This saucy ground beef sandwich is a favorite for all ages.

1 tablespoon vegetable oil
1 small onion, chopped
1 small red pepper, seeded and diced
2 cloves garlic, finely chopped
3/4 teaspoon dried marjoram
1 1/2 pounds ground beef chuck
One 15-ounce can tomato sauce
2 tablespoons sugar
2 tablespoons Worcestershire sauce
1 tablespoon yellow mustard
4 teaspoons red wine vinegar
Kosher salt and freshly ground black pepper
4 hamburger buns, toasted
Shredded Cheddar and/or pickle chips, for serving

Steps:

  • Heat the oil in a large skillet over medium heat. Add the onion and cook, stirring occasionally, until soft, about 5 minutes. Add the peppers, garlic and marjoram and continue to cook until the peppers are tender, about 5 minutes. Add the meat, increase the heat to medium-high and cook, breaking the meat up, until no longer pink, about 5 minutes.
  • Spoon off any excess fat from the pan and discard. Add the tomato sauce, sugar, Worcestershire, mustard, vinegar and 1/2 cup of water and stir to combine. Bring to a simmer, cover and cook until the flavors have blended and the sauce has thickened slightly, 15 to 20 minutes. (If the mixture appears to be too dry add up to 1/4 cup additional water.) Season with the salt and pepper.
  • Serve the beef mixture on toasted hamburger buns topped with shredded Cheddar and pickle chips.

One 15-ounce can kidney beans, drained and rinsed
1/4 cup tomato paste
2 tablespoons apple cider vinegar
1 teaspoon brown sugar
Kosher salt and freshly ground black pepper
4 hamburger buns

Steps:

  • Heat the olive oil in a large skillet over medium heat. Add the onions and bell peppers and saute until softened, about 10 minutes. Add the beef, breaking it up with a wooden spoon, and cook until browned, 3 to 5 minutes. Add the tomatoes, beans, tomato paste, vinegar, brown sugar, and some salt and pepper, and cook until slightly thickened, 10 to 15 minutes.
  • Serve warm on the hamburger buns.

1 cup (packed) minced yellow onion
1/2 cup (packed) minced green sweet bell pepper
1/4 cup minced red sweet bell pepper
2 tablespoons minced celery
6 cloves garlic, minced
2 cups canned tomato puree
2 rounded tablespoons tomato paste
1 cup prepared ketchup
2 tablespoons cider vinegar
1/4 cup molasses
2 teaspoons Worcestershire sauce
1 tablespoon extra virgin olive oil
1 cup chopped cleaned mushrooms
8 or 9 fresh plum tomatoes, skinned, seeded and coarsely chopped to measure 1 1/2 (packed) cups
1 teaspoon crumbled dried aromatic oregano
1 teaspoon Bovril
Freshly ground black pepper
2 generous pounds freshly ground beef
Additional freshly ground black pepper
Hamburger Buns (recipe follows)

Steps:

  • To prepare the sauce: Heat a 2 1/2-quart saucepan over medium heat and when hot, add 3 tablespoons oil. When oil is hot, stir in minced onion, green and red pepper, celery and garlic. Cook over medium-low heat until vegetables are softened and fragrant, about 4 to 5 minutes. Stir in tomato puree, tomato paste, ketchup, vinegar, molasses and Worcestershire sauce. Bring mixture to a simmer and turn heat down to very low. Simmer sauce with the cover ajar for 1 hour. Meanwhile, heat an 8-inch skillet over high heat and when hot, add 1 tablespoon extra-virgin olive oil. When oil is hot, add chopped mushrooms and cook mushrooms, stirring over high-heat until golden, 2 to 3 minutes. Turn heat off and set skillet aside. After sauce has been simmering for 1 hour, uncover and add Sauteed chopped mushrooms, prepared fresh tomatoes, oregano, Bovril seasoning and some freshly ground black pepper. Bring back to a simmer and cook with the cover ajar for 30 minutes more. Uncover and let cool until needed.
  • Note: If you plan on cooking right away, just measure out 2 cups of the sauce, and let the remaining sauce cool. Freeze for the next time.
  • To add browned ground meat: Heat a 10-inch deep-sided skillet over medium heat and, when hot, add the ground meat and break up with a wooden spoon. Cook meat until separate and golden brown, then remove from the stove and drain out any excess fat from skillet. Return pan to stove and stir in 2 generous cups of prepared sauce to meat. Bring mixture to a gentle simmer over low heat and cook (uncovered) until flavors mingle and the mixture is piping hot throughout, about 10 minutes. Add some more freshly ground black pepper to taste and
  • Note: If serving 4, brown 1 pound of ground meat and add 1 generous cup of sauce.
  • To assemble Sloppy Joe's and serve: Spoon ground beef mixture onto split hamburger buns that have been spread lightly with butter and broiled to toast the buttered side only. Serve hot.
  • Variation Tips:
  • This Sloppy Joe mixture is not only great on buns, but it's also fabulous over hot (lightly buttered) pasta. Toss in some cooked peas (fresh or frozen) and you've got yourself a hearty and delicious meal. Alternatively, stir this into a bowl of cooked long grain white rice, for a change of texture.
  • And don't throw out any leftovers...heat it up the next night and spoon it onto baked potatoes. Eat (as is) or if desired, sprinkle the top lightly with grated cheddar cheese and broil until the cheese is melted and bubbling. Now, add a simple green tossed in a light vinaigrette and you've got yourself yet another easy and delicious meal!

1 tablespoon plus 1/2 teaspoon chili powder
3/4 teaspoon garlic powder

1 14-ounce package extra-firm tofu, drained
2/3 cup ketchup
1/3 cup chili sauce (such as Heinz)
2 tablespoons vegetable oil
1 onion, chopped
1 stalk celery, chopped
1 carrot, chopped
4 hamburger buns, split
4 slices white cheddar cheese
Bread-and-butter pickles, for topping

Steps:

  • Preheat the oven and bake the Tater Tots as the label directs. Toss with 1/2 teaspoon chili powder and 1/4 teaspoon garlic powder; season with salt and pepper.
  • Meanwhile, crumble the tofu on a paper towel-lined plate. Mix the ketchup and chili sauce in a bowl. Set aside.
  • Heat the oil in a large nonstick skillet over medium-high heat. Add the onion, celery, carrot and a pinch of salt. Cook, stirring, 3 minutes. Add the remaining 1 tablespoon chili powder and 1/2 teaspoon garlic powder. Cook, stirring, 1 minute. Add the tofu, 1/2 teaspoon salt and a few grinds of pepper. Cook, stirring, 3 minutes. Add 3/4 cup of the ketchup sauce and 1/3 cup water; simmer until thickened, 2 minutes.
  • Place the bottom buns on a baking sheet. Top with the tofu mixture, the remaining ketchup sauce and the cheese. Bake until the cheese melts, 3 minutes. Add the pickles and top buns. Serve with the Tater Tots.

2 tablespoons red wine vinegar
2 tablespoons brown sugar
1 tablespoon Worcestershire sauce

1 cup tomato sauce
1 cup chicken stock
8 good quality burger rolls, split and toasted
1 cup blue cheese crumbles
2 large dill pickles, chopped

Steps:

  • Heat a large skillet with extra-virgin olive oil over medium-high heat. Add meat and break it up with wooden spoon, cook 5 to 6 minutes. Add in carrots, celery, onions and garlic, season with salt and freshly ground black pepper, cook 7 to 8 minutes more. In a bowl combine the vinegar, sugar, Worcestershire, hot sauce, tomato sauce and stock. Pour into the pan and stir to combine. Simmer a few minutes more. Pile sloppy Buffalo filling onto buns and top with blue cheese and chopped pickles.

1/4 cup low-sodium soy sauce
1/4 cup light brown sugar
2 tablespoons tomato paste
2 tablespoons cider vinegar
1 teaspoon chopped garlic
1 teaspoon chopped ginger
1 teaspoon hot sauce
2 teaspoons canola oil
1 medium yellow onion, diced
1 green bell pepper, seeded and diced
1 pound ground pork
Kosher salt and freshly ground black pepper

Steps:

  • For the sauce: In a bowl, whisk together the tomato sauce, soy sauce, brown sugar, tomato paste, vinegar, garlic, ginger and hot sauce until blended. Reserve 1/2 cup for the Round 2 Recipe Stuffed Cabbage Rolls, or another use. Set the rest of the sauce aside.
  • For the sloppy joes: In a large skillet over medium heat, add the oil. When it is hot, add the onions and peppers and cook until they are soft, about 5 minutes. Push the vegetables to one side of the pan and add the ground pork. Break up any lumps and sprinkle with salt and pepper. Cook until the pork is lightly browned, about 5 minutes. If there is a lot of fat in the pan, spoon some of it out and discard.
  • Add the sauce to the pan, bring to a simmer and cook until the pork mixture has thickened but is still a bit loose, about 15 minutes. Reserve 1 cup of the mixture for the Round 2 Recipe Stuffed Cabbage Rolls, or another use.
  • To serve, remove 2 leaves from the cabbage, roll them up like a cigar and slice into very thin strips. Reserve the remaining cabbage for the Round 2 Recipe Stuffed Cabbage Rolls, or another use. Divide the sloppy joe mixture onto the hamburger buns. Garnish with the sliced cabbage. Top with the bun tops and serve immediately.

Steps:

  • Brown meat in large heavy skillet over moderate heat for 2 to 3 minutes, breaking up clumps. Add onion, mustard, worcestershire, sugar, vinegar, ketchup, salt, green pepper and celery. Reduce heat to low and cook, stirring now and then, about 40 minutes until flavors mingle. Place 1/2 hamburger bun on each of four plates and ladle meat sauce generously on top. Serve at once.

Steps:

  • In a nonstick 12-inch skillet, heat oil over medium heat. Add onion and garlic and cook until onion is tender, about 5 minutes.
  • Add red and green peppers and celery and cook until tender, about 5 minutes. Stir in ground beef and cook, breaking up meat with side of spoon, until meat is no longer pink, about 5 minutes. Stir in tomatoes with their puree, molasses, vinegar, slat, and black pepper and heat to boiling. Reduce heat and simmer until sauce has slightly thickened, about 10 minutes.
  • Place split buns on plates and top with Sloppy Joe mixture.

1 pound fresh tomatoes or one 16 ounce can of tomatoes in juice
2 tablespoons unsalted butter
1 onion, chopped
1 red bell pepper, chopped
3 garlic cloves, finely chopped
1 1/2 pounds fresh Mexican chorizo, casings removed
1/2 cup Mexican beer
3 to 4 tablespoons chopped pickled jalapenos
2 tablespoons Worcestershire sauce
1 tablespoon light brown sugar
4 sandwich rolls
Sour cream and chopped fresh cilantro for serving

Steps:

  • Puree the tomatoes in a blender until smooth.
  • Heat the butter in a medium saucepan over medium high heat until melted and bubbling then stir in the onion, pepper, garlic, 1/4 teaspoon salt and 1/2 teaspoon pepper. Cook, stirring occasionally, until onion is golden brown, 6 to 8 minutes. Add chorizo, stirring to break up lumps, and cook until browned, about 6 minutes. Add the pureed tomatoes, beer, jalapenos, Worcestershire, and sugar, and boil until the sauce has thickened, 14 to 18 minutes. Remove from heat and season with salt. Serve with sour cream and cilantro on rolls.

1 jalapeño, seeded and diced small
1 Fresno chile, seeded and diced small
1 serrano chile, seeded and diced small
3 cloves garlic, minced
2 tablespoons tomato paste
1 cup beef stock or water
3/4 cup ketchup
2 tablespoons balsamic glaze
1 tablespoon brown sugar
1 tablespoon chili powder
1 teaspoon dry mustard
4 slices frozen garlic bread
8 slices provolone cheese
2 tablespoons chopped parsley

Steps:

  • Heat the olive oil in a large pot over medium-high heat. Add the beef and brown, seasoning with a pinch of salt and pepper, 8 to 10 minutes. Drain off all but a couple tablespoons of the fat.
  • Add the onion, chiles, garlic and tomato paste to the pot. Stir and cook for a minute to combine and cook the tomato paste slightly. Add the stock, ketchup, balsamic glaze, brown sugar, chili powder and mustard. Season with another pinch of salt and pepper. Stir to combine, cover and simmer over medium-low heat for 10 to 12 minutes to deepen the flavor.
  • Meanwhile, bake the garlic bread according to the package instructions on a sheet pan lined with foil. Remove from the oven then preheat the broiler.
  • Taste the meat mixture and adjust seasoning as needed. Divide the meat mixture over the top of the baked garlic bread. Next, top each with two slices of the provolone. Broil until the cheese has melted and browned, about 2 minutes.
  • Garnish with the chopped parsley and serve.

ITALIAN SLOPPY JOES

2 1/2 pounds lean ground beef
Kosher salt and freshly ground black pepper
1 red bell pepper, diced

One 6-ounce can tomato paste
One 28-ounce can crushed or diced tomatoes
1 tablespoon sugar
1 teaspoon dried oregano
1 teaspoon dried basil
1/4 cup grated Parmesan cheese, plus extra for garnish
2 tablespoons finely chopped fresh parsley, plus extra for garnish
Garlic Toast, recipe follows, for serving
8 slices French bread
1 stick (8 tablespoons) butter, softened
1/4 cup grated Parmesan cheese
1 tablespoon extra-virgin olive oil
1 tablespoon finely chopped fresh parsley
1/2 teaspoon garlic powder
1/4 teaspoon paprika
1/4 teaspoon dried oregano
Kosher salt and freshly ground black pepper

Steps:

  • In a large skillet over medium-high heat, add a tablespoon of olive oil and the beef. Cook, breaking up the meat with a spoon, until it is well browned, 8 to 10 minutes. Season with salt and pepper, then remove the beef and drain off the fat.
  • To the same skillet, add the remaining tablespoon of olive oil and cook the peppers and onions until soft and lightly browned, about 5 minutes. Season with salt and pepper, then add the garlic and cook for another minute. Add the tomato paste and cook for a minute or 2. Add the tomatoes, sugar, oregano and basil and bring to a simmer. Return the beef to the pan and simmer until the mixture is nice and thick, about 10 minutes. If it gets too thick, thin it with a little water. Remove from the heat and stir in the Parmesan and parsley. Taste and adjust the seasoning with salt and pepper.
  • To serve: Spoon a nice portion of sauce over each of 4 slices of the Garlic Toast. Let the sauce cascade over the sides, then prop a second piece of Garlic Toast over to the side of each. Garnish with extra grated Parmesan and chopped parsley.
  • Preheat the oven to 400 degrees F. Place the bread slices on a baking sheet.
  • In a bowl, mix together the butter, Parmesan, oil, parsley, garlic powder, paprika and oregano until it forms a paste. Season with salt and pepper, then spread the mixture on the bread.
  • Bake until golden brown, about 15 minutes.

1 cup Worcestershire sauce
35 lbs meatloaf mixture (equal amounts of ground beef, ground veal and ground pork)
1 -1 1/2 cup Worcestershire sauce
6 large Spanish onions, coarsely chopped
6 red peppers, coarsely chopped
6 yellow peppers, coarsely chopped
6 orange peppers, coarsely chopped
6 green peppers, coarsely chopped
salt
2 tablespoons dried oregano
4 tablespoons granulated garlic
1 gallon barbecue sauce (homemade or store bought)
2 tablespoons olive oil
36 sweet italian pork sausages (casings removed)
90 -100 fresh hamburger buns or 90 -100 rolls, for serving
1 gallon barbecue sauce

Steps:

  • Divide the meatloaf mix between 2 large commercial-size pots and brown the meat for 3-5 minutes under a high flame. Drain most of the fat, leaving a little in for seasoning. Add the Worcestershire Sauce and mix well.
  • Divide the onions and peppers between the 2 pots, add salt and crush 1 tablespoon of the oregano between your hands into each pot. Divide the garlic between the two pots and stir everything together. Cook for 3 to 5 minutes. Add 1/2 gallon of barbeque sauce to each pot, cover and simmer over low heat for 30 minutes.
  • Heat the olive oil in 2 large frying pans, add the sausages and cook for about 5 to 8 minutes, until no longer pink. Drain any fat from the sausages.
  • Add the sausages from each frying pan to the pots of barbeque meatloaf mixture, and continue cooking, stirring occasionally, for about an hour.
  • Serve over hamburger buns.
