One-Pan Peanut-Beef Curry image

Get all the flavor with minimal cleanup when you make One-Pan Peanut-Beef Curry. One-Pan Peanut-Beef Curry is extra tasty served on a bed of warm rice.

2 tsp. oil, divided
1 lb. beef sirloin steak, cut into thin strips
4 tsp. curry powder, divided
1 small onion, chopped
1 Tbsp. each minced garlic and gingerroot
1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream
1/2 cup water
1/4 cup creamy peanut butter
1-1/2 tsp. chili-garlic sauce
1/4 cup chopped PLANTERS Lightly Salted Dry Roasted Peanuts
1 lime, cut into 4 wedges

Steps:

  • Heat 1 tsp. oil in large skillet on medium-high heat. Add meat and 1 Tbsp. (3 tsp.) curry powder; cook 3 to 5 min. or until meat is done, stirring frequently. Remove meat from skillet; cover to keep warm.
  • Add remaining oil to skillet along with the onions, garlic and ginger; cook and stir 3 min. or until onions are crisp-tender. Sprinkle with remaining curry powder.
  • Add sour cream, water, peanut butter and chili-garlic sauce to ingredients in skillet along with the meat; cook and stir 1 min. or until sauce is well blended and heated through. Remove from heat. Sprinkle with nuts.
  • Serve with lime wedges.

Smooth and delicious beef and potato curry with peanuts. I created a slow-cooker version of this famous Thai dish. This is easy to cook and does not take much time to prepare. It goes well with a scented white rice and steamed veggies as a side.

2 potatoes, cut into large chunks
1 small onion, coarsely chopped
2 tablespoons butter
1 ¼ pounds beef chuck, cut into 1-inch cubes
3 cloves garlic, minced
1 (14 ounce) can coconut milk
¼ cup peanut butter
3 tablespoons curry powder
3 tablespoons Thai fish sauce
3 tablespoons brown sugar
2 cups beef broth
½ cup unsalted, dry-roasted peanuts

Steps:

  • Place the potatoes and onion in a slow cooker.
  • Melt the butter in a skillet over medium-high heat. Cook the beef and garlic together in the melted butter until the beef is browned on all sides. Transfer the beef and garlic to the slow cooker while keeping the beef drippings in the skillet.
  • Return the skillet to the medium-high heat. Stir the coconut milk, peanut butter, and curry powder into the reserved beef drippings; cook and stir until the peanut butter melts. Pour the coconut milk mixture into the slow cooker. Turn the slow cooker on to Low; stir the fish sauce, brown sugar, and beef broth into the slow cooker.
  • Cook on Low until the beef is fork-tender, 4 to 6 hours. Stir the peanuts into the curry about 30 minutes before serving.

  • You have options for added protein or you can just stick with vegetables. To keep it vegan-friendly, follow the link above to make Crispy Peanut Tofu. Or, to keep this a 1-pot recipe, simply add (pressed) cubed extra-firm tofu to the curry in the last 10 minutes of cooking or sauté pressed tofu in a little oil and season with salt, pepper, and curry powder before cooking the curry. Set aside, then add back in in the last few minutes of cooking for best results. Alternatively, add meat such as shrimp or chicken to the curry once it's simmering (during step 4) and simmer until cooked completely through.
  • Heat a large pot or dutch oven (we like this one) over medium heat. Once hot, add oil (or water) and shallot. Sauté 2 minutes, stirring frequently. Turn down heat if browning too quickly.
  • Store cooled leftovers in the refrigerator up to 4-5 days or in the freezer up to 1 month. Reheat in the microwave or in a saucepan. Add more water or coconut milk as needed to rehydrate.
