2 cups Gold Medal™ all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup butter or margarine, softened
1 cup granulated sugar
1 cup packed brown sugar
2 eggs
1 teaspoon vanilla
1 1/2 cups quick-cooking oats
1 teaspoon grated orange peel
1 cup chopped dates
1 cup golden raisins
1 cup flaked coconut
1 cup chopped pecans

Steps:

  • Heat oven to 375°F. Spray cookie sheets with cooking spray.
  • In medium bowl, mix flour, baking powder, baking soda and salt; set aside. In large bowl, beat butter with electric mixer on medium speed until creamy. Gradually add granulated sugar and brown sugar, beating well. Add eggs, one at a time, beating well after each addition. Stir in vanilla. On low speed, gradually beat in flour mixture just until blended.
  • Stir in oats, orange peel, dates, raisins, coconut and pecans. Onto cookie sheets, drop dough by teaspoonfuls 2 inches apart.
  • Bake 8 to 10 minutes. Remove from cookie sheets to cooling racks.

2 cups sifted all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
1 cup butter, softened
1 cup packed brown sugar
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
1 ½ cups rolled oats
1 cup chopped walnuts
1 cup flaked coconut

Steps:

  • Sift flour, baking powder, soda and salt. In a separate bowl cream butter until fluffy; add sugars, eggs and vanilla. Beat well.
  • Add flour mixture to butter mixture. Mix well. Stir in oats, nuts, and coconut. Mix until well blended.
  • Bake on ungreased cookie sheets for 10-12 minutes at 350 degrees F (180 degrees C).

1/2 cup heavy cream
1 tablespoon sugar
4 ounces sour cream
6 ounces homemade mini marshmallows, approximately 3 cups
1 cup clementine orange segments, approximately 6 clementines
1 cup chopped fresh pineapple
1 cup freshly grated coconut
1 cup toasted, chopped pecans
1/2 cup drained maraschino cherries

Steps:

  • Place the cream and sugar into the bowl of a stand mixer with the whisk attachment and whip until stiff peaks are formed. Add the sour cream and whisk to combine. Add the marshmallows, orange, pineapple, coconut, pecans and cherries and stir to combine. Transfer to a glass serving bowl, cover and place in the refrigerator for 2 hours before serving.

1 to 2 tablespoons unrefined coconut oil
1/2 pineapple, peeled, cut into long wedges and cored
1 cup tangerine or orange segments, drained of juice (about 3 tangerines)
1 cup sweetened flaked coconut, such as Baker's Angel Flake, toasted lightly (see Cook's Note)
1 cup mini marshmallows, stale (see Cook's Note)
1 cup sour cream
1/4 teaspoon orange extract
Freshly torn mint leaves, for garnish

Steps:

  • Heat 1 tablespoon coconut oil in a cast-iron skillet over medium heat. Add the pineapple and sear until very dark on one side, 5 to 10 minutes; it should look almost burned. Flip and add the remaining coconut oil if the pan looks dry. Cook on the reverse side until darkly seared, 5 to 10 minutes. Remove the pineapple to a cutting board and let cool before cutting into medium dice.
  • Add the pineapple, tangerines, coconut, marshmallows, sour cream and orange extract to a nonreactive bowl. Fold to combine. Cover with plastic wrap and refrigerate for 1 to 3 hours, until completely cold!!! Serve garnished with mint.

6 oranges, peeled and sliced into 1/4 -inch rounds
1 banana, peeled and thinly sliced
1/2 cup sweetened shredded coconut
1 cup orange juice
3 tablespoons lemon juice
2 tablespoons honey (optional)
Splash of Cointreau (optional)

Steps:

  • In a glass serving bowl, form a single layer of orange slices and top with a few slices of banana. Sprinkle a thin layer of coconut over the top. Repeat layering until all of these ingredients are finished, reserving a tablespoon of the coconut. Stir together the juices and honey, if using, and pour over the fruit. Follow with the Cointreau, if desired, and a final sprinkling of coconut. Serve immediately or cover and refrigerate for several hours.

1 cup butter (salted or unsalted, your choice, at room temperature)
1 cup granulated sugar (SCANT, just shy of 1 cup!)
1 cup light brown sugar (firmly packed)
2 large eggs
1 teaspoon vanilla extract
1/2 teaspoon orange extract
1 1/2 cups rolled oats
1 orange (ZEST only ~ save juice and pulp for another use)
8 ounces crushed pineapple (DRAINED WELL)
1 cup sweetened flaked coconut
1 cup pecans (TOASTED and chopped)

Steps:

  • Preheat oven to 350F with rack in the center.
  • Mix the flour, baking powder, baking soda, and salt together in a medium-sized bowl; set aside.
  • In the bowl of a stand mixer fitted with a paddle attachment, or in a large mixing bowl, using a handheld electric mixer, beat the butter on medium speed until creamy.
  • Add both sugars and beat for about 1 minute, then add the eggs, 1 at a time, beating well after each addition. Beat in the vanilla. Reduce the mixer speed to low and gradually add the flour mixture.
  • Stir in the oats, orange zest, pineapple, coconut, and TOASTED pecans.
  • Drop rounded teaspoonfuls (or small cookie scoop) of batter 2 ½ inches apart onto the baking sheet lined with parchment paper. (Bake one sheet of cookies at a time!).
  • Bake for 8-10 minutes, or until the edges are nicely browned. Transfer to a wire rack to cool completely.
  • Yields (approximately) 40 cookies!

1 cup golden raisin
1/3 cup diced dried apricot
2 3/4 cups all-purpose white flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup unsalted butter, slightly softened
2/3 cup corn oil
2 cups packed light brown sugar
1 large egg
2 1/2 teaspoons vanilla extract
1 pinch of finely grated orange zest (optional)
1 1/2 cups shredded sweetened coconut
1 1/3 cups corn flakes, crushed
1 1/4 cups candied pineapple
1 cup chopped pecans
2/3 cup old fashioned oats, tip, to crush corn flakes, place in plastic bag and squeeze several times

Steps:

  • Preheat oven to 385*.
  • Grease several baking sheets or coat with nonstick spray.
  • In a colander, rinse the raisins and apricots, if using, well under hot water, let stand until well drained; set aside.
  • In a mediumb owl, throughly stir together the flour, baking powder, and salt and set aside.
  • In a large bowl, with electric mixer on low speed, beat together the butter, oil and brown sugar, until blended. Increase the speed to medium and beat until well blended and smooth. Beat in the egg, vanilla and orange zest, if using.
  • Beat or stir in flour mixture until evenly incorporated. Stir in coconut, corn flakes, pineapple, pecans oats, and drained fruit until evenly incorporated.
  • Let dough stand for 10 minutes or until firmed up. if room is very warm refrigerate the dough.
  • Shape portions of the dough into 1 1/2" balls, with lightly greased hands. Place on the baking sheets, spacing about 2 1/2" apart.
  • Using your hand, press down the balls until they are about 1/3" thick.
  • Bake the cookies, one sheet at a time, in upper third of the oven for 10-13 minutes, or until tinged with brown all over and just beginning to firm up in the centers; be careful not to overbake. Reverse the sheet from front to back halfway through baking to ensure even browning.
  • Transfer the sheet to a wire rack and let stand until the cookies firm up.1-2 minutes.
  • Using a spatula, transfer the cookies to wire rack to cool completely. Store in an airtight container for up to 1 week or freeze for up to 1 month.
