LAZY LASAGNA II
This is a no mess, no fuss dish. Less ingredients, but tastes the same! Everyone loves it and wants the recipe.

Steps:
- Preheat oven to 375 degrees F (190 degrees C).
- In a skillet over medium heat, brown ground beef with onion; drain grease. Pour in spaghetti sauce and simmer 5 minutes.
- In a 9x13 inch baking dish, spread enough sauce and beef to cover bottom and put a layer of ravioli down end to end. Spread a layer of sauce and cheese just like you would with regular lasagna. Keep layering and finish with sauce on top.
- Bake uncovered in a preheated oven for 1 hour. Let sit for 5 minutes before serving.

SOUTZOUKAKIA
Tasty melt- in-your-mouth meatballs in a rich tomato sauce - the secret is in the cumin so don't leave it out. A greek recipe.

Steps:
- Mix the meat, egg, onion, garlic, breadcrumbs and cumin together. Add salt and pepper.
- Use the flour to form the meatballs with your hands ( not too small, not too big ).
- Deep fry the meatballs in vegetable oil in a low heat. Do not overcook them.
- Remove them from the pan and throw away the oil, apart from a few teaspoons.
- Shallow fry the tomato and peppercorns. Season.
- Add the tomato paste, the red wine and the stock diluted in water ( dont add too much water or the sauce will become runny ).
- Add a pinch of sugar and a few drops of lemon juice.
- Add the meatballs back to the pan and simmer in a very low heat for approximately 10 minutes, until the sauce is nice and thick.
- Serve with rice.
GREEK LAZY LASAGNA
Pasta, feta cheese, spinach and olives all mixed together and baked.

- Fill a large pot with lightly salted water, and bring to a rolling boil over high heat. Once the water is boiling, stir in the malfada pasta, and return to a boil. Cook the pasta, stirring occasionally, until the pasta has cooked through but is still firm to the bite, about 10 minutes. Drain well, and return pasta to the pot.
- Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- Combine olive oil, onion, and garlic in a large skillet. Cook and stir over medium heat until soft, about 3 minutes. Add the sliced chicken; cook, stirring, until chicken is lightly browned and no longer pink in the center, about 5 minutes. Mix in the spinach, black olives, and lemon juice. Cook until heated through, an additional 1 to 2 minutes. Stir the chicken mixture into the pasta, add the feta cheese, and mix well. Spoon into the prepared baking dish, and cover with aluminum foil.
- Bake in preheated oven until the pasta is hot and the cheese is melted, about 30 minutes.

LAZY MAN'S SOUTZOUKAKIA ( A GREEK STYLE BOLOGNESE)
I love soutzoukakia, which are Greek meatballs heavy in red wine, garlic and cumin cooked in a red sauce. But sometimes on a busy weeknight, I just don't have the time. I came up with this recipe to satisfy my cravings when time is short. I use a store bought sauce cause of time, but feel free to substitute your own sauce recipe.

- Cook pasta according to directions on box.
- While pasta is cooking, brown the ground beef with the garlic, cumin, onion, salt and pepper.
- Once beef has browned and the onions are translucent, add the wine and the pasta sauce and simmer for about 10 minutes. Serve over pasta.

- In a large bowl, combine the first seven ingredients; set aside. In another bowl, combine the spaghetti sauce and beef; mix well. , Spoon a fourth of the meat sauce into a greased 13x9-in. baking dish. Top with three noodles and half of the cheese mixture; repeat layers once. Top with a fourth of the meat sauce, remaining noodles and remaining meat sauce. Pour water around edges. Sprinkle with Parmesan cheese. , Cover and bake at 375° for 45 minutes. Uncover and bake 15 minutes longer or until noodles are tender. Let stand 10 minutes before cutting.
