- PREHEAT oven to 350°F. Lightly coat two 12-cup muffin pans with cooking spray. (Alternatively, use 9-by-13-inch baking dish.) HEAT oil in a large pot over medium-high heat; add onions and cook, stirring, until translucent. Add garlic and sauté until beginning to color, 2 to 3 minutes longer. STIR in dried basil, parsley, rosemary, oregano, salt and pepper; remove pot from heat. WHISK together 1 cup of milk and tomato paste in a medium bowl, until well combined; whisk in remaining milk. WHISK milk mixture into onion mixture in pot. Whisk in eggs and cheese. Add challah, stirring until cubes are all well coated. SPOON mixture into muffin pans (mixture doesn't expand in oven, so you can make larger ones if you prefer). BAKE for 15 to 20 minutes or until tops are lightly browned.

Adapted to be vegetarian friendly from Sandra Lee's Money -Saving Meals I think a vegetable added to these would taste better, but I have not figured out what kind yet. Sandra added mushrooms to hers, but I cannot deal with the fungi.

Steps:
- Spray a 12 cup muffin tin with nonstick cooking spray and set aside.
- In a large bowl whisk together the cheese, eggs,soy milk, Italian seasoning and salt and pepper. Add the cubed bread to the egg mixture and let the egg and bread mixture sit for at least 30 minutes in the refrigerator to allow the bread to absorb the liquid.
- Preheat the oven to 325 degrees F.
- Remove the egg mixture from the refrigerator, Ladle the bread pudding mixture into the muffin tins and bake until set, about 30 to 35 minutes. Remove the puddings from the muffin tins to a serving platter and serve.

- 1. Preheat oven to 350. Butter a 3 quart soufflé dish.
- 2. Put bread slices in shallow bowl and pour in 2 cups of the milk. Let the bread soak up the liquid, 5 to 10 minutes. If the bread is very dry, it will take longer and may require up to 1/2 cup more milk. Remove bread, squeeze out any excess milk with your hands and put bread in a clean bowl. Discard the milk.
- 3. In another bowl, mix eggs, salt, pepper and the remaining 1/2 cup milk and whisk to blend. Layer one third of the bread in the prepared dish. Top with one third of the Gruyere cheese and half the herbs. Repeat layers, reserving 1 Tbsp. of the herbs. Arrange last third of the bread on top and sprinkle with the remaining Gruyere cheese and the Romano cheese. Pour egg mixture evenly over the top. Use a knife to push the bread away from the sides of dish, letting egg mixture run to the bottom.Dot the top of the bread pudding with the butter.
- 4. Bake bread pudding til top is crusty and golden and a knife inserted into the center comes out clean, 45 to 60 minutes. Garnish with reserved herbs,scoop pudding onto warmed individual plates and serve at once. Serves 6 to 8

- Preheat oven to 350 degrees.
- In a bowl, toss the bread cubes with melted butter and chopped savory. Transfer to a baking sheet and toast until crispy and golden, about 30 minutes. Increase oven temperature to 375 degrees.
- In a large skillet, heat 2 tablespoons olive oil. Break up sausage into silver-dollar-sized pieces and add to skillet; cook thoroughly about 10 minutes. Transfer sausage to a large bowl and let cool.
- Add remaining 3 tablespoons olive oil to skillet. Add leeks and mushrooms and season with salt and pepper. Cook, stirring, until all the liquid has been absorbed, about 10 minutes. Stir in apple and transfer mixture to bowl with sausage; let cool.
- Brush a 9-inch square baking dish with olive oil. Add bread cubes to bowl with sausage and leek mixture; toss to combine and transfer to baking dish.
- In a large bowl, whisk together cream, eggs, vinegar, 3/4 cup cheese, 1 tablespoon salt, 1 teaspoon pepper, and the persillade; pour over bread mixture. Cover baking dish tightly with parchment paper-lined aluminum foil and transfer to oven. Bake until a paring knife inserted into the center of the pudding comes out clean, about 1 hour.
- Uncover and sprinkle pudding with remaining 3/4 cup cheese. Preheat the broiler; broil pudding until golden, about 3 minutes. Cut into squares and serve garnished with truffles if desired.
SAVORY ROSEMARY BREAD PUDDING
This is a very simple solution for the leftover bread and cheese from last night's party. Tossing the bread with olive oil before assembling the dish makes the top crunchy and very tasty--reminiscent of good, homemade croutons, which is exactly what it is.

- Preheat oven to 375 degrees F (190 degrees C).
- Heat olive oil in a cast iron pan, and cook onion and rosemary in oil until onion is soft.
- Toss bread cubes with olive oil and onions. Exact measurement of bread is not necessary. Place in a well oiled, deep sided, 9 inch square pan. Toss with 1/2 cheese, and sprinkle remaining cheese over the top.
- Beat together milk, cream, and eggs. Pour over bread in pan. It is fine that the bread sticks out of the custard.
- Bake for 1 hour, or until browned and a knife inserted in the middle comes out clean (except for melted cheese).

- Spray 13x9-inch (3-quart) glass baking dish with cooking spray. In large bowl, mix eggs, whipping cream and broth. Add bread; toss to coat in egg mixture.
- In 12-inch nonstick skillet, melt butter over medium heat. Add sausage; cook 7 to 9 minutes or until browned. Using slotted spoon, transfer sausage to bowl with egg mixture.
- Add onions, mushrooms and salt to fat in skillet; cook over medium-high heat 9 to 12 minutes or until mushrooms are browned. Stir in garlic; remove from heat. Cool 3 minutes. Stir into egg mixture; stir in cheese. Pour mixture into baking dish. Cover and refrigerate at least 8 hours but no longer than 12 hours.
- Heat oven to 350°F. Bake 50 to 55 minutes or until at least 165°F in center and knife inserted 1 inch from edge comes out clean. Let stand 5 minutes. Top with herbs.
