CREAMY GRITS WITH BAHAMIAN ROCK LOBSTER



Creamy Grits with Bahamian Rock Lobster image

8 cups (2 quarts) lobster or seafood stock
1/2 teaspoon salt
2 bay leaves
1 1/2 to 2-pounds rock lobster meat
4 to 6 slices bacon, chopped
1 pound mushrooms, cleaned and quartered
1 large onion, finely diced
2 cloves garlic, minced
1 tablespoon chopped fresh thyme leaves
1 (8-ounce) jar sun-dried tomatoes, chopped
2 tablespoons chopped parsley leaves
1 cup white wine
Salt and freshly ground black pepper
1/4 cup butter (1/2 stick)
2 cloves garlic, chopped
1 small bunch scallions or chives, chopped
2 cups corn grits
1 lime, juiced
1/2 cup grated Parmigiano-Reggiano
6 sprigs parsley, for garnish
6 lemon wedges

Steps:

  • In a large saucepan, bring seafood stock to a boil. Once boiling, add salt, bay leaves, and lobster meat. Cook lobster only until it is opaque. Do not overcook lobster as it will get tough. Remove lobster with a slotted spoon and set aside to drain, reserving cooking liquid. Remove bay leaves from liquid and discard.;
  • Melt the butter in a saucepan, and add garlic and scallions, cooking them until they become tender. Stir in the grits, and toast lightly in the pan, then add the cooking liquid from the lobster and simmer until the grits are cooked, about 20 minutes. (The grits should be fluffy.)
  • While the grits are cooking, cook bacon in a large skillet until crispy and golden brown, then remove to paper toweling to drain. Pour off most of the fat from the pan. To the same pan which now has a coating of bacon fat, add the mushrooms, onion, garlic, thyme, tomatoes, and parsley. Cook for 2 to 3 minutes to integrate flavors, then return bacon pieces to pan and add white wine. Let wine reduce by half while grits are cooking.
  • To finish, gently fold lobster, lime juice, and Parmesan into grits. Season with salt and pepper, as needed. Transfer lobster grits to serving dish and spoon mushroom wine sauce around. Garnish with parsley and lemon wedges.

1/2 cup coarsely chopped chorizo
6 tablespoons extra virgin olive oil
1 cup chunked cooked lobster meat
1 cup peas, defrosted if frozen
1/2 pound fettuccine or other long pasta
Crushed red pepper flakes to taste
Coarse salt to taste

Steps:

  • Bring a large pot of water for pasta to a boil, and salt it. Combine chorizo and 2 tablespoons oil in a large skillet; when it begins to brown, add lobster and peas. Cook, stirring occasionally, until hot, then keep warm while you cook pasta.
  • Cook pasta until tender but not mushy, then drain. Toss with chorizo-lobster mixture, remaining olive oil, red pepper flakes and salt. Serve immediately, with Duvel.

2 medium-sized Florida spiny lobster tails (removed from shells and cut into approx. 1-2" pieces)
1 Cup yellow stone ground grits
1 Cup spring water (or equivalent)
3 Cup Whole Milk
1 1/4 tsp sea salt
1/2 Cup gruyere cheese (shredded)
1 Tbsp unsalted butter
1 Tbsp garlic-infused olive oil
1 Cup white onion ( diced)
1 Cup celery ( diced)
1/2 Cup roasted red pepper (diced)
1/2 Shot Appleton Rum (or any high quality rum)
1 Tbsp Creole Seasoning (See Fishmonger Approved Creole Seasoning Mix Recipe)

Steps:

  • Bring water, whole milk and sea salt to boil in medium size saucepan on medium high heat.
  • Gradually whisk in 1 cup stone ground grits and return to low boil stirring occasionally until creamy-thick for 45 minutes or so.
  • Set to warm until ready to serve with lobster. Add gruyere cheese.
  • Bring medium size skillet to medium high heat and add 1 tbsp garlic infused olive oil.
  • Add onion, celery and roasted red peppers. Sautee until the onions begin to turn tender.
  • Add Creole seasoning and blend with vegetables.
  • Add lobster and stir to combine lobster with other ingredients.
  • Continue to cook over medium high heat for 2 minutes or until lobster begins to turn pink.
  • Move all ingredients to one side of skillet and add rum to bare side of skillet.
  • Let rum sizzle for a few seconds and then add butter.
  • Once butter begins to melt, blend all ingredients in pan back together. Stir for another minute or so until lobster is pink.
  • Place grits in bowls and spoon lobster mixture over top. Serve immediately.

Steps:

  • In a large nonstick pan over medium-low heat, saute the bacon and chorizo until the fat is rendered, about 10 minutes. Add the onions and saute until soft, about1 minute. Bring the heat up to medium and add the lobster meat. Cook until the lobster is cooked all the way through , an additional 3 to 5 minutes. Add the cheese, salsa and cilantro. 1/2 teaspoon kosher salt, plus more to taste (not iodized table salt)
1 cup quick-cooking grits (do not use instant)
2 tablespoons unsalted butter
1 lb medium shrimp, peeled and deveined
2 medium garlic cloves, finely chopped
1/2 cup grated manchego cheese
fresh ground black pepper
2 tablespoons finely chopped fresh chives (optional)

Steps:

  • Cook chorizo in a heavy, medium-size skillet over medium heat until it is crisp, 2 or 3 minutes.
  • Transfer chorizo to a paper towel-lined plate to drain.
  • Pour off all but a thin film of fat from the skillet.
  • Bring a quart (4 cups) of water and a half teaspoon salt to boil in a medium saucepan.
  • Slowly stir in grits. Reduce heat to low and cook about 5 minutes, whisking occasionally, until grits are thick and smooth.
  • While grits are cooking, add a tablespoon of the butter to skillet and heat over medium-high until butter is foaming.
  • Cook shrimp in butter until just pink, turning once, about 3-5 minutes.

3 cups chicken broth
2 tablespoons butter
¾ teaspoon salt
1 ½ cups old-fashioned grits
vegetable oil
6 ounces fresh pork chorizo (Mexican style)
¼ cup butter
1 small shallot, minced
1 large uncooked lobster tail, meat removed from shell and cut into 1/2-inch pieces
1 teaspoon chopped garlic
4 ounces shredded Gouda cheese
4 ounces shredded sharp Cheddar cheese
salt and ground black pepper to taste

Steps:

  • Bring water, broth, 2 tablespoons butter, and salt to a boil in a heavy saucepan. Stir in grits. Reduce heat to low. Cover and simmer, stirring occasionally, until water is absorbed and grits are a thick consistency, about 15 minutes. Remove from heat.
  • Preheat oven to 325 degrees F (165 degrees C). Lightly oil a 8x10-inch baking dish.
