CHILI CON CARNE MY MOM'S WAY

Chili Con Carne My Mom's Way image

There were 7 kids in our house growing up and things were tough sometimes. My mom learned to stretch meals. She served us our chili over elbow macaroni. My family eats it that way today. A great way to stretch a great dish.

Number Of Ingredients 10

3 pound(s) lean ground beef
3 large green bell peppers, diced
2 medium onions, diced
3 quart(s) tomatoes, i prefer home canned, broken up
2 teaspoon(s) granulated garlic
1 teaspoon(s) kosher salt
1 teaspoon(s) freshly ground black pepper
1 tablespoon(s) chili powder, hot
4-6 can(s) chili beans in sauce depending on how you like your chili
1 large can pork and beans

Steps:

  • Brown ground beef with bell pepper and onion in a large Dutch Oven. Drain of excess grease.
  • Add tomatoes, seasonings, and undrained beans to meat mixture. Simmer for at least 1 hour to marry flavors.
  • More or less chili powder, just depends on how hot you like your chili. The pork and beans adds just a touch of sweetness. Try it my families way and serve over elbow macaroni. Chili is also great served over rice.

MOM'S CHILE CON CARNE (KID FRIENDLY)

Mom's Chile Con Carne (Kid Friendly) image

I've since learned this is not a true Chile con Carne, but that's what my mom always called it. She made this recipe while I was growing up, and I still make it today for my hubby or family. The heat in this can be adjusted by using more or less Chile powder or adding some cayenne pepper for bigger kids with spicier taste buds.

Time 55m

Yield 6-8 serving(s)

Number Of Ingredients 11

1 1/2 lbs ground beef
1/2 onion (chopped)
2 (15 ounce) cans reduced-sodium diced tomatoes
2 (15 ounce) cans low-sodium kidney beans
1 -2 tablespoon chili powder
1/2 teaspoon salt
1/8 teaspoon pepper
1/2 teaspoon celery salt
1/4 teaspoon cumin
1 teaspoon garlic powder
1 teaspoon oregano

Steps:

  • Cook ground beef and onions over medium heat in a large sauce pan or dutch oven until beef is browned and onions are tender. Drain and return to pan.
  • Add tomatoes and kidney beans (do not drain off juce).
  • Add spices and stir until blended.
  • Bring to boil, then reduce to low heat, cover and simmer for 30-45 minutes.
  • You can taste and adjust spices after 20-30 minutes - add more chile powder or a bit of cayenne pepper if you like it spicier - let it simmer another 20 minutes to blend flavors.
  • Serve in bowls with shredded cheese, onions, sour cream or crackers if desired. I like it with saltines broken into the chile with a little cheese on it.

CHILI CON CARNE

Chili con Carne image

This recipe is based on Emeril's Chili con Carne recipe. It is my most favorite chili recipe so I thought I would share. The best thing about this recipe is that you don't use beans, but if you must have them, they can easily be added.
