1 teaspoon plus 2 tablespoons butter, divided
1 medium onion, chopped
3 tablespoons chicken broth
1/4 teaspoon dried tarragon
1/8 teaspoon dried thyme
2 boneless pork loin chops (3/4 inch thick and 5 ounces each)
1/8 teaspoon salt
1/8 teaspoon pepper
3 tablespoons dry bread crumbs
3 tablespoons grated Parmesan cheese

Steps:

  • In a small skillet, melt 1 teaspoon butter over medium heat. Stir in the onion, broth, tarragon and thyme. Bring to a boil. Reduce heat; simmer, uncovered, for 8-10 minutes or until onion is tender. , Meanwhile, sprinkle pork chops with salt and pepper. In another skillet, brown chops over medium heat in 1 tablespoon butter. , Spoon half of the onion mixture into a baking dish coated with cooking spray; top with pork and remaining onion mixture. Combine bread crumbs and Parmesan cheese; sprinkle over top. , Melt remaining butter; drizzle over crumbs. Bake, uncovered, at 400° for 20-25 minutes or until meat juices run clear.

Steps:

  • Rub chops with 2 teaspoons seasoning salt and 1 teaspoon pepper, or to taste.
  • In a skillet, heat oil over medium heat. Brown pork chops on each side. Add the onions and water to the pan. Cover, reduce heat, and simmer for 20 minutes.
  • Turn chops over, and add remaining salt and pepper. Cover, and cook until water evaporates and onions turn light to medium brown. Remove chops from pan, and serve with onions on top.

So I made this up real fast, and boy did he love them. Now he asks for them every time. I do this with boneless and bone-in pork chops. So it doesn't matter what kind you have on hand, just cook them up and enjoy.

2 pork chops
¼ cup all-purpose flour

1/2 cup chopped onion
2 garlic cloves, minced
2 teaspoons chopped fresh rosemary
1 tablespoon balsamic vinegar, divided

  • In a large zip-lock freezer bag, stir together ¼ cup apple juice, 1 tablespoon brown sugar, and mustard; add in pork.
  • Seal bag, and shake well to coat; chill 30 minutes, turning once.
  • Remove pork from marinade, discarding marinade.
  • Pat pork dry; sprinkle with ½ teaspoon salt and ½ teaspoon pepper.
  • Cook pork in hot oil in a big skillet over med-high heat 3 minutes on each side; remove pork from skillet.

This is one of my favorite recipes for pork. I was inpired for the method by an article in a cooking magazine and then made it my own. The flavors are great and it really a fairly easy dish to make. Switch around the herbs and flavors, I always try something new and switch between fresh and dried herbs. I know 2 whole onions sounds like a lot for 4 servings, but they cook down and are the carrier of all of the flavor, after trying it you will probably increase it to 3! Use any kind of breadcrumbs you like, I love to make my own from whole-wheat bread and it tastes great. I truly believe it is a meal your family or friends will love to eat!

2 tablespoons butter, divided
2 medium onions
1/3 cup chicken stock
1 teaspoon fresh thyme
1 teaspoon fresh sage
4 large pork chops
1/2 cup dry breadcrumbs
1/4 cup freshly grated parmesan cheese

Steps:

  • Dice the onions.
  • In a saute pan melt a small dab butter and saute the onion until starting to turn clear. This should take about 10 minutes.
  • Stir in the broth and herbs and bring to a boil and simmer for 5-10 minutes.
  • Meanwhile season the chops with salt {and pepper if desired}. In another saute` pan, brown the chops in a little bit of butter, do not cook through.
  • Prepare a baking dish by spraying with nonstick spray.
  • Put a small bit of the onion mixture down for each of the 4 chops, then place the chops on top. Place the remaining onion mixture on top of each of the chops.
  • Combine the breadcrumbs and Parmesan cheese and sprinkle over top. Melt 1 T. of butter and drizzle over the top. Bake at 400 degrees, uncovered, for 20 minutes or until juices run clear.

6 pork chops, bone in, mine were about 1/2 ' thick (or just under)
1 stalk leek
5 -6 apples, depending size
5 onions
1 shallot
1/4 cup brown sugar
1 teaspoon cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon salt and pepper

Steps:

  • Season your pork chops in salt and pepper, and other herbs and spices of choice :) Set aside.
  • Half and thinly slice onions and cored apples. I leave the skin on, used red delicious.
  • Mix brown sugar, cinnamon and ground ginger in a bowl.
  • Layer half of onions and apples on the bottom of a lightly greased pan, (I use a 9X13 tin foil pan).
  • Sprinkle with some of the brown sugar mixture.
  • Arrange pork chops in a single layer on top.
  • Layer the other half of onions and apples on top of pork chops.
  • Sprinkle the rest of the brown sugar mixture on top of everything.
  • Cover pan in plastic wrap and then cover with aluminum foil, tightly.
  • Bake at 325 for 2.5 hours -- less if you are using boneless or fast fry. Mine were thin, regular pork chops.
  • I used the drippings for gravy using a pork gravy pkg, and served with roasted cauliflower and carrots.
