CHICKPEA-MUSHROOM BURGERS

Chickpea-Mushroom Burgers image

These 10-ingredient gluten-free and vegan burgers are crisped up like a smash burger in the oven. We would never say that you HAVE to put cheese on them, but let's just say we highly recommend it.

Provided by Chris Morocco

Categories     Chickpea     Mushroom     Quinoa     Olive Oil     Garlic     Paprika     Cheese     Mayonnaise     Mustard     Lettuce     Pickles     Vegan     #cook90     Wheat/Gluten-Free     Vegetarian     Dinner     Winter     Bake     Freeze/Chill     Sunday Stash     miso

Yield Makes 8

Number Of Ingredients 12

1/2 cup red or black quinoa, rinsed
Kosher salt
1/2 cup extra-virgin olive oil, divided, plus more for drizzling
2 (14.5-oz.) cans chickpeas, rinsed, drained
1 tsp. garlic powder
1/2 tsp. smoked paprika
8 oz. crimini mushrooms, trimmed, cut into 1/4" pieces
1/4 cup tahini
1/4 cup white miso
1/4 cup oat flour or all-purpose flour
8 slices sharp cheddar or vegan cheese
Mayonnaise, mustard, hamburger buns, shredded iceberg lettuce, and sliced pickles (for serving; optional)

Steps:

  • Cook quinoa in a large saucepan of lightly salted boiling water, stirring occasionally, until tender, 8-10 minutes. Drain well and let cool at least 10 minutes.
  • Meanwhile, heat 1/4 cup oil in a large nonstick skillet over medium-high. Add chickpeas (make sure they are well drained) and cook, tossing occasionally, until lightly browned, 8-10 minutes. Add garlic powder and paprika and toss a few times to coat. Transfer to a large bowl and let cool about 5 minutes.
  • Add mushrooms, tahini, miso, and 1/4 cup oil to bowl with chickpeas and mash with a potato masher or fork to combine. Add quinoa and flour and mash until mixture holds together when squeezed in your hand. Taste and season with salt if needed. Form into 8 patties and arrange on a parchment-lined rimmed baking sheet. Freeze until firm, about 2 hours. At this point, the patties can be baked, or they can stay frozen up to 3 months. Transfer to resealable freezer bags or layer in an airtight container with sheets of parchment between patties.
  • Preheat oven to 425°. Drizzle frozen patties generously with oil on both sides on a rimmed baking sheet. Bake patties until browned and crisp, 25-30 minutes. Place a slice of cheese on top of each patty and bake until cheese is melted, about 1 minute.
  • Spread mayonnaise and mustard on cut sides of buns (if using). Place burgers on bottom buns. Top with lettuce and pickles (if using) and close up burgers.
  • Do Ahead: Patties can be made 3 months ahead. Transfer to a resealable freezer bag and freeze.

1 garlic clove

SMASHED CABBAGE AND MUSHROOM VEGGIE BURGERS

Smashed Cabbage and Mushroom Veggie Burgers image

This vegetarian burger patty is inspired by a love for caramelized cabbage. It isn't a conventional burger patty made of grains and beans. Instead, cabbage and mushrooms lend a crunchy, slightly meaty texture that is hearty and reminiscent of okonomiyaki, and the patty is held together with chickpea flour. The recipe for the patty is gluten-free and, if you opt for a gluten-free bun (and your soy sauce is gluten-free), the whole dish can become fully gluten-free.

Provided by Sue Li

Categories     dinner, burgers, sandwiches, main course

Time 1h

Yield 6 servings

Number Of Ingredients 14

1 large egg
1 cup/115 grams chickpea flour
1 cup water
1 tablespoon soy sauce
1 garlic clove, grated
1 medium yellow onion, halved and thinly sliced
1/4 small head green cabbage, core removed and leaves thinly shredded (about 3 cups/8 ounces)
1/2 pound mixed mushrooms, such as oyster mushrooms and shiitake mushrooms, tough stems removed, caps torn into bite-size pieces
1 tablespoon sesame seeds
Kosher salt and freshly ground black pepper
1/2 cup vegetable oil
6 Cheddar slices
6 brioche buns
Mayonnaise, sliced tomatoes, bread and butter pickles, and butter lettuce, for serving

Steps:

  • In a large bowl, whisk together egg, chickpea flour, water, soy sauce and garlic. Add onion, cabbage, mushrooms and sesame seeds; season with 1 teaspoon each salt and pepper. Using your hands, massage the cabbage mixture to evenly coat with the chickpea batter. Cover and let the mixture sit at room temperature for 30 minutes. Juices from the vegetables will leach out and make the batter slightly wetter.
  • Divide the cabbage mixture into 6 portions (about 1 1/2 cups each).
  • Heat 1/4 cup vegetable oil in a large cast-iron pan over medium-low heat. Cook 3 portions at a time, coaxing each patty together in the pan and compressing them with a flat spatula. Gently fry the patties, without disturbing them, until one side is golden brown, 7 to 8 minutes. Flip and cook the other side until the golden brown and the vegetables are cooked through, 5 to 7 minutes. Remove the patties from the pan onto a wire rack. Add remaining 1/4 cup oil to the pan and cook the remaining 3 portions.
  • Place a slice of cheese on each cooked vegetable patty and allow the residual heat from the patties to melt the cheese. Serve sandwiched between buns, topping with mayonnaise, tomatoes, pickles and lettuce.

CHICKEN MUSHROOM BURGERS

Chicken Mushroom Burgers image

Provided by James Briscione

Categories     main-dish

Time 30m

Yield 4 servings

Number Of Ingredients 17

3 tablespoons olive oil, plus more as needed
2 cloves garlic, sliced
1 shallot, minced
8 ounces fresh button mushrooms, roughly chopped
1/2 cup white wine or chicken stock
1 pound ground chicken
6 tablespoons dry breadcrumbs
2 large eggs, beaten
2 tablespoons chopped fresh basil
1 teaspoon kosher salt
Freshly ground pepper
1 beefsteak tomato
1/4 cup grated Parmesan
4 burger rolls
3 tablespoons unsalted butter, softened, to spread on the rolls
Dijon mustard, for spreading
Lettuce leaves, for serving

Steps:

  • Heat 2 tablespoons of the olive oil in a large saute pan over medium heat. Add the garlic and shallot and cook, stirring frequently, until softened, about 1 minute. Add the mushrooms and wine or stock and simmer until the pan is completely dry, about 7 minutes. Continue cooking until the mushrooms are lightly browned, about 1 minute. Set aside to cool.
  • Combine the cooled mushroom mixture, ground chicken, breadcrumbs, eggs, basil, salt and some pepper in a large bowl. Blend well and then form into 4 patties. Cook the patties in a saute pan over medium to medium-high heat with the remaining 1 tablespoon olive oil, 4 to 5 minutes per side. (Or cook on the grill, or roast in a 425 degree F oven, until cooked through, about 12 minutes.)
  • Cut the tomato into 4 thick slices and place on a baking sheet. Top each tomato slice with 1 tablespoon of the grated Parmesan. Split the 4 rolls, spread with softened butter and arrange cut-side up on the baking sheet with the tomatoes. Broil until the buns are toasted and the cheese is slightly melted, keeping a careful watch to prevent burning.
  • Spread one side of the toasted buns with Dijon mustard before assembling the burgers and topping with lettuce.

  • Preheat the oven to 230c. Chop the mushrooms into small pieces. You don't need to be very precise about this, but the pieces should be less than 1cm square. Scatter over two baking trays and bake, stirring occasionally, until the mushrooms are browned and there is no water pooled on the tray - about 30 minutes. Set aside in a large bowl.
  • Mix the ground flaxseed with enough water to cover and set aside - it will thicken up while you prepare the rest of the ingredients.
  • Sauté the onions over a medium heat until they start to soften, then add the garlic. Continue to cook until both are softened, translucent and fragrant, about 15 minutes. Add to the mushrooms.
  • In a food processor, pulse the cooked chickpeas to crumbs - it's okay if there's a few whole chickpeas left. Add to the mushroom mixture.

  • Fit the food processor with the metal blade. With the machine running, drop garlic cloves through the feed tubing (this will help to mince them evenly). Scrape down the sides and add the rest of the ingredients (except for the olive oil!) to the work bowl. Pulse a few times until all the ingredients are well combined, but not pureed. Let sit for about 5 minutes (or even longer if you have time); this will help the oats absorb the liquid and stay together when cooking. Shape into four to five even burgers packing the patties tightly.
  • In a large skillet, warm oil over medium heat. Arrange burgers in pan and cook until crisp (about 4-5 minutes). Flip burgers carefully (they are delicate) and cook another 4-5 minutes on the other side adding more oil if necessary. Serve as you would any burger.
