1/4 cup packed light brown sugar
1/4 cup soy sauce
2 tablespoons lemon juice
1 tablespoon salad oil
1/4 teaspoon ground ginger
1 clove garlic, minced

Steps:

  • Combine all ingredients in a container& mix until sugar dissolves.
  • Add beef or chicken, cover& refrigerate for at least 3 hours, stirring often.

1/2 cup soy sauce
1/4 cup canola oil
3 tablespoons sugar
2 teaspoons grated fresh ginger
2 teaspoons toasted sesame oil
2 teaspoons sesame seeds
2 cloves garlic, grated
Kosher salt

Steps:

  • For the marinade: Combine the soy sauce, oil, sugar, ginger, sesame oil, sesame seeds, garlic and 1/2 teaspoon salt in a large resealable plastic bag. Add 4 boneless skinless chicken breasts or 8 boneless skinless thighs (about 1 1/2 pounds), squeeze out the air, seal tightly and massage gently to coat the chicken with marinade. Refrigerate for 2 hours or freeze up to 1 month; defrost in the refrigerator overnight before cooking.
  • To cook: Remove the chicken from the bag, letting any excess marinade drip off, and transfer to a foil-lined baking sheet. Broil, turning halfway through, until lightly charred, cooked through and an instant-read thermometer registers 165 degrees F, about 12 minutes.

1 cup soy sauce
4 ½ teaspoons rice vinegar

black pepper to taste

Steps:

  • Bring mirin to a boil in a saucepan over high heat. Reduce heat to medium-low, and simmer for 10 minutes. Pour in soy sauce, rice vinegar, sesame oil, and sugar. 85g light brown soft sugar
70ml light soy sauce
1 large garlic clove, crushed
4cm piece ginger, peeled and finely grated
1 tbsp cornflour
1 tbsp rice wine vinegar
sesame seeds (optional)
2 spring onions, finely sliced (optional)

Steps:

  • Pour 350ml water into a small saucepan with the sugar, soy sauce, garlic and ginger. Slowly bring to a simmer, stirring occasionally until the sugar has dissolved. Cook for 5 mins more or until glossy and slightly thickened. Combine the cornflour with 1 tbsp water and quickly whisk through the sauce. Whisk through the rice wine vinegar. If it's still too thick, add a splash more water. Pour into a clean jar and leave to cool at room temperature.
  • Once cooled, will keep in the fridge for up to 1 week. Sprinkle with sesame seeds and spring onions just before serving, if you like.

Years ago I was given a recipe for homemade teriyaki marinade by a friend from Hawaii. The recipe was rich, flavorful, and surprisingly easy to make. I regretfully somehow misplaced the recipe over the years. Now that I'm married and back in the kitchen, I'm cooking more and a lot more from scratch. I've tried to recreate the recipe I had years ago and think I've done a pretty good job. Preparation time does not include two hours in refrigerator to marinate meat. Hope you like it.

1 cup soy sauce
1 teaspoon minced garlic clove
1/2 cup brown sugar
1 tablespoon rice wine vinegar
1 teaspoon gingerroot, grated
6 ounces pineapple juice
6 ounces orange juice

Steps:

  • In medium pan over low to medium heat simmer soy sauce, garlic, brown sugar, vinegar, and ginger root.
  • After 15 minutes, add pineapple juice and orange juice.
  • Up to 2 hours before cooking time pour the marinade into a shallow baking pan or a ziplock bag that you've placed in a bowl to avoid spillage, add strips of beef, chicken pieces, steaks, OR pork chops, etc.
  • Place in refrigerator to marinate.
  • It is recommended that you use the marinade only once, for one kind of meat, then discard. If you are making two kinds of meat, such as chicken and beef, divide the marinade and allow the different meats to work in different containers.
  • Meat can be cooked in a variety of ways. Steak or beef strips are good placed over hot coals on a grill. Cook steaks to your preference. Beef strips will cook quickly, turn often, watch closely. Chicken is best baked or broiled until juices run clear. Pork can be cooked on the grill or in the oven until no longer pink.

My son LOVES teriyaki and after trying so many different recipes, this is the one that is the absolute best. The magazine says, "The traditional sweetener for teriyaki is mirin (sweet rice wine), but if it is unavailable, use sake, sherry, or white wine and increase the sugar slightly." My local Kroger has the best mirin, sold near the sushi station. It is in a large wine bottle. It is better than the product with HFCS added in the aisle. I admit I have never added the jalapenos for the sake of my son. I use the brown sugar when I make it. We love this for chicken for grilling, but the recipe says it can be used with beef, lamb, poultry, or seafood.
