MAPLE & MUSTARD GLAZED HAM

Steps:
- Put the gammon in a very large pan and cover with cold water. Add the spices and bay. Bring to the boil, then turn down and simmer for around 1 hr 50 mins, topping up the water level with boiling water, if necessary. Scoop off any scum that rises to the top every now and then.
- Carefully pour the liquid away (I like to keep it for making soup), then let the ham cool a little while you heat the oven to 190C/fan 170C/gas 5. Lift the ham into a large roasting tin, then cut away the skin leaving behind an even layer of fat. Score the fat all over in a criss-cross pattern, then stud cloves all over the ham. Can now be chilled for up to 2 days.
- Mix the glaze ingredients in a jug. Pour half over the fat, roast for 15 mins, then pour over the rest and return to the oven for another 35 mins, basting with the pan juices 3-4 times as it bakes. Turn the pan around a few times during cooking so the fat colours evenly. Remove from the oven and allow to rest for 15 mins before carving. Can be roasted on the day or up to 2 days ahead and served cold.

- If needed, shred your brussel sprouts. Add the large shredding attachment to your food processor and run them through it. You will only be able to add a handful at once, but it only takes a couple of seconds to shred. Repeat will all your brussels.
- Make your maple mustard sauce. In a small bowl or jar, mix together maple syrup, mustard, cayenne pepper, and salt and pepper. Adjust according to taste if needed.
- Heat a large nonstick pan (it needs to be large) over medium heat with a tablespoon of oil. Add chicken, garlic powder, and salt and pepper and cook for 5-7 minutes until browned on the outside and almost cooked through. It's okay if it's not all the way cooked, as it will go back in the pan later. Remove from the pan, leaving the juices behind.
- Next, add the remaining oil to your pan. Then add sweet potatoes and onions and cook for 12-15 minutes, stirring occasionally. If needed, cover with a lid to help speed up the process, but you don’t want them to steam too much. Next, add the brussel sprouts cook for another 5-7 minutes.

- Brush both sides of the salmon with oil and season with salt and pepper. When BBQ or grill pan is hot, brush well with vegetable oil. Place salmon skin or bottom side down on to grill. Close lid and grill without touching until grill marks appear and skin or bottom is crisp, about 3 minutes. Brush some of the glaze on top of salmon, then turn salmon over. Brush the exposed side of the salmon with some glaze as well. Close lid and continue to cook until salmon is opaque in the center, about 3 minutes more.
- Transfer salmon to a plate and serve the remaining glaze on the side. A sprinkling of a finishing salt like Maldon is a great topping.
