Steps:
- Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- Heat a large skillet over medium-high heat and stir in the sausage. Cook and stir until the sausage is crumbly, evenly browned, and no longer pink, about 5 minutes. Drain and discard any excess grease. Stir in the hash brown potatoes, cooking and stirring until potatoes are browned, about 5 minutes more.
- Line the bottom of the prepared baking dish with a layer of buttermilk biscuits, splitting the biscuits in half to completely cover the dish. Spread the sausage and hash brown mixture evenly over the biscuits, and sprinkle the Mexican cheese on top. Whisk together the eggs and milk in a bowl, and pour over the cheese.
- Bake in the preheated oven until the eggs set, about 25 minutes.

Steps:
- Heat a large nonstick skillet over medium-high heat. Add ground beef and onion to the hot skillet; cook and stir until browned and crumbly, 5 to 7 minutes. Reduce heat to low and stir in diced tomatoes, black beans, picante sauce, and taco seasoning. Simmer until most of the liquid has evaporated, about 20 minutes.
- Meanwhile, preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
- Spread flour tortillas in the prepared baking dish, overlapping to cover the bottom and sides. Spread beef mixture over tortillas, and sprinkle with 3/4 cup Monterey Jack cheese, 3/4 cup pepper Jack cheese, and 1 1/2 cups crushed tortilla chips. Cover with aluminum foil.
- Bake in the preheated oven for 25 minutes. Remove from oven and discard foil. Sprinkle remaining Monterey Jack cheese, pepper Jack cheese, and crushed tortilla chips on top. Place back in the oven and bake, uncovered, until cheese is melted and bubbly, 8 to 10 minutes. Sprinkle with green onion and cilantro and serve with sour cream.

47 FATHER'S DAY DINNER IDEAS FOR AWESOME DADS | BON APPéTIT
From bonappetit.com
Author Joe SevierPublished Jun 4, 2015Estimated Reading Time 7 mins
- Carne Asada Tacos. Tacos are a no-brainer Father’s Day dinner idea. This recipe for carne asada uses grill-friendly flank or skirt steak that gets punchy flavor from a citrusy, cilantro-heavy marinade.
- Spicy Watermelon Onigiri. This one’s for the vegan dads. The playful take on spicy tuna onigiri swaps watermelon (yes, watermelon) for the fish, resulting in a surprising and satisfying bite.
- Sweet and Spicy Bacon Kebabs with Scallion-Ginger Relish. This Sriracha-coated thick-cut bacon, threaded onto skewers and crisped over a grill, is so savory and satisfying.
- Harissa-Roasted Eggplant With Fried Capers. If you’re looking for a vegetarian main to serve Dad, look no further than this roasted eggplant topped with crispy capers.
- Manhattan. The best Father's Day gift might just be a cocktail and some solitude. So, stir Dad a classic Manhattan, serve it in a proper Nick & Nora glass, and leave him be while you prepare the cookout.
- Classic Chicken Pot Pie. Your supermarket is going to do most of the heavy lifting here: Store-bought rotisserie chicken and puff pastry come together to create comfort food that tastes more then semi-homemade.
- French Onion Dip. There’s no shortcut when it comes to caramelized onions—they're going to take time and quite a bit of stirring to achieve that deep golden brown color, which equals depth of flavor—so be patient.
- Smothered Pork Chops in Potlikker Gravy. Southern dads know all about potlikker (or “pot liquor”), the nutrient-dense broth traditionally left behind after boiling greens and beans.
- Swirled No-Churn Thai Tea Ice Cream. Once you have Thai tea mix in your pantry, making this ice cream becomes a (vanilla-y and deeply spiced) breeze. View Recipe.
- Shrimp and Sugar Snap Pea Bánh Xèo (Vietnamese Sizzling Rice Crepes) After doing her research on these turmeric-tinted crepes in Ho Chi Minh City, cookbook author Andrea Ngyuen got creative with the filling in this bánh xèo recipe.
