredients except onion in a jar and shake, then add onion, stir and store in fridge.
  • OPTIONAL: If you prefer, you can saute the onion slightly before mixing up the salad dressing.
  • WHEN NEEDED: Either take out of fridge an hour ahead or place in microwave for 10 seconds to loosen up.
  • TO SERVE: Stir dressing, then with a slotted spoon, scoop out some of the onion and place on the salad. Seems like that carries along with it enough dressing for tossing the salad. Amount of onions scooped will depend on the size of the salad.
  • LATER: If all the onion gets used up before the dressing is gone, just add more onion and cheese.

CREAMY ONION SALAD

Creamy Onion Salad image

Posted this recipe as a request on the message board. I found the recipe in the "Blueberries and Polar Bears" cookbook. The recipe suggests serving this with "beef or Jalaneo Goose, or on top of a beef sandwich the next day!" I guessed on the serving size, because it wasn't given.

Provided by Kim D.

Categories     Vegetable

Time 8h

Yield 12 serving(s)

Number Of Ingredients 7

6 Spanish onions (whatever kind you have on hand)
1/2 cup vinegar
1/2 cup water
3/4 cup sugar
2 teaspoons salt
1 1/4 cups mayonnaise or 1 1/4 cups similar salad dressing
2 tablespoons celery seeds

Steps:

  • Slice the onions very thin and place them in a plastic or glass dish.
  • Combine the vinegar, water, sugar, and salt.
  • Mix well to dissolve the sugar and salt.
  • Pour over the sliced onions and mix well.
  • Put a plate on top of the onions and set a weight on it.
  • A plastic bottle of oil and vinegar works well.
  • Let the onions sit on the counter all day- overnight is best.
  • Drain the onions (You will wonder where all the liquid came from!).
  • Combine the dressing and celery seed and toss with onions.
  • Put in a serving bowl and serve.

GERMAN ONION SALAD DRESSING

German Onion Salad Dressing image

Ok, I can't verify that this German. All I know is that my Grandfather visited us when we were living there and this is one of the recipes he hauled home. Prepare ahead since it needs to sit for a couple of days. I love this stuff. Zaar World Tour 05

Provided by Amis227

Categories     Onions

Time P3DT30m

Yield 10 serving(s)

Number Of Ingredients 2

3 medium onions
3 cups sugar

Steps:

  • Peel and wash your onions.
  • Thinly slice them.
  • Put them in a large bowl, and cover with the sugar.
  • Cover it tightly with a lid or plastic wrap and let sit for a 2 to 3 days.
  • Decant the resulting liquid into a clean jar or bottle (I use a recycled wishbone salad dressing bottle).
  • Discard the onions and sugar (or use in a recipe if you can find one suitable).
  • Repeat this until you get the amount of desired liquid.
  • You can also add other spices, etc if you wish.
  • Serve cold over salad. Enjoy.
  • The serving size is guesstimated so you may have more or less.
  • Note: This all depends on the sizes of your onions and your sweet tooth. You can add sugar but don't decrease it. If you want to use larger onions, add 1/2 c to 1 c more sugar per onion depending on taste. If your large onions happen to be walla walla's or vidalias wich are both naturally very sweet, don't add more than the reccomended amount of sugar unless you want it super sweet.

SWEET ONION DRESSING

The dressing was a crowd-pleasing sweet onion recipe that we'd used at Old Lahaina Luau. It's made with a fresh, uncooked sweet onion, that gets puréed with cider vinegar, sugar, Dijon mustard, and oil. Try it on our Maui Kale Salad with cabbage, spicy peanuts, and potato chips.
