SIMPLE PERFECT ENCHILADAS

- In a saucepan over medium-low heat, combine the canola oil and flour. Whisk together and allow to bubble for 1 minute. Pour in the red sauce, chicken broth, salt and pepper. Bring to a boil. Reduce the heat and simmer while you prepare the other ingredients.
- While the sauce is simmering, brown the ground beef with the onions in a large skillet over medium-high heat. Drain the fat, add the salt and stir to combine. Turn off the heat and set aside.
- In a small skillet over medium heat, heat some canola oil. Lightly fry the tortillas just until soft. Do not crisp. Drain on a paper towel-lined plate. Repeat until all the tortillas have been fried.
- Preheat the oven to 350 degrees F.
- Spread 1/2 cup of the sauce in the bottom of a 9- by 13-inch baking dish. Next, one at a time, dip each tortilla into the sauce. Set the sauce-soaked tortilla on a plate. Place on some of the meat mixture, chilies, green onions and black olives. Top with a generous portion of grated Cheddar. Roll up the tortilla to contain the filling inside.
- Place the tortilla seam side down in the baking dish. Repeat with the rest of the tortillas and pour the remaining sauce over the top. End with a generous sprinkling of cheese and any other bits of chiles, green onions or olives you have left over from the filling.
- Bake the enchiladas for 20 minutes, or until bubbly. Sprinkle chopped cilantro over the top and serve.
EASY GREEN CHILE ENCHILADAS
Steps:
- In a small skillet, saute the onions with the butter over medium-low heat until the onions are nice and golden brown.
- In a small saucepan, combine the green enchilada sauce with the green chilies and heat until very warm.
- In the microwave or in the oven (on a baking sheet), melt some cheese all over the top of each tortilla so that it covers most of the surface area.
- To serve, stack three cheesy tortillas on top of one another. Spoon green sauce over the top and add store-bought salsa, sour cream and cilantro as needed. Delish and so, so easy!

Steps:
- Place all ingredients in a stainless bowl and mix well. Transfer to a roasting pan and top with a tight lid.
- Cook for 3 1/2 to 4 hours in a 325 degree oven.
- Let cool and shred using 2 forks.
- Strain juice that the meat was cooked in skim off fat.
- Add about 1 1/2 cups to shredded meat.
- Mix in green chilies as well.
- Assembling Green Chile Barbacoa Enchiladas:.
- Fry tortillas to soften; place on oval plate.
- Put barbacoa in center.
- Put 1 oz. of jack cheese on each tortilla with 2 oz. of barbacoa and 1/2 oz. of green chile sauce.
- Roll tortillas and leave in center of plate.
- Ladle 2 oz. green chile sauce on top of enchiladas and sprinkle beans and enchiladas with cotija cheese.
- Put under broiler to melt cheese; when cheese melts top enchiladas with iceberg, dollop of sour cream and put pickled chiles in center.

Steps:
- Macaroni and Cheese Sauce:.
- Place cream in a saucepan. On medium heat, using a wire whisk, reduce till one-fourth has gone and slightly thickened.
- Add garlic, blue cheese and chipotle.
- Melt for approximately 5 minutes.
- Elbow Macaroni Blanched:.
- Add water to a stockpot, place on high flame and bring to a boil for one minute. Add salt.
- Boil water for three minutes then add macaroni and stir every minute from bottom.
- Cook for 10-12 minutes or until al dente.
- Using a colander place macaroni and drain well then place macaroni in ice cold water to shock.
- Z'Tejas Macaroni and Chicken:.
- Salt and pepper chicken breast and place butter down on skillet.
- Place marinated chicken skin side down and place in large cast iron skillet on top.
- Sear for approximately 4 minutes till crispy.
- Turn over on grill and cook till done then turn on skin side down for approximately one minute.
- Before slicing, removing cartilage and slice in 6 pieces.
- Using a 12-inch cast iron or skillet, add mac and cheese sauce, jack and cheddar mix.
- Heat up till cheese melts approximately 1-2 minutes.
- Add macaroni to sauce.
- Top with jack and cheddar cheese mix.
- Top with bacon gratin (and place under broiler for approximately 2 minutes until golden brown and cheese is melted.
- Arrange sliced chicken in a star shape method and place green chiles in center on top between chicken.

Steps:
- Place tomatoes and onions under broiler for about 10 minutes and let them get really black.
- Add blackened tomatoes, onions, garlic, chilies and water to small sauce pan over medium heat.
- Cook, stirring occasionally until the vegetables are soft.
- Remove from heat and let cool.
- Puree in blender until slightly chunky.
- Salt and pepper to taste.
- Serve with crispy tortilla chips.

- Cooking Day.
- Enchilada sauce: Melt butter in medium saucepan, saute onion and garlic in butter until tender. Add tomato sauce, chiles, sugar, cumin, salt, oregano and basil. Simmer on stovetop about 20 minutes, until heated though and well blended.
- Fill each enchilada with 1/3 cup chicken and sprinkle with 2 T cheese, roll and place seam side down in lined 9x13. Blend sour cream with enchilada sauce and pour over enchiladas. sprinkle with remaining cheese.
- Serving Day.
- Thaw completely. Bake uncovered at 350 for 40-50 minutes.
