UPSIDE-DOWN APPLE PECAN PIE
I combined two of my favorite recipes to come up with this sensational pie. It won the local apple pie contest a few years ago. I usually make two pies because we always end up wanting more. -Becky Berger, Deerfield, Illinois

- In a food processor, combine the flour, sugar and salt; cover and pulse until blended. Add butter and shortening; pulse until mixture resembles coarse crumbs. While processing, gradually add water until dough forms a ball., Divide dough in half so that one portion is slightly larger than the other; wrap each in plastic wrap. Refrigerate for 45 minutes or until easy to handle., Coat a 9-in. deep-dish pie plate with cooking spray. Line bottom and sides of plate with parchment; coat paper with cooking spray and set aside., In a small bowl, combine brown sugar and butter; stir in pecans. Arrange in the bottom of prepared pie plate with rounded sides of pecans facing down., On a lightly floured surface, roll out larger portion of dough to fit bottom and sides of pie plate. Transfer to plate; press the crust firmly against pecans and sides of pie plate. Trim edge., In a large bowl, combine the sugar, flour, butter and cinnamon. Add apples; toss to coat. Fill crust. Roll out remaining pastry to fit top of pie; place over filling. Trim and seal edges. Cut slits in pastry., Place a foil-lined baking sheet on a rack below the pie to catch any spills. Bake pie at 375° for 60-70 minutes or until golden brown. Carefully loosen the parchment around edge of pie; invert hot pie onto a serving plate. Remove paper. Cool for at least 15 minutes before serving.

MICHAEL'S UPSIDE DOWN APPLE PIE

- To make pastry sift flour into a bowl. Cut cold butter into small pieces with a wire cheese cutter. Add butter to flour and work it into the flour with the back of a fork. Do not use your hands or anything that would add heat to the mixture. When the butter has been worked into the flour as much as possible, add ice water, 1 tablespoon at a time and mix it in with a large spoon. It will probably only take 2 or 3 tablespoons of water to form the dough. As soon as the dough can be rolled into a ball in the bowl put it in plastic wrap and place it in the refrigerator.
- When the dough has been in the refrigerator for 1/2 hour, start to coat the bottom of the pie pan. I prefer to use the deepest pie pan I can find. Spread 1 tablespoon of butter over the bottom and sides of the pie pan. Depending on the size of the pan you might have to use more or less, but I like my coating to be generous. Then sprinkle 1/3 cup of brown sugar over the butter, with a light coating covering the bottom and sides. As with the butter you may have to use more or less depending on pan size. Then place the pecan nut halves, flat side up, on the bottom and sides of the pan. I start in the middle with 1 nut and then put the rest in circles around the center, closely spaced. Finish with a layer of nuts covering the side of the pan. The entire bottom and sides should be covered with nuts. Next take the dough out of the refrigerator, cut the ball in 1/2, wrap 1/2 in the plastic wrap and put it back in the refrigerator. Roll out the other 1/2 taking care not to handle the dough too much. Place the rolled out dough in the pie pan over the pecan nut coating, and trim the edges. Cover with plastic wrap and put in the refrigerator.
- Preheat the oven to 450 degrees F.
- To make the filling place 1/4 cup of butter and 1 cup of sugar in a small pan and cook over medium heat. When the butter and sugar have mixed into a liquid form add 1/2 vanilla bean. Stir the mixture constantly until it starts to turn brownish, or caramelized. Then remove it from the heat. Fill a large bowl with cold water and squeeze in 1/2 of the lemon. Peel the apples, cut into thin slices and put into the bowl with cold lemon water. I like to cut the slices rather thin, 1/8-inch or so. In a small bowl mix together 1 rounded teaspoon cinnamon, 1 pinch nutmeg, and 2 tablespoons of all-purpose flour. Drain the apples in a colander and wipe all water out of the large bowl. Put the apples back in the bowl and sprinkle with the cinnamon, nutmeg and flour mixture. Mix until they are all covered.
- Take the pie pan out of the refrigerator and put 1/2 on the apples over the bottom pastry layer. Squeeze 1/2 of the lemon into the caramelized butter and sugar mixture, mix and pour half of the mixture through a sieve onto the apples. Layer the other 1/2 of the apples on top of that and pour on the rest of the caramelized mix. The pie should be just slightly over filled, and formed to a dome in the middle. Remove the second half of the pastry ball from the refrigerator and roll it out. Brush the bottom lip of the pie pastry with water to help form a seal. Place the rolled pastry on top of the pie and trim with kitchen scissors. Crimp the edges together with your fingers to make a good seal between the top and bottom pastry layers. Cut 3 small slits in the top to allow steam to escape. Place pie on a cookie sheet and wrap aluminum foil around the pie edges.
- Place the cookie sheet and pie in the center of the oven and allow to cook for 15 minutes. Then reduce the heat to 350 degrees F and cook for an additional 25 minutes. Remove the aluminum foil and check the crust to see if it is golden brown. You will probably have to continue to cook for another 5 to 10 minutes for the crust to turn golden brown. Remove the pie from the oven and allow it to set for 5 minutes. Then place a large plate over the top of the pie and flip it over. Gently lift the pie pan off of the pie. It should come off clean, but if any pecans stick to the pie pan remove them and put them back on the pie. Allow to cool at least 1 1/2 hours before cutting.

- Spoon butter in bottom of a 9-inch pie plate.
- Arrange pecan halves around bottom of pan.
- Sprinkle 2/3 cup brown sugar over pecans.
- Press one of the prepared pie crusts into bottom and along sides of the pan (over the pecans and sugar); trim off excess pastry.
- In a bowl, combine apples and lemon.
- Combine 1/3 cup brown sugar and remaining ingredients; toss gently, and add/mix in with the apples.
- Spoon the apple mixture evenly over the crust in the pie pan.
- Top with remaining pie pastry; fold edges over and flute.
- Prick the crust a few times with a fork.
- Bake at 450 degrees for 10 minutes.
- Reduce the oven temperature to 350 degrees, and bake for another 30-40 minutes.
- Cool 5 minutes, then turn the pie upside down on a pie plate.

- 1. Rub softened butter on the bottom and sides of a deep-dish pie pan. Place pecans round side down till cover whole inside of the pan.
- 2. Spread brown sugar till all nuts are covered. ,
- 3. Place one pie crust on top of nuts. Press until forms the bottom of pan. Set aside.
- 4. In a bowl, place lemon juice, flour, white sugar, spices, and vanilla. Mix well. Add sliced apples and toss until coated. Pour into pie crust making as even as you can.
- 5. Cover with other pie crust. Fold over sides crimp together (don't worry about how it looks this is the bottom of your pie). Poke holes at random with a fork for steam.
- 6. Place in 450 oven for 10 mins. Reduce heat to 350 for 45 mins.
- 7. Remove from oven. Let sit till the bubbling stops. Important: you must flip this over to serve while it's still hot. The pecans are the top of your pie should be very shiny and all pastry is covered.
- 8. Serve warm with ice cream.

- In a 10-inch cast-iron skillet over medium heat, combine butter, honey, and sugars. Bring to a boil; let boil for 4 minutes. Add pecans and heavy cream, and boil 3 minutes more. Remove from heat, and set aside. Let stand about 30 minutes to cool. Using a wooden spoon, gently mound pecans and caramel slightly in center of skillet, leaving a gap between pecans and edge of skillet.
- Preheat the oven to 425 degrees.with rack in the top third. On a clean, lightly floured work surface, roll out one disk of prepared chilled pastry to approximately a 7/8-inch-thick, 13-inch-diameter circle. Place the pastry over the skillet, carefully tucking the dough down against the edge of the skillet and around the edges of the mound of pecans. Trim the excess dough.
- Place two rimmed baking sheets, one on top of the other, underneath the skillet to catch any drips while the pie bakes and to provide insulation for the caramel. Place skillet in the oven, and bake pie until the dough is just turning golden brown, about 10 minutes. Reduce heat to 350 degrees, and continue baking until the pastry is cooked through and the caramel is bubbling up around the edges of the skillet, about 30 minutes more.
- Remove the pie from the oven, and let cool about 20 minutes. Carefully invert the pie onto a parchment-lined tray or baking sheet (the pie is easy to transfer to serving plate once it has been inverted). Be careful inverting pie; the caramel is very hot. If the pie does not release easily from skillet, heat the skillet over medium heat for about 30 seconds. Serve warm.

- Preheat oven to 425 degrees F (220 degrees C). On a lightly floured surface, roll out pie crusts, and set aside. In a large bowl, toss apples with lemon juice; set aside.
- Combine 1/4 cup brown sugar, butter and corn syrup; spread in bottom of a 9 inch pie dish (glass or ceramic works best). Sprinkle with chopped pecans. Cover with one pie crust. In a small bowl, mix together 1/2 cup brown sugar, flour, and cinnamon.
- Arrange half of the apples in pastry lined plate. Sprinkle with half the brown sugar mixture. Repeat layers. Cover with remaining pie crust, fold top edge under, and crimp. Cut a few slits in the top to vent steam.
- Bake in preheated oven for 50 to 60 minutes, or until golden brown. Let stand 5 minutes. Loosen edge of pie, and carefully invert pie onto a serving dish. Serve warm.

- 1. Pecans: Cut 15-inch round of heavy duty foil. Line 9-inch glass pie plate with this foil, leaving 2-inches overhanging rim of plate. Spread butter over foil lining. Place pecans rounded side down, on butter. In a small bowl, mix brown sugar and corn syrup; drop by small spoonfuls evenly over nuts and foil.Set aside.
- 2. Pastry: In medium bowl, mix flour and slat. Cut in shortening, using pastry blender, until mixture is the size of small peas.Sprinkle with ice water, 1 Tablespoon at a time, tossing with fork until all flour is moistened and pastry almost leaves side of bowl- add 1-2 teaspoons more of water if needed.
- 3. Gather pastry into a ball. Divide in 1/2; shape into 2 flattened pieces on lightly floured surface.Wrap in plastic ; refrigerate about 30 minutes(do not omit this step). This helps the shortening to become slightly firm, which makes the pastry more flaky. Heat oven to 450^.
- 4. With floured rolling pin, roll one piece of pastry into a round -2-inches larger than upside-down 9-inch glass pie plate. Fold pastry into 1/4; carefully place crust over pecans and brown sugar mixture in pie plate.
- 5. Filling: In medium bowl, mix filling ingredients; pour into pastry . Roll other piece of dough into 12-inch round. Fold in 1/2; cut slits so steam can escape. Place over filling and unfold; seal and flute as desired.Turn up overhanging foil to catch juices and to prevent crust from browning to much. Bake 10 minutes.I always place the pie on a cookie sheet too.
- 6. Reduce oven to 375^. Bake for 35-45 minutes longer or until crust is brown and juice begins to bubble through slits. Cool 5 minutes.Turn foil away from pastry. Turn pie upside down onto heatproof serving plate; CAREFULL very HOT- peel off foil. Serve warm.

- Peel, core and slice apples about 1/4 inch thick. Place in a mixture of water and lemon juice to prevent browning. Set aside.
- Preheat oven to 450°F.
- Toast pecans on ungreased baking sheet in oven until lightly browned, about 10 minutes. Check frequently to prevent burning.
- Reduce oven temperature to 325°F.
- Melt butter in small, heavy saucepan. Add brown sugar and cook, stirring, just until melted, 3 to 5 minutes. Watch closely because sugar burns easily.
- Pour butter-sugar mixture into 9 inch round nonstick cake pan and spread to coat bottom. Sprinkle chopped pecans on top butter-sugar mixture. Drain and pat dry apples and place in circles, slightly overlapping, over pecans.
- Sift flour, baking powder, cinnamon and salt into bowl. Using electric mixer, beat butter at medium speed until light and fluffy. Add sugar and continue beating until creamy, 3 to 5 minutes. Add egg and vanilla and continue beating until completely incorporated.
- Reduce speed to low, add flour mixture and milk, alternating, in 3 additions. Continue to mix only until dry ingredients are completely mixed in, stopping to scrape sides if necessary.
- Spoon batter over topping and spread carefully so batter is even.
- Bake 55 minutes, or until tester comes out clean. Cool in pan 10 to 15 minutes. Carefully run spatula around edge of pan and let stand another 10 to 15 minutes.
- Invert pan over large plate and let stand 3 minutes. Carefully remove pan.
- Serve warm with fresh whipped cream.

This recipe is great for fall or for the holidays. Nice combo of two of my favorites, apple and pecan, with a fun twist of flipping it out upside down. Makes a really lovely presentation!

- Place the baking sheet and pie in the center of the oven and allow to cook for 15 minutes at 425. Then reduce the heat to 350 and cook for an additional 20 minutes. Remove the aluminum foil and cook for another 20 minutes, watching for the crust to turn golden brown. If the crust gets too brown and you don't think the apples are cooked enough, re-cover with the foil and continue to bake until there is very little resistance when you insert a wooden skewer into the apples.
- Remove the pie from the oven and allow it to set for 5 minutes. Then place a large plate over the top of the pie and flip it over. Gently lift the pie pan off of the pie. It should come off clean, but if any pecans stick to the pie pan, just remove them and put them back on the pie. Allow to cool at least 1 1/2 hours before cutting. Awesome served with butter pecan ice cream!
