3 tablespoons white wine
1/2 lemon ((juiced))
2 lbs boneless chicken breast
1/2 cup chicken stock
2 cloves garlic, minced
1/4 teaspoon salt
1/2 teaspoon cumin
1/4 teaspoon ground coriander
1 lime ((zested))
2 tablespoons honey
1/4 cup cilantro leaves
2 lbs boneless chicken breast
1/2 cup barbecue sauce
1/4 cup maple syrup
1/4 cup apple cider vinegar
1 tablespoon chili powder
2 lbs boneless chicken breast
1/2 cup reduced sodium soy sauce
1/3 cup honey
1/3 cup water
1/4 cup mirin
2 cloves garlic (minced)
2 teaspoons ginger (chopped (or 1/2 teaspoon powdered))
2 tablespoons cornstarch (in cold water)
2-3 tablespoons water
2 lbs boneless chicken breasts
1/3 cup honey
1/3 cup reduced sodium soy sauce
6 cloves garlic (minced)
2 tablespoons apple cider vinegar
1 1/2 tablespoons worcestershire sauce
2 teaspoons sesame oil
2 tablespoons cornstarch
2-3 tablespoons water
2 lbs boneless chicken breasts
2 cups salsa
1 tablespoon cumin
1 tablespoon chili powder
salt (to taste)
2 lbs boneless chicken breasts
2 tablespoons honey
1 tablespoon olive oil
1 tablespoon chili powder
1 tablespoon cumin
1 tablespoon paprika
1 teaspoon salt
1 teaspoon onion powder
1 teaspoon garlic powder
1 cup diced tomatoes ((I recommend fire roasted))
1 lime (juiced)
4 bell peppers (sliced)
1 red onion (sliced)

Steps:

  • Place all ingredients not marked 'after cooking' in the base of a 5 quart slow cooker.
  • Cook on low for 4-5 hours.
  • Stir in the lemon juice and enjoy.
  • Combine all ingredients except for chicken breasts in a blender or the jar that comes with an immersion blender. Blend until smooth.
  • Cook on low for 4-5 hours.
  • Shred chicken between two forks and toss in the cooking liquid.
  • Combine all ingredients in the base of a 5 quart slow cooker.
  • Cook on low for 4-5 hours.
  • Shred the chicken with two forks and toss in the cooking liquid.

15 oz can black beans
1 cup salsa
2 cups corn
1 tsp cumin
8 oz fat free cream cheese
salt
pepper

Steps:

  • Place chicken in bottom of crock pot. Mix all ingredients together, excluding cream cheese, and pour over chicken. Cook on low 4 hours. 30 minutes before serving, add cream cheese and shred or cube chicken.
  • It is good sprinkled with lowfat cheddar cheese (not included in nutrition info).
  • Serve with yellow rice and salad. YUM!

This is a delicious, smoky, slow cooker dish that is easy to make, and it doesn't require a BBQ grill or smoker. My husband and I love this dish and enjoy it on freshly baked or toasted onion rolls but really any bun is fine. I serve it with fries and sometimes coleslaw. Enjoy.

nonstick cooking spray
3 large skinless, boneless chicken breast halves
2 teaspoons smoked paprika
¼ teaspoon seasoning salt, or to taste
¼ teaspoon barbeque seasoning, or to taste
ground black pepper to taste
1 (18 ounce) bottle barbeque sauce
¼ cup Worcestershire sauce
1 teaspoon mesquite-flavored liquid smoke

Steps:

  • Spray a slow cooker with nonstick spray.
  • Season chicken with smoked paprika, seasoning salt, barbecue seasoning, and pepper; place in the slow cooker.
  • Mix barbecue sauce, Worcestershire sauce, and liquid smoke together in a small bowl. Pour over chicken, making sure chicken is completely covered.
  • Cover and cook until meat can be shredded with a fork, about 6 hours on Low or 4 hours on High.
  • Remove chicken and pull. Return to the cooker and mix well with the barbecue sauce.
  • Let sit 5 to 10 minutes before serving.
