SOFRITO RECIPE
The best sofrito recipe is a flavor building puree of fresh peppers, onion, garlic, tomato and herbs widely used in Latin America and Caribbean cooking. It's one of their "secret ingredients" for building dynamite flavor.

Steps:
- Add all of the ingredients to a food processor. Process until you reach the consistency you prefer. Either chunky or very smooth.
- Taste and adjust for salt.
- Store in the refrigerator and uses as needed or freeze in small batches.

ONION-GARLIC PUREE
This aromatic puree is designed to be a base ingredient and is a great way to build flavor and texture without adding fat. It eliminates the need to add a lot of butter and cream to Macaroni and Cheese with a Crusty Crunch (page 174), for instance. You can stir it into just about any sauce or soup for a fat-free flavor punch.

Steps:
- Combine the onion, garlic, and water in a microwave-safe bowl. Season with salt and pepper to taste. Cover the bowl tightly with plastic wrap, and microwave on high for 10 minutes.
- Pour the mixture into a blender and blend until it is completely smooth. Season with salt and pepper to taste, if desired. Store in a covered container in the refrigerator for up to 72 hours.

Steps:
- Combine the first 4 ingredients in a food processor and puree.
- Put the oil in a large saucepan over medium heat and add the rice, stirring for a few minutes.
- Stir in all but 1 tablespoon of the onion mixture, add the salt and pepper, and cook for a couple minutes stirring.
- Add the stock and bring to a boil.
- Cover and turn heat to medium/low cooking until liquid is absorbed, about 15-20 minutes.
- Stir in the reserved tablespoon of the onion mixture and serve.

- Wrap the thyme, bay leaf, peppercorns and crushed pepper in a piece of cheesecloth and secure with kitchen string. In a medium saucepan, melt the butter. Add the onions, garlic, potato, wine and the herb bundle and bring to a simmer over moderately high heat. Reduce the heat to low, cover and cook until the onions are very soft, about 2 1/2 hours.
- Drain the vegetables, reserving the cooking liquid; discard the herb bundle. Transfer the vegetables to a food processor and puree with 2 tablespoons of the cooking liquid and the vinegar. Pass the puree through a sieve, then transfer to a bowl, season with salt and ground black pepper and serve warm.
