FRIED ONION DIP

Fried Onion Dip image

Provided by Amy Thielen

Categories     appetizer

Time 40m

Yield 8 servings (1 1/2 cups)

Number Of Ingredients 11

4 tablespoons (1/2 stick) salted butter
1 medium sweet onion, cut into 1/2-inch-thick rings
Fine sea salt and freshly ground black pepper
Fine sea salt and freshly ground black pepper
1 teaspoon honey
3 cloves garlic, chopped
1/4 cup dry vermouth or dry white wine
3/4 cup sour cream
1/4 cup (2 ounces) cream cheese, at room temperature
1 tablespoon finely chopped fresh chives, plus more for garnish
Dash of cayenne pepper

Steps:

  • First, clarify the butter so that you can fry the onions at high heat and put a very dark, almost burnt crust on them. Heat the butter in a small skillet over medium-high heat until it foams and browns. Remove from the heat. Tilt the skillet and carefully spoon off the foam, saving it in a small bowl. Pour the clear butter into another bowl, and pour the dark dregs at the bottom of the skillet into the bowl with the foam. Add the clear butter to a larger heavy skillet. (Discard the butter foam and dregs.)
  • Heat the skillet over medium-high heat. Add the onions, 3/4 teaspoon salt and 1/4 teaspoon pepper. Fry the onions, flipping them now and then, until they're dark on the edges, even black and crispy in spots, about 10 minutes. Add the honey and garlic and cook for 1 more minute. Add the vermouth, bring to a simmer and cook until the liquid thickens, about 3 minutes. Remove from the heat and let cool.
  • Put the sour cream and cream cheese in a mixing bowl and mix with a rubber spatula until smooth. Finely chop the fried onions on a cutting board and add them, along with their pan juices, to the cream cheese mixture. Stir in the chives. Add the cayenne and season with salt.
  • Transfer to a small bowl and garnish with more chives. (This can be made ahead of time and refrigerated.)

ONION DIP FROM SCRATCH

Onion Dip from Scratch image

French onion soup meets tangy sour cream in this homemade version of America's favorite chip dip. According to American culinary legend, an unknown Los Angeles chef devised onion dip back in the fifties by mixing Lipton soup mix with sour cream. Maybe, maybe not. What we know is that the folks at Lipton's picked up the ball and ran with it to the point that more of their dehydrated onion soup mix was going into the dip bowl than the soup bowl. I have nothing against using manufactured mixes, but look, after the zombie apocalypse strikes, and the megamart shelves are stripped bare...what do we do then? Those of us with this recipe in our go-bags will survive to dip another day. Food for thought people, food for thought. This dip is even better when made a day ahead. Just make sure that you cover it well with plastic wrap because fats (like sour cream) take in flavors and aromas hanging around the refrigerator like crazy old grandmas collect leftover gift wrapping. This recipe first appeared in Season 6 of Good Eats.

Categories     Appetizers

Time 2h

Number Of Ingredients 10

4 large yellow onions, peeled ((about 3 1/2 pounds))
1/4 teaspoon plus a pinch baking soda
1 tablespoon kosher salt
1 tablespoon dark brown sugar
1/4 cup olive oil
Sherry vinegar, for deglazing
1 1/2 cups sour cream
3/4 cup mayonnaise
1/4 teaspoon garlic powder
1/4 teaspoon freshly ground white pepper

Steps:

  • Using a mandoline or sharp knife, thinly slice the onions and place in a large pot. Sprinkle with the baking soda, salt, and dark brown sugar, and gently toss with tongs. Cover the pot and let the onions rest for 10 minutes.
  • After 10 minutes, uncover the pot, and place over high heat. Drizzle in the olive oil and cook, stirring often, until the onions are reduced by 75 percent and are a light gold color. Reduce heat to medium and continue cooking for approximately 15 minutes, stirring often.
  • Deglaze the pan with a few shakes of sherry vinegar and water. Reduce heat to low and continue stirring, scraping all the brown bits off the bottom of the pot. The onions should be dark golden brown and reduced to about 1 1/2 cups in volume. Remove from heat and let cool.
  • Once cool, put 1/2 cup of the caramelized onions in a medium mixing bowl. Add the sour cream, mayonnaise, garlic powder, and white pepper, and stir to combine.
  • Cover tightly with plastic wrap and refrigerate for at least 1 hour before serving. Overnight would be even better.

ONION DIP (RAW VEGAN)

Onion Dip (Raw Vegan) image

This is an incredible dip which tastes even better than it's non raw vegan counterpart. This makes quite a bit so scale back as you need. Soaking the nuts for a couple hours before hand wakes up the natural enzymes & also makes the blending creamier!!

Categories     Spreads

Time 15m

Yield 4 cups, 8 serving(s)

Number Of Ingredients 6

2 cups macadamia nuts, soaked
3/4-1 cup water
1 teaspoon sea salt
1 garlic clove, minced
1 cup onion, diced
chives (optional)

Steps:

  • Blend macadamia nuts, 3/4 cup water, sea salt, and garlic until smooth and creamy. If needed add more water so it blends. Thicker is better but it should still be completely blended.
  • Place in bowl and fold in onions, mix gently, and chill. Top with chives if using. Enjoy with veggies, crackers, or as a spread on sandwiches!

EVERYTHING ONION DIP

Everything Onion Dip image

This onion dip is made with everything onions and is everything you'd ever want in an onion dip. Yellow, red, and green onions join savory shallots, flavorful chives, and the key ingredient, dried onion, which makes it taste like the French onion dip of your childhood. You can serve this dip with anything and everything, but if you have to pick, serve it with some sturdy, top-shelf potato chips for any big game or party. And if you're lucky enough to have leftovers, it makes the best baked potato topping!

Provided by Chef John

Categories     Dips and Spreads

Time 5h

Yield 24

Number Of Ingredients 13

1 medium yellow onion
2 tablespoons olive oil
1 teaspoon kosher salt, or more to taste
½ cup minced shallots
½ cup diced red onions
½ teaspoon granulated garlic
1 tablespoon minced dried onion
¾ cup mayonnaise
2 cups sour cream
¼ teaspoon freshly ground black pepper
⅛ teaspoon cayenne pepper
⅓ cup thinly sliced green onions, or more to taste
¼ cup thinly sliced fresh chives, or more to taste

Steps:

  • Cut both ends off the yellow onion and cut evenly into 2 halves. Remove and discard skin. Place onion halves on a cutting board with cut-sides down. Make vertical slices against the grain, then turn and slice across the cuts to chop. Chop again if you'd like smaller pieces. You should have about 2 cups chopped onion.
  • Heat olive oil in a large skillet over high heat. Transfer onion and salt into the hot oil. Cook until onions are deep brown in color, 7 to 8 minutes. Add shallots and red onions; stir and saute until they start to soften and sweeten, 3 to 4 minutes. Turn off the heat and stir in garlic and dried onion. Set aside to cool completely, about 20 minutes.
  • Combine mayonnaise, sour cream, pepper, cayenne, and cooled onion mixture; mix until thoroughly combined. Cover and chill in the refrigerator for 4 to 12 hours, or overnight.
  • Remove dip from the refrigerator and stir in green onions and chives. Taste and adjust seasoning. Transfer dip into a serving bowl and garnish with more green onions and chives to serve.

  • Allow raw cashews to soak in boiling hot water for 20 minutes. This will soften them, and allow them to blend easily. You can also leave them soaking in water overnight in the fridge.
  • In a large pan over medium heat, sauté onions with 1 tablespoon of olive oil for about 14 to 16 minutes. Add in shallots, thyme, and another tablespoon of olive oil if the pan seems dry. Continue to caramelize, stirring occasionally, for another 14 to 16 minutes until the mixture is a deep golden brown.
  • Meanwhile, rinse the cashews from the soaking water and drain well. Add them to a high-powered blender along with tofu, lemon juice, Better Than Bouillon base, garlic powder, and ground black pepper. Blend on high until very smooth.
  • Once the onions and shallots are caramelized, reserve about ¼ cup of the mixture for the top of the dip. Then portion out half of what is left and add it to the blender with the dip. Blend again until smooth.

  • Heat the butter in a nonstick skillet over medium heat. Add the onions, sprinkle with salt and sugar, and saute for 10-15 minutes, stirring every few minutes. Pour a little bit of wine in and let it sizzle out. Stir, add wine, sizzle, etc. After about 30 minutes, your onions should be deeply golden brown and fragrant.
  • Transfer onions to a cutting board and chop coarsely into small pieces – or just use a kitchen scissors and snip them up right in the pan. Mix the cream cheese and sour cream. Mix in the onions and a handful of fresh parsley. Taste and season – if you want just a little sumthin sumthin extra, add a small splash (like, a tablespoon or less) of soy sauce and/or Worcestershire. This just gives it a little depth and umami flavor.
