CORNBREAD WAFFLES



Cornbread Waffles image

These cornbread waffles with maple mascarpone topping are a hearty way to breakfast or brunch, weekend-style; they're also naturally gluten free.

Number Of Ingredients 12

1/2 cup mascarpone cheese (or cream cheese)
2 tablespoons maple syrup
1/2 cup masa harina
1/4 cup fine or medium ground cornmeal
1/4 cup gluten-free oat flour (make your own by processing 1/4 cup rolled oats in a food processor or high-speed blender until finely ground)
1 teaspoon baking powder
1/2 teaspoon kosher salt
1 large egg
3/4 cup milk (or almond milk)
2 tablespoons butter (or coconut oil), melted and cooled
1 1/2 tablespoons maple syrup
Chopped pecans, for serving

Steps:

  • Preheat a waffle maker to medium high heat; grease it if necessary.
  • In a small bowl, mix the mascarpone with 2 tablespoons of the maple syrup, then set aside.
  • In a large bowl, mix together the masa harina, cornmeal, oat flour, baking powder and kosher salt.
  • In a medium bowl, whisk the egg, then whisk in the milk, melted butter, and maple syrup. Pour the wet ingredients into the dry ingredients and mix until just combined.
  • Let sit undisturbed for 7 minutes. After sitting, the batter becomes very thick and unpourable.
  • Scoop half of the batter onto the heated waffle maker and gently spread it into an even with a spatula. Cook until golden brown. (The resulting waffle will be golden brown and soft, but it will firm up a bit as it cools. If the waffle maker is too hot, this may prevent the inside from cooking fully).
  • Serve immediately with maple mascarpone. To store leftovers, let cool fully and freeze in an airtight plastic bag; reheat in a toaster or oven. (This recipe makes 2 large waffles or 4 small; if you scale it up, place the cooked waffles in a 300F oven to keep warm while cooking the remaining waffles.)

1 1/4 cups rolled oats (not instant)
1/2 cup unbleached all-purpose flour
1/2 cup plain cornmeal
3 tablespoons brown sugar
4 teaspoons baking powder
3/4 teaspoon salt
2 large eggs, lightly beaten
1 cup heavy cream
1 cup milk
6 tablespoons melted butter

Steps:

  • PREHEAT waffle iron to medium.
  • IN A LARGE BOWL, combine oats, flour, cornmeal, brown sugar, baking powder and salt. Add eggs, cream, milk and butter, stirring to combine. Let stand for 2 minutes.
  • POUR approximately 1 cup batter onto hot waffle iron. Bake until waffles cease to steam, approximately 2-3 minutes. Keep an eye on waffle iron; these waffles crisp up quickly.
  • SERVE with maple syrup, yogurt, and fresh fruit on the side, if desired. I like sweetened ricotta and fresh fruit on top with the syrup.

  • Mix oats, rice flour, cornmeal, and baking powder together in a bowl. Stir soy milk, eggs, and oil together in a separate bowl; add to oats mixture and stir until batter is just combined.
  • Pour 1 cup batter into the preheated waffle iron and cook according to manufacturer's instructions until lightly browned, about 4 minutes. Repeat with remaining batter.

Yield Serves about 24, with a heaping 9 1/2 cups of mix

Number Of Ingredients 8

4 cups coarse, whole-grain, yellow cornmeal
2 cups whole wheat flour
1 3/4 cups spelt flour
1 cup old-fashioned rolled oats (do not use quick-cooking or steel-cut oats)
3/4 cup sugar
1/4 cup baking powder
4 teaspoons salt
1 teaspoon ground cinnamon

Steps:

  • Whisk all the ingredients in a large bowl, taking care that the baking powder is evenly distributed throughout. Spoon or pour the whole kit and caboodle into a large container and seal tightly. Store up to 3 months in a dark, cool pantry.
  • NOW WHAT?
  • To make 3 waffles, scoop 1 cup plus 3 tablespoons of the mix into a bowl. Whisk in 1 large egg, 1/2 cup plus 1 tablespoon milk (whole, 2%, 1%, or even fat-free), 1/2 teaspoon vanilla extract, and 2 tablespoons nut oil (walnut, hazelnut, or pecan) or 2 1/2 tablespoons melted and cooled unsalted butter. Mix well and set aside for 10 minutes while the waffle iron heats. Then make the waffles in the iron according to the manufacturer's instructions.

These waffles are delicious, crispy and sweet. They are also nutritious. This recipe came from the Sunset Complete Vegetarian Cook Book. They are especially good with sliced fruit on top. The recipe can be altered without a problem, it is still good if the ratios are not exact.

1 1/3 cups unbleached all-purpose flour
2/3 cup regular rolled oats
2/3 cup cornmeal

1/3 cup melted butter

Steps:

  • Mix dry ingredients in a large bowl.
  • Beat egg and add to buttermilk.
  • Add egg and buttermilk to dry ingredients and mix to incorporate.
  • Add cooled melted butter and mix to incorporate.
  • Do not overmix.
  • Heat waffle iron, (to grease or not to grease- I usually don't) for each waffle pour about 2/3 cup of batter or 1/2 an iron full.
  • Bake until well crisped.

1 cup quick-cooking oats
3 teaspoons baking powder

1-1/2 cups whole milk
6 tablespoons butter, melted
2 tablespoons brown sugar
Assorted fresh fruit and yogurt of your choice

Steps:

  • In a large bowl, combine flour, oats, baking powder, cinnamon and salt; set aside. In a small bowl, whisk eggs, milk, butter and brown sugar. Add to flour mixture; stir until blended. , Pour batter into a lightly greased waffle iron (amount will vary with size of waffle iron). Close lid quickly. Bake according to manufacturer's directions; do not open during baking. Use fork to remove baked waffle. Top with fresh fruit and yogurt.

In addition to the posted ingredients I like to add 1/2 cup wheat germ, and 1 T vanilla (1 also add whole eggs instead of just egg whites.) They freeze really well. My Mom gave me this recipe but I'm not sure from where... with all the changes, it's mine now!

1/4 cup cornmeal
1 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
1 tablespoon canola oil or 1 tablespoon melted butter
2 egg whites (whole eggs separated work well too)
1 tablespoon vanilla (optional)
1/2 cup wheat germ (optional) or 1/2 cup ground flax seeds (optional)

Steps:

  • Combine the first 4 (four) ingredients (if you are using wheat germ or flax seed combine with dry ingredients) in a large mixing bowl; set aside. Stir buttermilk and oil together add vanilla as well; set aside. Blend egg whites in a dry mixing bowl until stiff peaks form; set aside. Mix buttermilk mixture into flour mixture; blend until smooth. Gradually fold in egg whites; pour by cupfuls onto a hot, greased waffle iron. Heat according to waffle iron manufacturer's instructions.

2 cups cornmeal
3 cups water
2 teaspoons salt
2 tablespoons butter or 2 tablespoons shortening
4 eggs
2 cups flour
1 teaspoon baking soda
1 cup milk
1 1/4 cups buttermilk (approximate) or 1 1/4 cups sour milk (approximate)

Steps:

  • Cook corn meal, water, and butter or shortening in a double boiler for ten minutes, stirring frequently.
  • Cool.
  • Sift flour, salt, baking soda together.
  • Beat eggs until very light and add to cornmeal mush.
  • Add sifted flour mixture alternatively with milk and stir thoroughly.
  • Add enough buttermilk or sour milk to make a thin batter.
