THE BEST NO-BAKE HAYSTACK COOKIES
This easy classic haystack recipe has a combo of butterscotch and chocolate chips, PLUS peanut butter and crushed peanuts.

Steps:
- Line two baking sheets with parchment or wax paper.
- Melt the butterscotch and chocolate chips in the microwave or in a double boiler (If you don't have a double boiler you can make one by nestling a metal or heatproof glass bowl over a pot with a bit of water in the bottom - bring the water to a boil, and stir the chips frequently until they melt). If using the microwave, heat for 30 seconds, then stop and give the chips a stir, and stop and stir every 15 seconds until they are melted. Stir in the peanut butter until well combined.
- Combine the noodles and the cocktail peanuts in a large bowl. Pour the butterscotch-peanut butter mixture over and stir to combine.
- Drop the mixture by tablespoons onto the prepared baking sheet. Allow to set; in warmer months or when the kitchen is warm, this is best done in the fridge. Do let them sit at room temperature for several minutes before serving.

HAYSTACKS
I have made these cookies for my family for about 30 years now. My son (who is now 36 years old) gets so excited when I make these; he always enjoys them with a tall glass of milk. I find that I have to be careful when melting the butterscotch because it seems to scorch easily, so take care - this is an essential ingredient! Also, these are best enjoyed in the winter because they seem to melt and not taste as great in the warmer weather.

Steps:
- Melt the butterscotch chips in a double boiler over simmering water.
- In a medium bowl, combine the melted butterscotch and peanut butter. Add noodles and peanuts and mix well. Drop the batter by the heaped tablespoon onto waxed paper and refrigerate until cool and set, about 20 minutes.

- Line trays with wax paper.
- Microwave morsels in large, uncovered, microwave-safe bowl on MEDIUM-HIGH (70%) power for 1 minute; stir. The morsels may retain some of their original shape. If necessary, microwave at additional 10- to 15-second intervals, stirring just until morsels are melted. Stir in peanut butter until well blended. Add chow mein noodles and marshmallows; toss until all ingredients are coated. Drop by rounded tablespoon onto prepared trays. Refrigerate until ready to serve.
- Double Boiler Method: Place morsels in top of double boiler over hot (not boiling) water. Do not cover. When most of the morsels are shiny, stir just until melted. (Prevent water from coming in contact with morsels.) Remove from heat; stir in peanut butter. Transfer to large bowl. Add chow mein noodles and marshmallows; proceed as above.
NUTELLA BUTTERSCOTCH HAYSTACKS
These are rich but oh so good and simple. I made these out of a lot of leftovers that I had that I needed to use up so I guessed at the measurements and wrote them down as I tossed them together and to my surprise they turned out good! Well, anything with Nutella usually is. Right?! So, you know what you have to do when that happens. You have to share!

Steps:
- In a microwave safe bowl add butterscotch chips and chocolate chips.
- Microwave on high for 1 minute.
- Stir chips together and heat on high, stirring every 50 seconds, until melted. (For me, It took around 1 1/2 minutes with a 1,000 watt oven).
- Remove chips mixture from oven and add Nutella.
- Stir to blend.
- To chips mixture, add chow mein noodles and nuts, if desired, and stir to coat and combine.
- Line cookie sheets with waxed or parchment paper and drop mixture by well rounded spoonfuls onto waxed paper.
- Place cookie sheets in refrigerator for 30 minutes.
- Transfer haystacks to a tightly covered container and store in refrigerator.
- Yield is approximate depending on how large or small you make them.
- Cook time is chill time.
