This goes wonderfully with grilled meats, and even with cooked pastas. You can make it as sweet as you like depending on the sweetness of the onions, taste as you go along!

2 tablespoons olive oil or 2 tablespoons vegetable oil
1 kg onion, halved and sliced thin
salt
fresh ground pepper
2 -3 tablespoons brown sugar
3 tablespoons red wine vinegar
2/3 cup dry red wine
1/4 cup water

Steps:

  • Heat oil in a large saute pan or stew pan.
  • Add onions.
  • Saute over medium heat, stirring often, 5 minutes.
  • Sprinkle with salt and pepper.
  • Cover and cook over medium-low heat, stirring often, 5 minutes or until onions are golden brown; reduce heat if they are browning too fast.
  • Add 2 Tablespoons sugar to onions, stir and cook 1 minute to dissolve sugar.
  • Add vinegar and bring to a boil, stirring.
  • Add wine and bring to a boil.
  • Add water.
  • Cook uncovered over medium heat, stirring often, about 5 minutes or until most of liquid evaporates and onions are very tender.
  • Taste and adjust seasoning.
  • If you like, add remaining sugar and cook another minute, stirring.
  • Serve hot or cold.

1 lb Spanish onion, peeled and thinly sliced
2 tablespoons honey
1/4 cup red wine vinegar
1/2 cup water, more if needed
2 tablespoons butter
salt & freshly ground black pepper

Steps:

  • In a saucepan over medium heat combine onions and honey.
  • Cook slowly until caramelized, about 45 minutes.
  • Add vinegar and stir.
  • Add water and reduce to low heat.
  • Cook uncovered until liquid has been absorbed.
  • Onions are done when they are tender, have melted together,and are moist but not wet.
  • (More liquid and cooking time may be needed.) Whisk in butter.
  • Season.
  • Let cool and store in a mason jar.
  • When ready to use, reheat the compote over low heat and adjust seasoning.
  • Onion compote will keep refrigerated for at least a month.
  • Enjoy!

5 tbsp Unsalted butter
3½ lb Large cooking onions, halved lengthwise and cut into thick slices
1 tbsp Sugar
1½ cup Full-bodied French wine
Salt and freshly ground pepper
2 tsp Red wine vinegar

Steps:

  • Reserve 1 tbsp butter and melt remaining butter in pot over low heat. Add onions. Cover and cook, stirring occasionally, for 45 minutes. Separately, in a small saucepan, boil ⅓ of the wine until it is reduced to 1 tbsp. Add another ⅓ and reduce again to 1 tbsp. Add remaining wine and reduce to ⅓ cup. Set aside.
  • Uncover the onions, increase to medium-high, and cook about 5 minutes more, stirring often. Onions should be glazed and golden brown. Sprinkle sugar over onions and continue 2-3 minutes more, stirring, until reduced to a glaze.
  • Reduce heat to as low as possible. Mix in wine reduction, Cover and cook, stirring occasionally, for 2 hours. The onions will be very soft and a deep purple by this time.
  • Raise heat to medium-high and toss in 1 tbsp butter. Continue to reduce the mixture until all the liquid has evaporated and the onions begin to fry in the released fat.
  • Watching carefully, turn the onions over-and-over (avoid scorching) for 10 minutes. Remove from heat, mix in vinegar. Season with salt and pepper, and serve warm or at room temperature.

1 tablespoon grape seed oil
1/2 cup thin-sliced (height wise) red or Vidalia onion
1/4 cup thin-sliced bacon
1 cup thin-sliced apple (1/4-inch by length)
1/4 cup white wine, sauvignon blanc or riesling
1/4 cup (1/2 stick) butter, at room temperature
1/2 teaspoon ground nutmeg, optional
1/2 teaspoon turmeric, optional
2 tablespoons grape seed oil
Eight 4-ounce fresh boneless pork loin chops
1 teaspoon ground pepper
1 tablespoon kosher or sea salt
1 teaspoon fresh mint, chopped
Potatoes of choice, for serving

Steps:

  • For the apple compote: In a large saute pan over high heat, add the oil and allow to heat to the verge of smoking. Then add the onions and reduce the heat to medium. Allow the onions to cook, stirring throughout, until light brown in color, about 2 minutes. Then add the bacon and allow to cook until the bacon has begun to brown. Then add the apples. After adding the apples, allow all the ingredients to blend in flavor for a final 2 minutes. Add the wine to deglaze the pan and allow the alcohol to cook off. After reducing the wine, reduce the heat to low and whisk in the butter and optional spices, stirring for 1 to 2 minutes to create a sauce. Finish with the mint and hold warm until serving.
  • For the chops: In large a saute pan over medium-high heat, add the oil and allow to warm. Sprinkle the chops with salt and pepper equally on both sides and add to the warm oil. Allow the chops to brown on the first side for 3 to 4 minutes, and then flip and repeat cooking on the second side for a final 3 to 4 minutes. Once cooked, remove from the pan and serve with potatoes of choice. Finish with the apple compote.

1 Granny Smith apple, sliced
1 teaspoon apple cider vinegar
2 ounces cassis
Sea salt

4 (3-ounce) slices foie gras
1 tablespoon port wine
2 tablespoons black truffles, chopped
4 tablespoons veal stock
1 small bunch Italian parsley, fried
Fleur de Sel

Steps:

  • Heat a large skillet over medium heat. Add butter and melt. Add onions and apples, reduce heat to low, and let simmer for approximately 5 minutes or until onions and apples are tender. Add vinegar and cassis, and season with salt, pepper, and a dash of sugar. Simmer for 5 minutes and set aside.
  • Heat a medium or large skillet over medium-high heat. Season foie gras with salt and pepper, and then sear on both sides until cooked to desired degree of doneness. Remove foie gras to a towel to absorb excess fat. Add port to skillet and deglaze, stirring and scraping the bottom of the pan with a wooden spoon. Add the chopped black truffles and veal stock. Cook until reduced slightly and then adjust seasoning.
  • To plate, divide apple compote among 4 plates and then top with foie gras. Garnish with fried Italian parsley. Season with fleur de Sel and serve immediately.

1/2 pound pearl onions (preferably red; 2 cups)
2 cups apple juice
1 cup sugar
2 tablespoons cider vinegar
6 cloves
1 teaspoon coriander seeds
2 quinces, peeled, cored, and cut into 1/2-inch cubes
1 (12-ounce) bag fresh or frozen cranberries (not thawed if frozen)

Steps:

  • Trim root end of each onion and cut an X in it. Blanch in boiling water 1 minute, then drain in a colander. Cool slightly, then peel.
  • Bring juice, sugar, vinegar, and spices to a boil in a 3-quart heavy saucepan, stirring until sugar has dissolved. Add onions and quinces and simmer, uncovered, stirring occasionally, until tender but not falling apart, about 30 minutes.
  • Add cranberries and simmer until tender but not falling apart, 5 to 8 minutes. Discard cloves. Transfer fruit and onions to a bowl using a slotted spoon, then boil syrup, if necessary, until reduced to 1/2 cup. Pour syrup over compote and cool to room temperature.

2 tablespoons herbed white wine vinegar

Steps:

  • Mix mint, oregano, and garlic in small bowl. Sprinkle lamb generously with salt and coarsely ground pepper. Sprinkle 2 tablespoons herb mixture over lamb chops; press to adhere (reserve remaining herb mixture for compote).
  • Heat 1 tablespoon oil in heavy large skillet over medium-high heat. Add lamb and cook to desired doneness, about 4 minutes per side for medium. Transfer lamb to platter (do not clean skillet). Tent lamb with foil. Reduce heat to medium. Add remaining 1 tablespoon oil to skillet. Add onion and sauté until beginning to soften, about 2 minutes. Add vinegar and reserved herb mixture; sauté 1 minute. Season compote to taste with salt and pepper. Spoon compote over lamb and serve.

2 small onions, cut into 1/4-inch-thick slices
4 bone-in pork chops (1 inch thick, about 9 ounces each)
Coarse salt and freshly ground pepper, to taste
1/4 cup dry white wine
1 lemon, cut into wedges

Steps:

  • Preheat oven to 375 degrees. Heat 3 tablespoons oil in a large skillet over medium heat. Add onions, and cook until golden brown, about 25 minutes.
  • Meanwhile, season chops generously with salt and pepper. Heat remaining 2 tablespoons oil in a large skillet over medium-high heat. Sear chops until golden brown, about 3 minutes per side. Transfer skillet to the oven, and cook to desired doneness. (Cook until a meat thermometer registers 140 degrees for medium-rare, about 5 minutes.) Transfer to a serving plate. Let stand for 10 minutes.
  • Add wine to onions, and simmer until almost all the liquid has evaporated, about 3 minutes. Season with salt and pepper. Spoon over pork chops. Serve with lemon wedges.

24 garlic cloves, peeled
1 bay leaf
1 1/2 cups tawny Port

1/2 cup raisins
1 1/2 teaspoons chopped fresh thyme

Steps:

  • Bring large saucepan of water to boil. Add onions. Boil 2 minutes. Drain. Rinse under cold water. Peel onions. Trim root end slightly, leaving root base intact.
  • Melt butter in heavy medium saucepan over medium-low heat. Add garlic and bay leaf. Sauté until garlic is golden brown, about 6 minutes. Add Port, vinegar, sugar, and salt. Simmer 8 minutes. Add onions and raisins. Simmer until onions are tender, stirring occasionally, about 9 minutes. Remove from heat. Stir in thyme. Discard bay leaf. Season with salt and pepper. (Can be made 1 day ahead. Cover and refrigerate. Rewarm over medium heat before serving.) Serve warm.

2 tablespoons all purpose flour
Chopped fresh parsley

Steps:

  • Melt 3 tablespoons butter in large nonstick skillet over medium-high heat. Add onions and 3 tablespoons sugar. Cook until onions are golden, stirring often, about 15 minutes. Reduce heat to medium-low. Add wine and cook until onions are very tender and mixture is reduced to thick jamlike consistency, stirring frequently, about 40 minutes. Set compote aside.
  • Preheat oven to 450°F. Melt 2 tablespoons butter in heavy large skillet over medium-high heat. Add hen quarters and brown well on all sides, about 8 minutes. Place hen quarters on rimmed baking sheet (do not clean skillet). Sprinkle hens with salt and pepper. Bake hen quarters until cooked through, about 20 minutes.
  • Transfer hen quarters to bowl; cover to keep warm. Add drippings from baking sheet, vinegar and remaining 3 tablespoons sugar to skillet used to brown hens. Bring to boil, scraping up any browned bits. Add stock and bring to boil. Mix remaining 4 tablespoons butter and flour in small bowl, forming paste. Whisk paste into stock mixture. Boil until thickened to sauce consistency, about 3 minutes. Season to taste with salt and pepper.
  • Rewarm onion compote; spoon onto center of each plate. Arrange 2 hen quarters around compote. Spoon sauce over. Sprinkle with chopped parsley and serve.
